I heaved a huge sigh of relief when I learnt that @allium.sg’s Indonesian-inspired menu a few of my foodie friends had raved about, was still going to be served when the date of my reservation came around. Very pleased to have been in the delightful company of @liltune, @ckaliva and @daphnengats, all first-time visitors to Allium, to savour the following courses created by Chef-owner @dillon_ngze and Chef @lusianadarusman:
1. Aori Ika and Javanese Urap - After giving it a proper mix, we were rewarded with a deeply aromatic mess of silky strips of squid lavished in Javanese-style rempah-spiced vegetable. The sweetness from the corn kernels helped to offset the spiciness nicely.
2. Sea Prawn, Mozuku Seaweed “Mee Siam” - I was struck by how lip-smacking the gravy of this noodle-free take on Mee Siam was. Loved the crisp and crunch contributed by the wing beans and sea grapes too. I really wouldn’t have minded another bowl.
3. Flower Crab and Snapper Otah Sando - All of us are really into otah, so this was a big hit. Chockfull of spices, the piping hot slab was super shiok on its own. But the clever twist was that it came with Raita. A dab of the Indian-style minty herbed tofu yogurt sauce helped offset the spiciness in the nicest possible way.
4. Grilled Toothfish “Jimbaran” - The Balinese-inspired treatment led to stellar results for the fish that arrived under a layer of boldly aromatic spices. It was complemented by a bright and punchy starfruit with pepper leaf sambal.
5. Iberico Presa Satay - I took my time to relish the smoky, fragrant and tender meat. Instead of the usual peanut sauce, Team Allium concocted one from hazelnuts which I found particularly yums. There was even fresh pineapple in there, a la the Chinese style of serving satay sauce. The cube of steamed rice cake was perfect for mopping up every bit of the sauces with.
6. “Nasi Bakar Cumi” - Finally had the course I’d been eyeing on other foodies’ Stories. The funky surume squid sambal was dynamite with the smoky fish-mixed rice studded in petai. Nothing could be more satisfying than washing all of that down with Allium’s version of the sour and spicy Sayur Assam soup.

當晚的主菜真是好戲一浪接一浪,一系列既美味頭盤刺身後,toothfish煮得恰到好處,配上蟶子煮成的醬汁,鮮甜味美;然而,經脂肪及乳酪熟成過的和牛以備長炭烤製,肉質柔嫩細緻,香味濃郁,以夏松露及黑蒜點綴,美味可口,令人留下深刻印象。
