I mean, there's really not much to say about this quivering pile of opulent golden crab butter mixed on top of fragrant claypot rice! Apparently this is a new dish at Liu Yuan this year and features piles of that yellow goo piled on top of claypot rice which sits on a burner at your table. The roe and rice are then mixed together and smell of rice crisps forming as well as the fragrance of crab oil (cholesterol...) being released into the air combine to form an intoxicating perfume that I wouldn't mind wearing any day of the week! I think this dish is nice if you want some variation and complexity to your flavours because is it just me or do crab roe on top of mung bean noodles become kind of monotonous after a few bites? I also realised I haven't had that much crab this season (shock horror) but with my limited taste this year, I do have to say that the female crabs at Tin Heung Lau bested the male crabs at Liu Yuan - quite a feat given I much prefer male crabs (and humans I guess?). Yes, @nantheless was well and truly blown away by her first visit to Three MICHELIN Starred @lesamisrestaurant. Not that I needed reminding why this is one of my all-time favourite fine dining restaurants, but seeing her awe and joy throughout our almost 5-hour lunch was heartwarming. And why wouldn’t she, or for that matter, all of us, be wonderstruck when we were pampered by the impeccable service of @manoj_sharmahm and Shaun as they presented us with the following: 1. Canapé 1 - The two variations of cheese comprised of Comte wrapped in air-dried beef and a crunchy parmesan puff topped with red bell pepper “bavarois”, micro basil leaf and a hint of ginger caramel. 2. Canapé 2 - My face lit up when I spotted the rosy French tomato from the Loire Valley. Confit in extra virgin olive oil and placed on delicate puff pastry with basil and thyme, it had to be eaten in one bite as the tomato was a sensuously soft quivering mass. 3. Canapé 3 - The second variation of said tomato was a foamy veloute layered on cucumber jelly, finished with black pepper and extra virgin oil droplets. On the side, a mini tomato-basil bread. 4. Breads - When the mother of all bread trolleys graced us with her presence, causing hyperventilation all around as usual, I repeated my mantra of “one of everything please”. The assortment, as well as the freshly baked loaf of sourdough that arrived minutes later, were spectacular, elevated by a butter that totally held its own. The result of @chef_sebastien_lepinoy‘s close collaboration with Mr. Pascal Beillevaire and his team, the pale yellow block boasted a clean yet full flavour due to optimal “foisonnage” (air incorporation) and moisture level. 5. Cold Angel Hair Pasta with Caviar - The crowd-pleasing signature of Les Amis’ tasted heavenly. Prior to its arrival, resident Caviar Master Patrick Esteves did an introduction of the @kaviari_paris oscietra caviar we were to have, and scooped a spoonful for each of us to try. Rolled around and then pressed against the roof of my mouth, the tiny pearls burst with a rich nutty, briny creaminess. 6.
