台湾unboxing｜台南府城的國寶料理「擔仔麵」   相傳百年前，漁民在夏季颱風無法出海的月份，因生活艱困，只好挑著擔子在外賣麵，以度過所謂的「小月」，沒想到因口味獨到而大受歡迎，此做法便代代相傳，成為今日的國宴料理。   擔仔麵的特色是「精緻」、「味鮮」又「濃郁」，濃郁的蝦湯搭上香氣十足的肉燥，以及新鮮的台南火燒蝦，恰到好處的份量剛好解點小餓，又讓人帶點意猶未盡。   有空到台南走一遭，挑戰台南美食的同時，要不要也來一碗濃縮海陸美味的擔仔麵呢？   もやし、エビ、味付き煮卵をのせた麺に、エビでダシをとったスープ、最後にパクチー、おろしにんにく、五印酢（黒酢）、自家製の肉みそをのせて美味しさをプラスします。   濃厚な海の味の汁麺が「擔仔麵」と呼ばれるのは、当初は扁擔挑（日本語：天秤棒）を使って売るスタイルで人気を得たことから。 1人分は２、３口で食べ終わる量で、グルメな台南人の「量より質」のこだわりが見てとれます。お店で、お椀の小ささに驚かないでくださいね！   出没場所： 台湾全土。台南のご当地グルメ。   The noodles are topped with bean sprouts, shrimp, soy egg and ladled over a spoonful of shrimp stock. Touches of coriander, puréed garlic, black vinegar and minced pork were then added on top to complete its signature flavor. In the early days, hawkers would peddle noodles with pots suspended on a wooden stick across their shoulders.   For this reason, the noodles derived the name “Danzai Mian,” meaning “peddler’s noodles.”   Kind reminder: when your noodles are served, don’t be surprised by its serving size. Unlike noodle bowls found elsewhere in Taiwan, Danzai noodles are considered more of a snack than an entrée.   Where to find them? Across the island.
