I guess everyone knows chef @carydocherty is @chezcalvert mentor for his tarte tatin. Ok, let’s talk about the “guru” ‘s version here: The pastry was puffy but didn't break away, but what made it so mesmorising was his choice of apple: the acidity was comfortable, the taste of apple was rich, even after baking, it was still fluffy. I have had many tart tartine, technically many of them was done well, but none had the apple right, most are too acidty and not aromatic enough. When I asked Chef Cary, he was so happy, and said it was Bramley from France, there are many varieties of apple, but only this has the right acidity, texture and aroma after cooking. The ingredients were only half the reason why the tarte tatin was so great, the other half was technique! Chef Cary mentioned, they normally peeled the apple 5 days in advance and will leave it in their freezer, to let them lose the water, to concentrate the sweetness, and will be better after baking! But the apples on my tarte tatin only arrived 24 hours ago, so they didn't have time to go through the normal process. So what did the chef do? Chef Cary didn't want to lower the quality of the dish, so after peeling the apples, he had fans blowing at the apple for 8 hours to achieve the same effect! You can see, a noarml looking tarte tatin, because it's unusual step, it created an extraordinary taste!
酥皮香酥鬆脆而不散,叫人擊節再三的是蘋果的選材:酸度舒適、蘋果味濃郁,經過焗烤後蘋果肉咬下後仍很「粉」,就像好吃的蓮藕的口感!吃過多少tart tartine,技術層面處理得無懈可擊的不在少數,但總是蘋果種類選材不對,一般都是酸度太高、香氣又不足。後來問了Chef Cary,他很開心地說是啊,蘋果是特地選用法國的Bramley,試過太多品種,只有這款的酸甜度、口感、香氣、煮過以後的味道狀態都能達標。但此塔做得如此出色,選材是做對了一半,另一半是技術!Chef Cary說他會把蘋果削皮後放在廚房的大冷凍庫裡冷凍五天,好讓蘋果的水分有所流失,那麼甜度更集中、經過焗烤後口感會更好!我當天吃的這個tarte tatin,蘋果在前一天才到貨,來不及冷凍了,怎麼辦?Chef Cary可沒有因此降低要求,而是把所有蘋果削皮後,用大風扇吹足8個小時,來達到同樣效果!你看,一個平常不過的tarte tatin,因為背後有別與常規的講究工序,所以做出了非比尋常的好味效果!

We’ve been talking a lot about vegetable idioms, but what about the word vegetable itself? Because vegetables are technically alive, but can’t move (or talk), 1⃣ the word is sometimes used to refer to someone who is paralyzed or in a coma. This informal term can be considered offensive though, so use with care. Ex: Tom was in a serious accident, and now he’s a vegetable.
到現在我們已經介紹了許多與蔬菜相關的美國生活用語,vegetable 這個字本身倒還沒介紹過。蔬菜算是有生命的,只是不能動也不能說話,所以vegetable 這個字也指「植物人」,指癱瘓或陷入昏迷的人。不過這個不正式用法有時候有會有歧視意味,要小心使用。如:Tom was in a serious accident, and now he’s a vegetable.(湯姆發生嚴重意外,現在是植物人。)
This sense of the word vegetable has also produced 2⃣ the verb “vegetate,” which means to sit around doing nothing or spacing out. Sounds like something a couch potato would do, right? Ex: I just spent all weekend vegetating on the couch.
上述定義也延伸出動詞 vegetate,指呆坐著啥也沒做或一直放空,聽起來跟couch potato的行為有點像吧。如:I just spent all weekend vegetating on the couch.(整個週末我都待在沙發放空。)
Another more colloquial expression with the same meaning Is 3⃣ “veg out.” Ex: Stop vegging out and do your homework! Veg out is also used in the adjectival form “vegged out.” Ex: When I got home, Anthony was vegged out in front of the TV.
同樣可以表達「放空」但更為口語的說法是 veg out,如:Stop vegging out and do your homework!(別再放空了,快寫功課!)veg out 這個動詞片語也可以用形容詞 vegged out 表達,如:When I got home, Anthony was vegged out in front of the TV.(我到家時,安東尼正坐在電視前發呆。)

Let’s start with the word nut itself. Aside from being a tasty snack, 1⃣ a nut can be a strange or crazy person: Just ignore that guy—he’s a nut. A nut can also be an enthusiast: Tom is a tennis nut—he plays every day. Or add an “s” and you have an adjective meaning “crazy”: You’d have to be nuts to go skydiving!

Technically, peanuts aren’t nuts (they’re actually legumes), which may be why they’re so cheap. So cheap, in fact, 2⃣ that “peanuts” can mean “a very small amount of money”: Students often have to work for peanuts.
嚴格來說,花生雖然有nut幾個字,但並非堅果類(其實是莢豆的一種)。所以其實花生很便宜,因為太便宜了,所以peanuts可以指「非常便宜,花不了幾毛錢」,如:Students often have to work for peanuts.(學生常為了幾斗米折腰。)
At one time, a formal dinner started with soup and ended with port and nuts, so 3⃣ “from soup to nuts” came to mean “leaving nothing out, from beginning to end”: That store sells everything from soup to nuts.

If you’re a tree, what’s inside a nutshell—a nut—is both small and important. For this reason, 4⃣ “in a nutshell” has come to mean “in sum, in brief”: It’s a long story, but in a nutshell, I got fired. Another thing about nutshells is that they’re hard, which makes a nut tough to crack. 5⃣ If a person, problem or situation is “a tough/hard nut to crack,” it means they’re difficult to deal with or understand: I’ve known Bob for a year, but he’s a tough nut to crack.
