    MY BTS Burger Recipe
    BTS 開心餐就嚟出啦! 一位 ARMY 之一我都好想整過 BTS 漢堡包去加入佢哋嘅餐. If I were to help them create a Mcdees burger, this is what I would make to celebrate Korean flavours and BTS’ explosive performances.

    A. Bulgogi glazed Cheeseburger (not spicy)

    B. Cheeseburger with Green horn peppers cooked in Kimchi, minced beef (nice and spicy)

    Recipes:

    A. Bulgogi Cheeseburger with Caramelized Bulgogi Onions

    1 quarter pounder Angus burger, seasoned (or 1 impossible burger patty) 漢堡扒
    1 burger bun 漢堡包
    Tomato slice 蕃茄
    2 slices Edam cheese or Mozarella 芝士

    Bulgogi sauce:
    6 Tbsp Japanese soy sauce 醬油
    3 Tbsp brown sugar 黑糖
    2 Tbsp mirin
    2 tablespoons sesame oil 麻油
    155 g Asian pear 雪梨
    80 g onions 洋蔥
    1 Tbsp minced garlic 蒜蓉
    1 tsp minced ginger 薑


    Blend all the sauce ingredients.
    Caramelised the onions in a pan and then add 2-3 tablespoon of bulgogi sauce. Set aside.
    Cook the burger, when ready add a little sauce to glaze. Add butter if you like. Baste.
    Assemble the burger.

    Recipe: B. Cheeseburger with Green horn peppers cooked in Kimchi, minced beef

    1 quarter pounder Angus burger, seasoned (or 1 impossible burger patty) 漢堡扒
    1 burger bun 漢堡包
    Butter lettuce 生菜
    2 slices Edam cheese or Mozarella 芝士

    100g Kimchi 泡菜
    3-4 Green horned peppers 青辣椒(大大隻)
    1/2 cup Water 💦 水
    1 tablespoon Ssamjang 韓燒辣醬

    Caramelise the green horned peppers
    Add some water and kimchi and ssamjang. Cook for 3 minutes. Set aside
    Cool the patty on one side, flip and Olaf style cheese on top. Cover the pan with a lid to let the cheese melt.
    Assemble and enjoy!

    材料:
    黑毛豬梅頭肉 ... 1.5磅

    醃料:
    叉燒醬 ... 60克
    柱候醬 ... 10克
    海鮮醬 ... 30克
    芝麻醬 ... 15克
    砂糖 ... 20克
    雞粉 ... 1茶匙
    玫瑰露酒 ... 10克

    額外材料:
    蜜糖 ... 適量

    備用叉燒汁:
    滾水 ... 25毫升
    叉燒醬 ... 25克
    燒烤蜜糖 ... 30克

    食譜:
    第一步 梅頭豬肉解凍後洗淨瀝乾水並切成扒狀
    第二步 用叉將豬肉刺出一堆小洞
    第三步 將所有醃料均勻塗在肉上及按摩
    第四步 放入保鮮袋內,放入雪櫃醃制3小時至入味
    第五步 焗爐預熱200°c,焗盤墊上兩層錫紙,放上烤架,把豬肉放上
    第六步 以200°c加熱風對流焗15分鐘,中途取出間歇淋上醬汁,焗15分鐘後,翻轉另一邊淋上醬料,溫度調節180 °c再焗多5分鐘
    第七步 焗完後,兩邊塗上燒烤蜜糖,再焗3分鐘
    第八步 混合叉燒醬滾水以及燒烤蜜糖製成後備燒烤醬,切開叉燒並淋上後備燒烤醬即成

    Ingredients:
    Black Iberian Pork Shoulder Butt 1.5 lb

    Seasoning:
    Char Siu sauce ... 60g
    Chu Hou Paste ... 10g
    Hoisin Sauce ... 30g
    Sesame Paste ... 15g
    Sugar ... 20g
    Chicken Powder ... 1tsp
    Rose Liqueur ... 10g

    Additional Ingredients:
    Honey ... appropriate

    Spare Char Siu Sauce :
    Boiling water ... 25ml
    Chinese Barbecue Sauce ... 25g
    Barbecue Honey ... 30g

    Recipe:
    STEP 1 Slice into pieces and let dry after defrosting and rinsing the Pork
    STEP 2 Poke holes into the meat
    STEP 3 Massage the meat after topping all the seasoning
    STEP 4 Wrap the meat with cling film and put into the fridge for 3 hours
    STEP 5 Preheat oven to 200°C,Put the meat on the tray with tin foil cover
    STEP 6 Bake for 15mins in 200°C convection mode,Bake 5 more mins in 180°C after flipping the meat and basting the sauce
    STEP 7 Rub with barbecue Honey and bake for 3 more minutes
    STEP 8 Mix the Char Siu sauce and barbecue honey into hot water as Spare Chinese barbecue sauce,Slice the pork and baste the spare barbecue sauce and finish

    Marinade?⬇️
    Char siu sauce  130g
    Hoisin Sauce  75g
    Chee Hou Sauce 20g
    sugar   40g
    sesame paste  35g
    Chicken powder  2tbsp
    Mei Kuei Lu Chiew?(Chinese Rose Wine)20g

    BBQ honey(Glaze) ?? Moderate
    add at last 4 mintues (video time 5:45)

    Char Siu Honey side sauce
    (video time? mixing 6:00 & baste 7:19)
    BBQ Honey  30g
    Hot water 25ml
    Char Siu sauce  25g


    1.Cut the pork into seven long strips about
    1.5inch ?video time 1:22)
    2.Use a fork to poke it (? time 1:57)
    3.Mix the marinade thoroughly (? time 2:32)
    4.Cover the meat with marinade and wait for 3hrs or overnight. Put it into fridge (? 2:55)
    5.Preheat Oven to?200°c for ⏰10 mins
    6.Line the tray with foil (? time 4:09)
    7.Put Char Siu on the roast rack (?time 4:16)
    7.Baste marinade on top (? time 4:21)
    8.Roast it at?200°c ⏰ 20mins
    (?time 4:39)
    9.Take it out & flip it over. Baste marinade on
    top and back in oven ?200°c ⏰10mins
    (? time 5:04)
    10.Lower the tempature to ?180°c ?
    roast for more⏰ 8 mins.
    11.Take it out. Baste BBQ honey on both sides.
    Back to oven ?180°c ⏰4 mins
    (?time 5:42)
    12.Rest 10mins. Slice Char Siu.
    13.Stir Honey Char Siu side sauce thoroughly.
    Then microwave for 30 seconds(? 6:09)
    14.Baste some side sauce. Enjoy it!

    材料:
    脢頭肉 8片
    梅菜 40克
    薑 1小件
    葱 少許

    調味料:
    蠔油 1/2湯匙
    糖 1茶匙
    老抽 少許
    生粉 適量

    做法:
    1.梅菜洗乾淨後浸冷水1小時,抹乾水分後,切成幼粒,備用。
    2.薑刨切成茸;葱切粒,備用。
    3.燒熱鑊下油,把薑茸及梅菜粒炒香,盛起。
    4.脢頭肉片放上梅菜和薑茸做餡並捲起,然後大火隔水蒸約10分鐘至熟。
    5.把蒸豬肉卷的肉汁倒進鑊中,加入蠔油、糖、老抽、水煮勻,加入生粉水埋芡成醬汁。
    6.把醬汁淋在豬肉卷上,再撒上葱粒即可。

    Pork Roll with Sweet Preserved Vegetables
    Ingredients:
    Pork collar 8 slices
    Preserved Vegetables 40g
    Ginger 1 small
    Scallion a little

    Seasoning:
    Oyster sauce 1/2 tbsp
    Sugar 1 tsp
    Dark Soy sauce some
    Corn Starch amount

    Methods:
    1.Soak the preserved vegetables in cold water for one hour. Drain and chop, set aside.
    2.Mince the ginger; dice scallion and set aside.
    3.Heat the wok, add some oil, saute the ginger and preserved vegetables until fragrant. Remove from heat.
    4.Place a slice of pork collar, add the ginger and preserves vegetables on top, and then roll up. Steam for about 10 minutes until cooked.
    5.Pour the gravy of the steamed pork roll into the wok, add oyster sauce, sugar, dark soy sauce, water and cook, thicken the sauce with corn starch.
    6.Baste the pork roll with the sauce, and then sprinkle scallion on top. Done.

    Who would have thought a Chinese could make Indian Tandoori Chicken?!? Haha! Watch this video to see how a Chinese make it. Don't scold us if it's not as authentic as it should be. I found Roland's Tandoori Chicken to be mouth-watering and it tasted pretty authentic too. Well to me at least :) Try and let me know what you think.

    Ingredients:
    Serves 2 - 4 pax

    Marinate the chicken for at least 2 hours but not more than 6.
    --------
    1/2 cup (125ml) of plain yoghurt
    1/2 teaspoon of cumin seed powder
    1/2 teaspoon of coriander seed powder
    1/2 teaspoon of turmeric powder
    1 tablespoon of chilli powder
    1 tablespoon of garam masala
    4 cloves of garlic - grated
    1 thumb size ginger - grated
    1 teaspoon of salt
    Juice from half a lemon
    2 pieces of whole chicken leg (skinless)

    Preheat your oven at 180C (356F) for at least 30 mins before you bake your chicken. Then bake the chicken at 180C (365F) for 20 mins. Baste the chicken with chilli oil (mix 1 tablespoon of oil with 1 teaspoon of chilli powder) at each 10 minute interval. Then increase the temperature to 200C (392F) and bake the chicken for anotheer 10 minutes.
