Katsudon is a Japanese dish that consists of Tonkatsu (Deep-fried pork cutlet) and creamy eggs cooked in a savory sauce, and served over steamed rice. This dish is simple and delicious, let’s try this recipe!

食材
里肌豬排-150g、雞蛋-3顆、低筋麵粉-1/4量杯、麵包粉-1/4量杯、洋蔥絲-10g、白飯-適量
調味
鹽-1/4茶匙、黑胡椒-1/4茶匙
醬汁
高湯(日式高湯或雞高湯)-120ml、醬油-2湯匙、味醂-2湯匙
步驟
(1) 將里肌豬排去筋,再均勻沾裹鹽及黑胡椒後,依序沾裹低筋麵粉、蛋液(1顆雞蛋分量)、麵包粉。
(2) 將豬排以150至170°C油炸至表面金黃色澤後,起鍋備用。
(3) 準備一只小型平底鍋,倒入所述「醬汁」之調味品拌勻,以小火煮至沸騰後,放入洋蔥絲煮至軟化。
(4) 將雞蛋略微打散備用(保有少許的蛋白)。將豬排切塊備用。
(5) 將豬排放入鍋中,將一半的蛋液倒入鍋中並煮至半熟後,再倒入所剩蛋液並蓋上鍋蓋,將蛋液以小火悶煮至成型,再起鍋鋪於白飯上即可。

Ingredients
150g pork loin, 3 eggs, 1/4 cup low-gluten flour, 1/4 cup breadcrumbs, 10g thinly sliced onion, 1 serving steamed rice
Seasoning
1/4 tsp salt, 1/4 tsp black pepper
Katsudon sauce
120ml broth (Dashi or Chicken stock), 2 tbsp soy sauce, 2 tbsp mirin
Instructions
(1) Make a couple of slits on the silverskin from pork loin, then sprinkle salt and black pepper. Coat the pork loin with flour, dip in egg mixture (one egg), then cover with breadcrumbs.
(2) Deep-fried the pork loin at 150 to 170°C until golden brown, then set aside.
(3) In a small-size pan, add all seasoning of Katsudon sauce and stir well. Heat the sauce over low heat until boiling, add the onion and cook until soft.
(4) Beat two eggs in a bowl, set aside. Cut the pork cutlet into small piece, set aside.
(5) Put the pork cutlet in the pan, pour in half of the egg mixture and cook until half cooked. Pour in all of the egg mixture and cover the pan, cook over low heat until the egg is just set, serve over bowls of steamed rice.
