全植物焦糖蘋果起司蛋糕杯 / 中文下方
Vegan Mini Caramel Apple Cheesecake — made with an amazing date-caramel sauce, apple chunks, creamy cheesecake, and a nutty base, they are so delicious that I could totally forgive what the shop owner did to me today. (not a happy story to share, but I got pretty upset. 🙄)
- Base
90 g (a slightly heaping1/2 cup) dates, pitted
60 g (1/2 cup) walnuts
40 g (1/4 cup + 2 tsp) pecans
40 g (a scant ½ cup) rolled oats
A pinch of salt
- Cheesecake layer
120 g (1 cup) raw cashews, soaked in water for 3-5 hours
4 Tbsp maple syrup
1/2 tsp vanilla extract
2 Tbsp drinking water
2 Tbsp coconut butter, melted
100 g (~3.5 oz) silken tofu, drained
- Caramel Apple Topping
1 big apple, ~200g
1/2 tsp ground cinnamon
170 g (1 cup) dates, pitted
2 Tbsp maple syrup
A pinch of salt
6-10 Tbsp drinking water, depending on the dryness of the dates
4 Tbsp walnuts, roughly chopped

充滿了美味的椰棗焦糖餡、蘋果丁、腰果起司蛋糕層,還有充滿秋天滋味的堅果底層。
享用它可以讓我原諒今天一家店處理我買到瑕疵品的方式。
(說真的,我還是覺得滿生氣的 🙄)
但日子還是要過,甜點還是要吃。

- 焦糖蘋果層
1 大顆蘋果
1/4 tsp 肉桂粉
1 小撮 鹽
85 g 去籽椰棗乾
90 ml 飲用水
2 Tbsp 楓糖漿
4 Tbsp 核桃
- 底層
90 g 去籽椰棗乾
60 g 核桃, 烤過的較香
40 g 胡桃, 烤過的較香
40 g 傳統燕麥片
- 起司層
120 g 生腰果, 事先浸泡於飲用水中 3-5 小時
4 Tbsp 楓糖漿
1/2 tsp 純香草精
2 Tbsp 飲用水
2 Tbsp 椰子奶油, 加熱至有流動性
100 g 嫩豆腐
1 . 製作焦糖蘋果表層:將蘋果去核(選擇性去皮),切成小丁塊,與肉桂粉放到小鍋中以中火煮約 5 分鐘至蘋果開始軟化,蘋果軟了後,將它至於一旁,放涼備用
2. 將去籽椰棗乾、楓糖漿、飲用水用食物調理機或食物處理機攪打成泥。冷藏備用
3. 製作底層:將去籽椰棗乾放入食物處理機或調理機中,切成小碎塊,再加入其餘食材,攪打混合至全部食材變得像溼的麵包碎
4. 取兩個 6 連杯子蛋糕/瑪芬模,裡頭放紙襯或矽膠杯子蛋糕模。將底層混合物平均分別填入模具中,冷凍備用
5. 製作起司蛋糕層:將浸泡腰果的水倒掉,稍微沖洗一下,並將全部的食材放入食物調理機中,攪打混合至滑順
6. 將冷凍的模具取出,將起司蛋糕層混合糊平均倒入模具,再放到冷凍至起司蛋糕層凝固
組合
7. 將冷藏的椰棗泥取出,與核桃一同加入煮軟的蘋果丁,混拌均勻
8. 將焦糖蘋果餡料平均鋪於凝固的起司蛋糕層上,冷凍 2-3 小時,至完全凝固即可

Part Two — LACTOSE INTOLERANCE
Humans are the only animals that continue to consume milk into adulthood. No other specie drinks milk beyond infancy nor the milk of another species. Cow’s milk is made for their babies, suited to the nutritional needs of calves, not made for human consumption.
Most humans begin to produce less lactase, the enzyme that helps with the digestion of milk, when they are as young as 2 years old. This reduction in lactase can lead to lactose intolerance. More than 90% of Asians are lactose intolerant, symptoms include bloating, gas, cramps, diarrhea and vomiting.

[ Make your own CHOCOLATE MYLK ]
1 cup cashews
3 cups filtered water
6 pitted dates
3 Tbsp raw cacao powder
2 Tbsp raw cacao nibs
1 tsp vanilla
a pinch of cinnamon
and a high speed blender
1. Soak the cashews in filtered water with a pinch of salt overnight in bowl, keep it in the fridge.
2. Once it's done soaking, which gets rid of the natural occurring anti-nutrients in nuts, drain and rinse with filtered water and throw them into the blender along with all the other ingredients. Blend until smooth and voilà!
第 二 部 曲 — 乳糖不耐症
人類是唯一在長大後還吃乳製品的動物。小羊、小牛長大後也不會再喝母奶。事實上,因應人體與牛的構造不同,牛奶與人奶的成份其實是大不相同的,換句話說,適合別的動物的奶其實不見得適用於人體!
隨著年齡成長,人體中幫助消化乳醣的酵素會減少,所以在沒有酵素幫忙的情況下,又攝取乳製品,會導致乳糖不耐。根據研究統計,逾90%的亞洲人有乳醣不耐的情形。腸絞痛、腹瀉、腹痛、嘔吐等都是乳糖不耐的症狀,特別注意的是,有些嬰兒也是因為不適乳糖而有這樣的情形唷!
在Plants我們不提供任何乳製品,取而代之的是自製的喚醒堅果奶,不僅營養價值更高、更好消化,同時也更沒有負擔唷!
[ Plants 教妳/你做 – 巧克力腰果奶 ]
1 杯 生腰果
3 杯 過濾飲用水
6 顆 去籽椰棗
3 湯匙 生可可粉
2 湯匙 生可可仁
1 茶匙 香草精/香草粉
1 小撮 肉桂粉
1 台 高速 blender
1. 將腰果浸泡在加了一點點鹽的飲用水中,放入冰箱一個晚上。這是為了將堅果本身含有的抗營養因子去除。
2. 隔天把水瀝乾、用飲用水清洗後放入blender,加入所有其他食材,打到滑順就完成了!
