Oxtail Rendang ($48) and Ayam Panggang Corn-Fed French Chicken ($38). You might be familiar with Blue Ginger's beef rendang and ayam panggang, which I've also shared about when I visited their outlet earlier this year. For Christmas, they've amped these up with premium ingredients. 🔸 For the oxtail rendang, imagine fork tender chunks of meat with soft cartilage in thick rempah that lended its beautiful aroma to this dish, with its proprietary mix of aromatics such as ginger, lemongrass, lime leaves, coriander and cumin. You'll want bread or rice or anything you can find, just to mop up all the gravy. 🔸 I've loved Blue Ginger’s Ayam Panggang for three reasons - the gravy, the smokiness of the chicken skin, and the well-marinated chicken flesh. And this time, they use corn-fed French chicken. The chicken was first brined for several hours to enrich the flavour and enhance its tenderness, then marinated overnight in a spicy mix that includes turmeric (hence explains the flavour of the chicken flesh), before being roasted till golden brown (hence the smokiness in the skin). It also came with extra Ayam Panggang gravy made with the rich jus rendered from the roasting process, as well as The Blue Ginger’s homemade sambal. 🔸 These two enticing Peranakan-inspired dishes should be fit for festive feasting, especially for a group that prefers local flavours. These will be available for takeaway only from 19th December 2020 to 3rd of January 2021.

Odette At Home - Decouverte Menu ($188+). This three Michelin-starred home-dining experience began even before the food arrived. Head Waiter Dan Zenou dropped a courtesy message to inform that he's arriving, before showing up at my door dressed in his suit punctually at 12pm sharp. 🔸 The food came beautifully packaged with clear instructions. Of course, we expect only the best from Odette, and they delivered on all counts. The meal started with 250g of Pate en croute de Tradition Bourgeoise along with salad tossed in truffle vinaigrette. We've tried several pate en croute before, and Odette's is clean-tasting while still retaining pleasant gameyness of the pork and fat mixture, beneath meat belly encased within the pastry skin. It's the best we've had. 🔸 We then move on to the Poularde de Bresse au Vin Jaune, and that was the defining moment. It's a classic French dish of chicken with wine and mushrooms, but Chef Julien and team made this combination extraordinary. The bresse chicken was exceptional - it was dense and was really sweet. That chicken came in a tasty creamy broth that, while European, would also satisfy the Asian palate. And don't forget the Niigata Rice. This fluffy rice came with crispy chicken skin and chives, that lended its fragrance to the rice that's reminiscent of pork lard that I absolutely love. 🔸 For desserts, Yuzu Blanc-Manger surprised me with the yuzu whipped meringue that's soft like clouds. That cloud-like meringue was served atop a tart with a citrusy core. 🔸 In the late afternoon, Head Waiter Dan dropped me another message to ask me about the meal. That completed the three Michelin-starred experience, from home. Perfect.
