    Braised beef brisket with tomatoes and carrot with high speed cooker

    Ingredients:
    Frozened beef brisket 3 lbs
    Tomatoes 5 Nos.
    Shallots a bunch
    Carrots (small) 8 logs

    Preparation/Steps:
    1. Beef brisket, remove plastics. Put in high speed cooker. Add in cooking salt 1 tbsp and boiled up water 1L. Cover up the wok. Heat up for 15 minutes.
    2. Tomatoes, rinse with tap water. Divide each one into 4 shares.
    Shallots, get them peeled. Rinse with tap water.
    Carrots, rinse its skin with tap water.
    3. Beef briskets have been blanched, pour away water. Rinse with tap water. Drain.
    4. Rinse the cooker with detergent properly.
    5. Beef brisket, put into pot. Add seasoning:
    a. Pepper 1 tbsp
    b. Tomato ketchup half bottle
    c. Chicken sauce 1 tbsp
    d. Rock sugar 2 big cubes
    Mix well. Cover up the pot. Use tendons function, braise for 40 minutes.
    6. In the last 6 minutes, add in:
    a. Carrot
    b. Tomatoes
    c. Shallots
    Mix well.
    7. Restart the high speed cooker, use "tendons" function, braise for 40 minutes again.
    8. Complete. Put on plate. Serve.

    高速煲支竹炆鵝掌

    材料:
    急凍鵝掌8隻
    廣西支竹半斤
    辣椒仔3隻
    芫荽1棵

    處理:
    1. 支竹,清水浸軟,剪一塊塊。
    2. 芫荽,清水洗淨,切碎。
    辣椒仔,洗淨,切粒。
    3. 在高速煲內煲滾水1升,放鵝掌出水,加入紹興酒1湯匙及少量鹽去除羶味。
    4. 水已滾起,倒去水分,加入清水浸3分鐘,再倒去水分,開住水喉,逐隻鵝掌,清洗乾淨,擎乾水。
    5. 用洗潔精,洗乾淨高速煲,才繼續使用。
    6. 用菜刀切去鵝掌的趾甲,放入高速煲內,加入調味料:
    a. 紹興酒1湯匙
    b. 冰糖幾粒
    c. 辣椒仔2隻(搣去椗)
    d. 老抽半湯匙,撈勻
    e. 生抽半湯匙
    f. 蠔油1湯匙
    加入清水400毫升。
    6. 加入支竹。

    烹調:
    1. 所有材料在高速煲內炆40分鐘。
    2. 放高速煲在電磁爐上煮至收汁。
    3. 上碟,灑上芫荽碎及辣椒粒。
    4. 完成,可享用。

    Braised geese feet with bean curd with high speed cooker

    Ingredients:
    Frozen geese feet 8 Nos.
    Bean curd 0.5 catty
    Chili 3 Nos.
    Coriander 1 No.

    Preparation:
    1. Bean curd, soak in tap water until it turns soft. Cut in pieces.
    2. Coriander, rinse with tap water. Chop well.
    3. Heat up water 1L in high speed cooker. Put in geese feet. Add in Shaoxing wine 1 tbsp and little salt to remove the unpleasant smells.
    4. Water boils up, pour away the water. Add in tap water, soak for 3 minutes, pour away water again. Rinse the geese feet one by one under running tap. Drain.
    5. Rinse the high speed cooker with detergent. Rinse thoroughly. Continue cooking.
    6. Cut the geese nails with chopper. Put into high speed cooker. Add seasoning:
    a. Shaoxing wine 1 tbsp
    b. Rock sugar several cubes
    c. Chili 2 Nos. (With no stems)
    d. Dark soya sauce 0.5 tbsp, mix well.
    e. Light soya sauce 0.5 tbsp
    f. Oyster sauce 1 tbsp
    Add in tap water 400ml.
    6. Add in bean curd.

    Steps:
    1. Put all ingredients in high speed cooker, braise for 40 minutes.
    2. Put the cooker on induction cooker. Continue braising until the sauce becomes thick.
    3. Put on plate. Put coriander and chili cubes on top.
    4. Complete. Serve.

    冰豆腐炆素:

    材料:
    硬豆腐2磚
    冬菇(大)3隻
    雪耳1個
    雲耳1兩
    甜椒1隻
    素食蠔油適量

    處理:
    1. 硬豆腐切成1“ x1“ x 1“。
    2. 放豆腐入有蓋膠盒,雪至硬身,大約雪8小時。
    3. 豆腐用清水浸2分鐘,揸乾水。
    4. 預備醬汁:
    a. 素蠔油2茶匙
    b. 豉油2茶匙
    c. 糖1/2茶匙
    d. 水200毫升
    攪勻。
    5. 甜椒,切大粒。

    烹調:
    1. 中火在鑊中燒熱1湯匙油。
    2. 放冬菇、雲耳及雪耳爆香。
    3. 加入冰豆腐,炒勻。
    4. 加入醬汁及100毫升水。
    5. 冚蓋,炆10分鐘。
    6. 加入2茶匙素蠔油,炒勻。
    7. 最後加入甜椒粒,炒勻,放上碟,加入1茶匙麻油,完成。

    Braised vegetables with iced tofu:

    Ingredients:
    Hard tofu 2 cubes
    Mushrooms (large) 3 Nos.
    Snow fungus 1 No.
    Black fungus 1 tael
    Sweet chili 1 No.
    Vegetarian oyster sauce appropriate amount

    Preparation:
    1. Cut tofu with size 1" x 1" x 1".
    2. Put tofu in a plastic storage box with lid. Refrigerate until it is hard. This takes about 8 hours' time.
    3. Soak tofu in tap water for 2 minutes. Squeeze it.
    4. Prepare the sauce:
    a. Vegetarian oyster sauce 2 tsp
    b. Light soya sauce 2 tsp
    c. Sugar 1/2 tsp
    d. Water 200ml
    Mix well.
    5. Sweet chili, dice in big cubes.

    Steps:
    1. Heat up 1 tbsp oil at medium flame in wok.
    2. Fry mushrooms, black fungus and snow fungus.
    3. Put iced tofu, fry well.
    4. Add the sauce and 100ml water.
    5. Braise for 10 minutes with the lid on pot.
    6. Add 2 tsp vegetarian oyster sauce. Fry well.
    7. Finally, fry well with sweet chilli. Put on plate. Add 1 tsp sesame oil. Serve.

    薯仔炆雞翼:

    材料:
    雞中翼2磅
    薯仔(大)1個
    薑6片
    芫荽1棵

    處理:
    1. 雞翼用清水解凍10分鐘。
    2. 雞翼1開2,再用清水浸10分鐘。
    3. 輕手揸出雞翼內的血水。
    4. 沖乾淨雞翼,擎乾水。
    5. 粗鹽乸雞翼10分鐘去除雪味、雞腥味及加入鹹味。
    6. 薯仔去皮,切細舊。
    7. 薑切片。
    8. 芫荽切碎。
    9. 雞翼已完全解凍,洗淨,擎乾水。
    10. 廚紙索乾雞翼。
    11. 雞翼調味:
    a. 生粉2茶匙
    b. 豉油1茶匙
    c. 胡椒粉少許
    d. 油1茶匙
    攪勻,醃10分鐘。

    烹調:
    1. 放2湯匙油落鑊,大火燒熱。
    2. 放薯仔及薑,煎2分鐘 。
    3. 煎了2分鐘,反轉薯仔及薑。
    4. 薯仔已煎透,放雞翼落鑊。
    5. 當雞翼一面轉金黃色,反轉繼續煎。
    6. 薯仔和雞翼一起兜勻。
    7. 放1粒細冰糖。
    8. 放1茶匙鮑魚汁,炒勻。
    9. 加入滾水,剛蓋過雞翼面,用中火炆5分鐘就可以了。
    10. 上碟。

    Braise chicken wings with potatoes:

    Ingredients:
    Mid~joint chicken wings 2 lbs
    Potato (large) 1 No.
    Ginger 6 slices
    Coriander 1 No.

    Preparation:
    1. Defrost chicken wings with tap water for 10 minutes.
    2. Cut each chicken wing into 2 pieces. Soak in tap water for 10 minutes.
    3. Squeeze the chicken wings lightly to release the blood from the wings.
    4. Rinse the wings thoroughly and hang dry.
    5. Season chicken wings with cooking salt for 10 minutes to remove the unpleasant smells and tastes and add some salty taste.
    6. Peel the potatoes and dice in small cubes.
    7. Slice the ginger.
    8. Chop coriander well.
    9. Chicken wings have been defrosted completely. Rinse thoroughly and hang dry.
    10. Dry chicken wings with kitchen towel.
    11. Season chicken wings:
    a. Tapioca starch 2 tbsp
    b. Light soya sauce 1 tsp
    c. Pepper little
    d. Oil 1 tsp
    Mix well and season for 10 minutes.

    Steps:
    1. Heat up 2 tbsp oil at high flame in wok.
    2. Put potatoes and ginger, fry for 2 minutes.
    3. Have already fried for 2 minutes, flip over potatoes and ginger.
    4. Potatoes have been fried well. Put chicken wings at the same time.
    5. Flip over chicken wings as one side has been turned in colour gold. Continue frying.
    6. Fry potatoes and chicken wings well.
    7. Add 1 cube of rock sugar.
    8. Add 1 tsp abalone sauce, fry well.
    9. Add boiled up water, just covering up the wings, braise at medium flame for 5 minutes.
    10. Serve.
