    #材料:
    🔹 法國活藍龍蝦1隻 (約500-600克)
    🔹 蘆筍尖 (預先煮熟作伴碟用)
    🔹 食用花 (伴碟用)
    .
    #醬汁:
    🔹 紅蔥頭4粒
    🔹 白酒1杯
    🔹 麵粉20克
    🔹 無鹽牛油50克
    🔹 檸檬 (汁) 半個
    🔹 糖1茶匙
    🔹 鹽及黑椒
    .
    #步驟﹕
    1. 在沸水中加入少量鹽,放入龍蝦煮10分鐘
    2. 把龍蝦夾出並放入冰內降溫
    3. Beurre Blanc 牛油汁
    - 慢火煮沸白酒,加入紅蔥頭、麵粉、檸檬汁及糖
    - 逐少加入無鹽牛油,攪勻至完全融合,直至醬汁變濃稠
    - 用鹽和黑椒調味
    4. 去除龍蝦殼
    5. 在龍蝦頭上塗上牛油
    6. 煎熟龍蝦肉,再配上 Beurre Blanc 牛油汁
    7. 用蘆筍尖及食用花伴碟即可上菜

    #Ingredients:
    🔹 French Live Blue Lobster 1pc (around 500-600g)
    🔹 Baby asparagus (pre-cooked for garnish)
    🔹 Edible flowers (for garnish)
    .
    For #sauce:
    🔹 Shallots 4pcs
    🔹 White wine 1 glass
    🔹 Flour 20g
    🔹 Unsalted butter 50g
    🔹 Lemon (juice) 1/2 pc
    🔹 Sugar 1tsp
    🔹 Salt & pepper
    .
    #Steps:
    1. Boil a big pot of water, and poach the lobster with salt for 10 mins.
    2. Cool the lobster with ice.
    3. Beurre Blanc Sauce
    - Boil white wine over a low heat, add shallots, flour, lemon juice and sugar.
    - Whisk unsalted butter into the reduction until the mixture becomes a rich sauce
    - Use salt and pepper to season the sauce.
    4. Remove lobster shell.
    5. Butter the lobster head.
    6. Pan-fry the lobster and serve with the sauce.
    7. Garnish with baby asparagus and edible flower.

    一個月後姐姐開始
    識用蒸煮機整Babyfood 俾胡小B
    慢慢她可以在雪櫃找出適當材料
    有時我煮出的菜式姐姐都很喜歡
    會問難不難煮 我便開始慢慢教
    由最簡單的蛋炒飯開始

    今日姐姐煮了這道
    什菜白汁意粉 給我們作午餐 🥣
    味道也不錯 真心讚
    我諗好快我可以出遠門 哈

    =======================
    繽紛白汁意粉 18m

    材料:
    意粉 100g
    洋蔥(白/紫皆可) 半個
    粟米 半條
    露荀 一條
    甘荀 一條
    牛奶 250
    水 200
    麵粉 一大匙
    油少許
    鹽少許

    煮法:
    粟米起粒 | 露荀,甘荀切粒 | 洋蔥切條或粒
    1. 熱鑊粉洋蔥至有香味,加入其他雜菜粒炒香
    2. 小火加入牛奶及少量水輕拌至微滾
    3. 用適量凍開水加麵粉開成麵粉水,分數次逐小量加入牛奶中輕拌至濃稠度適中,完成(可以加入適量芝士或少量鹽調味)

    拌飯或意粉一樣得😋

    Spageti saus putih berwarna-warni 18m

    Bahan:
    Spaghetti 100g
    Bawang (putih / ungu) setengah
    Jagung 1/2
    Asparagus 1
    Wortel kecil 1
    Susu 250l
    Air 200
    sesendok tepung terigu
    sedikit minyak
    sedikit garam

    Metode memasak:
    Butiran jagung | Asparagus, wortel potong kecil kecil | bawang bombay potong kecil

    1. Panaskan bawang sampai keluar aromanya, tambahkan butiran lainnya dan tumis

    2. Tambahkan sedikit susu dan sedikit air aduk hingga rata

    3. Gunakan air dan tepung beku dalam jumlah yang tepat untuk membuat air tepung. Tambahkan sedikit susu ke dalam aduk hingga rata. Selesai (Anda dapat menambahkan jumlah keju yang tepat atau sedikit garam secukupnya)

    Setelah selesai boleh campurkan,nasi atau pasta

    五旬節、哈雷迷與野生蘆筍

    五旬節,即基督教的聖靈降臨日。這個節日同時也用來感謝上帝賜與的收獲,所以又稱收割節。(英文Pentecost ) 瑞士會放一天假 Pentecost Monday。

    上回有提到,五旬節都是Vaud 的酒莊開放日,一年比一年聲勢浩大。今年和瑞士國鐵合作,火車票和酒莊開放日一起合購,火車票打八折。Vaud 就是煮婦住的省,一定要支持當地酒莊啊。於是我們搭火車小旅行,選了二個很近的小鎮,火車十分鐘和二十分鐘,一連喝了二天。

    第一天是個有點冷有風的下雨天,從Gland 上了小巴,彎曲上坡小山路,還好有專車接送啊。挑選的第一站 Cave de la Rose d'Or ,一進品酒室,我們就吃了一驚,老闆是哈雷機車迷,停了一台超帥的重型機車,應該也是漫畫和電影迷,整個佈置很有老闆的個人風格。

    造酒人總是會把自己個性傳達到酒裡面,一樣的葡萄一樣的地型和天氣,因為酒人不同,酒的味道也完全不同。這家的酒啊,非常好喝,非常推薦! 平常周末可以和老闆約品酒時間。

    酒莊開放日第二天前往Morges,第二天是個大晴天,可以看到湖光山色,超級棒。但是沒有發現什麼好酒,一路喝下來都是普普,倒掉的居多。

    往 Vufflens le Château方向走路十五分鐘,二人打算換搭酒莊專車巴士二路,換換運氣,看另一頭的酒有沒有比較優秀。

    一路下坡,聽著牛鈴,看野花,天氣又好。真的是健行好天氣,走著走著,看到山徑二旁有類似野生蘆筍的植物。(!!!)

    Wild Asparagus 我二年前在超市買過,季節短之外更是運氣好才遇到。在野外倒是一眼就認出。

    紐約客說,「你確定嗎?可不要摘錯食物中毒。」

    我對食物印象很深的,吃過幾乎不會忘記長相。安啦! 然後煮婦就整個很興奮摘起來。明明是去喝酒的,結果最高興是採了一把野生蘆筍。

    野生蘆筍學名是Ornithogalum pyrenaicum,俗名是Wild Asparagus or Bath Asparagus 。其實它和蘆筍是非常、非常遠的遠親,同是天門冬科天門冬屬 (蘆筍屬)。長相和伯利恆之星很像,但是伯利恆之星有毒,Ornithogalum pyrenaicum是可以吃的喔!

    晚上就煮了吃了,一定啊!! 好不容易遇到的。和蘆筍煮法一樣,口感卻像山蘇、川七一樣,滑滑的。採集新經驗,一百分!

    補充說明:

    昨天發現的地點也有長熊蔥,所以我覺得Ornithogalum pyrenaicum 和熊蔥兩種植物喜歡的環境差不多,喜歡長在半日照的潮濕地區。

    和伯利恆之星一樣,是多年生草本被子植物,學名虎眼萬年青屬,所以根是球莖,葉子和水仙差不多。採集時最好拿剪刀,不然很容易一用力就連球莖都拉起來,還好身上有瑞士刀。

    花苞就是這一二個月的時候會有。祝大家採集愉快!

    A year is almost gone and it's time to plan for our reunion dinner again. This Fortune Abalone Pot is a simplified version of your typical Pun Choi / Pen Cai 盆菜. If you still prefer Pun Choi but you want some idea on how to prepare the gravy, you can watch this video to get some ideas.

    Ingredients:
    Serves 8 - 10 pax

    (A) Marinated chicken - Marinate, pan-fry then set aside
    150g of boneless chicken thigh meat
    0.5 teaspoon of cornflour
    0.5 teaspoon of sesame oil
    1 teaspoon of light soy sauce
    A few dashes of white pepper

    (B) Marinated Chinese mushrooms
    5 pcs of dried Chinese mushrooms - rehydrated
    1 teaspoon of sesame oil
    1 teaspoon of light soy sauce
    0.5 teaspoon of sugar

    (C) Saute sea cucumber to remove as much moisture as possible
    Some cooking oil
    3 slices of ginger
    120 of fresh sea cucumber

    (D) Prawns - pan-fry and set aside
    6 pieces of prawns - remove shells and veins

    (E) Strain abalone & sea asparagus from can
    1 can of Fortune baby abalone (keep brine for later use in this dish)
    1 can of Fortune sea asparagus (keep brine for later use in this dish)

    (E) Putting the dish together
    1 thumb size ginger - sliced
    3 cloves of chopped garlic
    Marinated mushrooms (B)
    1L of water
    Sea asparagus brine
    Abalone brine
    2 tablespoons of Fortune abalone sauce
    0.5 tablespoon of premium dark soy sauce
    Half a carrot - sliced thinly
    80g of abalone mushrooms
    Pan-fried sea-cucumber
    240g of egg tofu (air-fried or deep-fried)
    Some cornstarch solution

    Other ingredients
    ----
    1 head of broccolli
    250g of cabbage

    Line all ingredients in a claypot using cabbage as the base first. Then add gravy to claypot and bring the whole pot to a boil. Once done, drizze over 1 teaspoon of sesame oil before serving.

    材料:
    牛扒 1塊,橄欖油,黑胡椒,鹽,迷迭香,薯蓉

    做法:
    1. 將牛扒用橄欖油,黑胡椒,鹽,迷迭香調味
    2. 落鑊煎牛扒,每邊也煎,鎖住水份,煎至理想熟度

    ※ INGREDIENTS:
    1 Steak, Olive Oil, Whole Pepper, Salt, Rosemary
    Side: Asparagus, Baby Carrot, Shallot, Mashed Potato

    ※ PREPARATION:
    1. Season every side of beef with olive oil and enough pepper. Sprinkle little bit of salt and place rosemary on top.
    2. Heat off the pan and add olive oil and start cooking.
    3. Cook through all side.
    4. Enjoy it with side dish.
