    昨天鄰居奶奶又要我過去吃晚餐
    我趕快帶好幾袋衛生紙給她還有香皂
    (奶奶喜歡蒐集廁所衛生紙可能很有安全感)

    然後奶奶要我把桌上的菜全吃完
    因為她說她老公卡車爺爺很挑食
    (爺爺在旁邊自己吃西瓜說不想吃飯)

    我吃了馬鈴薯和燉菜還有奶奶的燉煮蔬菜
    和整碗雞腿一共十三根整個肚子快爆破了

    我幫小粉絲們問到鄰居奶奶的北歐醃菜食譜了
    奶奶很認真的寫下來給我而且她字超美的

    我在這邊翻成英文:

    Raw cabbage head.
    Needs to be sliced into very thin stripes
    Add cumin seeds. Not to much
    Salt. grainy one. Not to much
    Carrot. Plenty of it
    -----------------------------
    Mix all together in a big bowl or bucket.
    Plastic container recommended.

    Use something heavy to stomp the mixture together ( needs to be almost glued together)

    Cover the stomped mixture with towel.

    Place a wooden board or similar thing on top of the towel so it covers inside of the bowl.

    Place rock on top of the board ( anything heavy will do. This allows the mixture to be forced together even more)

    Keep in warm room for 2- 3 days until there is foam on top.

    Remove the board, store, towel and put the mixture into cold place, it should have somewhat sour taste now and plenty of liquid as well.

    But part of the mixture into the pot, add some grease. Preferably some butter.
    Can add some extra salt and very tiny bit of water. Boil til its soft.
    More you heat it up and let it cool down the better it gets.

    (一定要切的很細)
    加一點孜然籽小茴香或其他香料
    (隨便香料都可但奶奶推薦馬芹或孜然子或小茴香)
    加一點鹽巴
    加一堆細絲紅蘿蔔
    (要很細)

    把它們混在一個大碗公裡面(塑膠碗最好)
    然後用很重的東西把它們壓爆擠爆錘爆
    (要讓食材黏著在一起)

    然後用毛巾蓋住再用一塊木板放在毛巾上
    (木板的大小要在容器裡面 或是其他東西都可以大小但要塞在容器裡面)

    再用一塊石頭壓在板子上
    或隨便很重的東西都可以

    這樣可以讓食材好好的混在一起
    然後放在溫暖的房間大概兩三天
    直到毛巾上面有泡沫

    然後把所有食材都拿出來放到冰箱
    這時應該有酸味然後有很多液體
    (放到冰箱可以保存很久)

    如果你要吃的話
    把一點倒入鍋子裡面然後加一點奶油
    你可以加一點鹽巴或糖和一點點水
    煮到軟軟的就可以吃了

    你每次加熱之後冷卻然後再加熱
    這個燉菜就會越來越好吃

    以上是鄰居奶奶的歐洲燉菜食譜
    我覺得超好吃很配飯和馬鈴薯

    結果隔天爺爺被叫到警察局
    他想說也不知道自己做了什麼壞事

    結果發現那天睡的粗壯女人是個高階警官
    她對爺爺一見鍾情想要再見爺爺一面

    爺爺嚇爆趕快說自己家裡有事然後逃跑

    Max的那個玩具球球是我買的
    他跟巴褲一樣很喜歡玩球

    Max超保護奶奶
    每次爺爺如果跟奶奶講話大聲
    Max就會去咬爺爺的屁股
    或是用身體去撞爺爺

    酸菜魚
    材料: 桂花魚或其他魚,帶甜咸酸菜,大豆芽 ,泡椒 ,辣椒干,花椒 ,薑,蔥,紅辣椒,花椒
    醃魚肉味料: 鹽少許,一隻蛋白,胡椒粉少許
    做法: 1 燒熱鑊落油,猛火煎香魚骨,鹽少許,加滾水煮至湯濃白隔起魚骨
    2 魚肉加鹽拌勻至感覺有些膠質後加一隻蛋白,胡椒粉少許拌勻待用
    3 咸酸菜片薄切塊,白鑊炒至乾身
    4 落油將薑絲,蔥頭,泡椒,大豆芽,咸酸菜炒香
    5 開火煲熱魚湯落魚肉加鹽,菇粉各少許稍滾,魚肉鏟起放做法 4 面上,繼而淋上魚湯加一匙白醋
    6 燒熱鑊落油爆香辣椒干及花椒後倒入酸菜魚湯內,紅椒粒,蔥花飾面

    Hot and Sour Fish Soup with Pickled Mustard Greens
    (YouTube video starts at 1:33.)
    Ingredients:
    Fish - 1 large sea bass (or your choice of fish)
    (Separate the meat from the bones and head. Thinly slice the meat at 45-degree angle into bite size pieces. For larger pieces, make a slit in the center of each slice. Set aside.)

    Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
    (Important to choose ones that are SWEET tasting instead of salty.)
    (Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)

    Chinese pickled green chili (“pao jiao”) - 1 jar
    Ginger shreds
    Garlic pieces
    Bean sprouts
    Salt - to taste
    Mushroom seasoning powder - to taste
    White vinegar - 1 tbsp

    Potato starch noodles or glass noodles “fensi” - optional to add into the soup

    Fish soup base ingredients:
    Fish bones
    Fish head
    Ginger slices - for frying the fish bones and head
    Ginger slices - for making the soup
    A dash of salt
    Very hot boiling water (to make the fish soup creamy white)

    Marinade fish meat ingredients:
    Salt - a dash
    Egg white - 1
    White pepper - a dash

    Garnish ingredient:
    Dried chili
    Sichuan peppercorns
    Green onion pieces
    Fresh red chili pieces
    Sichuan peppercorn oil

    Methods:
    1. In a bowl, add in all the fish meat, a dash of salt, and thoroughly mix until slightly sticky. Add in 1 egg white, a dash white pepper, and mix well. Set aside.

    2. Heat up a wok to very hot and add oil. Sprinkle in a dash of salt, add in ginger slices, and add in fish bones and head to make the soup base. Fry them until fragrant and golden brown on HIGH heat, and remove the ginger slices.

    3. Add in very hot boiling water, add ginger slices, and bring it to a boil and cook until creamy white. Turn off heat and remove all the fish bones and head and pour the soup through a strainer into a bowl.

    4. Return the soup back to the wok and add in marinated fish meat prepared in Step 1 and simmer until cooked. Add in salt and mushroom seasoning powder to taste. Set aside.

    5. Heat up a wok, add in oil. Add in ginger shreds, garlic pieces, Chinese pickled green chili, and stir fry until fragrant. Add in bean sprouts, Chinese pickled mustard greens, and mix well. Add in cooked fish meat and fish soup.

    6. Drizzle in 1 tbsp of white vinegar.

    7. Heat up a separate frying pan, and add oil. Add in dried chili, Sichuan peppercorns, and pour on top of the soup.

    8. Garnish with fresh red chili and green onion pieces.

    9. Drizzle Sichuan peppercorn oil on top.

    酸菜牛肉
    材料: 牛肉,青紅辣椒,咸菜
    香料: 薑一片,蒜一粒
    醃料: 糖少許,胡椒粉少許,鼔油,生粉適量
    做法: 1 牛肉先醃備用
    2 落油爆香薑,蒜,青紅辣椒,落牛肉炒,最後加咸菜炒勻即可
    備註: 咸菜有二隻,一帶甜,另一帶咸,今次是帶甜
    咸菜處理可參考酸菜魚
    煮酸菜牛肉可試味需否加糖

    Ingredients:
    Beef steak slices
    (You can replace with beef tenderloin or pork.)

    Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package

    (If you are using the SALTY type, just add more sugar.)
    (Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)

    Red and green sweet bell peppers - sliced
    Minced ginger
    Minced garlic - 1 clove

    Marinade beef ingredients:
    Cooking oil
    Sugar
    Light soya sauce
    White pepper
    Corn starch / flour

    Methods:
    1. In a bowl, add in sliced beef steak, cooking oil, sugar, light soya sauce, white pepper, corn starch, and mix well. Set aside.

    2. Heat up a wok, add oil. Add in minced ginger, minced garlic, red and green sweet bell pepper slices, marinated beef slices, and briefly stir fry until fragrant. Transfer to a bowl. Set aside.

    3. Heat up the wok, add Chinese pickled mustard greens. Optional to add sugar now if you find it salty.

    4. Return the partially cooked beef back to the wok, and mix well. Transfer to serving plate. Serve.

    芒果棷汁糕

    材料:
    凍滾水 250 ml
    奶 250 ml
    魚膠粉 35 gr (可改用魚膠片5-6片)
    沙糖 100 gr (可依個人喜好加減)
    棷奶 1罐
    芒果 2-3個

    做法:
    1. 凍滾水、奶 、魚膠粉、沙糖放入煲內,開中大火煮,邊煮邊輕輕攪拌至魚膠粉和糖完全溶解。
    2. 加入棷奶,攪拌至混合後關火,放涼備用。注意:加入棷奶後不要煮太久,以避免油水分解。
    3. 芒果去皮切粗條或粗粒,排放入糕盆內,倒入已放涼棷奶混合液,蓋好後放入雪櫃雪至硬身便可

    Mango Coconut Pudding
    (YouTube video starts at 35:35.)
    Ingredients:
    Drinking water - 250ml (do not use tap water)
    Milk - 250ml
    Gelatin powder - 35g (or replace with agar agar)
    Sugar - 100g or to taste
    Coconut milk - 1 can
    (Add in last to avoid the oil separating, which will result in two layers when pudding is set.)

    Fresh mangos - cut into your choice of designs. (Cubes or strips or floral.)
    (Cut into THICK pieces to avoid pieces from moving.)

    Methods:
    1. In a cooking pot, add in drinking water, milk, gelatin powder, sugar, and cook until sugar and gelatine have melted and little bubbles appear by continue stirring.

    2. Add in coconut milk and taste test for sweetness.

    3. Let it cool down to room temperature.

    4. In a mould, add in fresh mango pieces on the bottom layer then pour coconut milk mixture on top.

    5. Put in the refrigerator to set.

    6. Cut into cubes. Serve.

    To create mango layers:
    Optional to layer mango pieces on the bottom of the mould then refrigerate until they are a bit dehydrated and stick to the mould. This is to prevent them from moving or floating.

    Once the mango pieces are set on the bottom of the mould, pour half of the coconut milk mixture in and set in the refrigerator for about 30 minutes.

    After 30 minutes, or once the pudding is set, add the remaining mango pieces, coconut milk mixture, and refrigerate it until set and firm. You may create more than 2 layers.

    Once set, loosen the pudding from the mould and transfer to a serving plate with the bottom of the pudding facing upward displaying the mango pieces design. Slice and serve.

    莉雅唯美系檸檬戚風蛋糕
    食材 Ingredients
    3顆蛋黃 3 yolks 60g
    檸檬汁 lemon juice 15g
    飲用水water 15g
    植物油 oil 30g
    低筋麵粉 cake flour 55g(過篩sifted)
    3顆蛋白 3 egg white 90g
    細砂糖 caster sugar 45g

    糖霜裝飾 icing
    檸檬汁 lemon juice 12g
    糖粉 icing sugar 65g(sifted過篩)

    做法(預熱烤箱160度) Methods (preheat oven to 160C)
    1. 先拌勻蛋黃, 油, 飲用水, 檸檬汁, 再加入低粉拌勻
    Mix egg yolk, oil, water and lemon juice first. Then add cake flour and mix well

    2. 打發蛋白與細砂糖直到堅挺
    Beat egg white and sugar until firm.

    3.混合1與2, 倒入6吋戚風蛋糕模(或杯子蛋糕紙杯也可以)放入烤箱烤約25-35分鐘 直到牙籤插入取出後不沾麵糊即可
    Gently stir egg yolk mixture(1) with meringue (2) well, then pour the batter into a 6 inch chiffon cake mold.
    Place the cake in the oven for 35 mins until a toothpick is inserted in the cake and it comes out clean.

    4.(蛋糕取出後放涼) 製作糖霜, 混合檸檬汁與糖粉, 淋在放涼後的蛋糕上即完成
    After the cake is completed cool, mix lemon juice and icing sugar together. Then pour the icing on the cake.

    材料:

    處理:

    3. 用粗鹽乸蘿蔔5分鐘,令它出水,輕手揸出水分,以去除苦澀味。
    4. 清水沖乾淨蘿蔔條中的鹽分,擎乾水,放入一個大碗。
    5. 加入3湯匙麪粉,再加入少許胡椒粉,攪勻。
    6. 打2隻雞蛋,攪勻。
    7. 再加入麪粉至起漿就可以了。
    8. 蝦米擎乾水,放入蘿蔔內攪勻。

    烹調:
    1. 放2湯匙油落鑊,大火燒熱。
    2. 夾起蘿蔔放鑊中, 鑊燒熱後轉中慢火,慢煎。
    3. 煎至金黃色,反轉另一面,冚蓋焗3分鐘。
    4. 反轉,再焗3分鐘。
    5. 完成,上碟。

    White radish pancake:

    Ingredients:
    White radish 1 catty
    Rice flour
    Eggs 2 Nos.
    Dried sea shrimps 2 taels

    Preparation:
    1. Soak dried sea shrimps in tap water for 3 minutes.
    2. Peel the radish, slice it and put it in a big bowl.
    3. Season radish with cooking salt for 5 minutes to make radish releases liquid from itself. Squeeze it gently to release the bitter taste.
    4. Rinse the salt in radish thoroughly. Hang dry and put it in a big bowl.
    5. Mix 3 tbsp flour and little pepper into radish well.
    6. Beat 2 eggs into radish, then mix well.
    7. Add more flour to make the mixture becoming thick is OK.
    8. Dried sea shrimps has already been hung dry, mix well with the radish.

    Steps:
    1. Heat up 2 tbsp oil at high flame in wok.
    2. Put a small amount of radish into wok. Turn to medium~low flame, continue frying.
    3. Flip over the radish pancake when it turns gold in colour. Cover pan with lid for 3 minutes.
    4. Flip over pancake, cover pan with lid for another 3 minutes.
    5. Complete. Serve.

    牛腩兩斤
    洋葱兩個
    薯仔數隻
    辣底一碗(用紅葱頭、蒜頭、辣椒粉爆香)
    咖喱粉一碗(一半馬來西亞咖喱粉,一半印度咖喱粉)
    鹽適量
    糖適量

    做法:
    1.爆香洋葱,備用
    2.爆炒薯仔,備用
    3.辣底加咖喱粉炒香
    4.加入預先汆水然後切件的牛腩
    5.加入預先炒好的洋葱
    6.加水至剛蓋過牛腩
    7.炆大概半小時
    8.加入薯仔再炆15分鐘左右
    9.熄火焗兩小時以上
    10.視乎喜愛牛腩的軟硬程度,可以重複以上炆焗
    11.加入適量鹽及糖調味

    Ingredients:
    Beef briskets 2 catty
    Onions 2 pcs
    Potatoes Several pcs
    Spicy base 1 bowl (Stir-fry shallots, garlic, and chili flakes)
    Curry powder 1 bowl (Half Malaysian curry powder, half Indian curry powder)
    Salt Some
    Sugar Some

    Steps:
    1. Stir-fry onions till aroma comes out, set aside.
    2. Stir-fry potatoes, set aside.
    3. Stir-fry spicy base and curry powder.
    4. Boil beef briskets for several minute, clean, cut into pieces, and add to spicy base and curry powder mixture in pan and stir-fry.
    5. Add fried onions to pan.
    6. Add water until beef briskets are covered.
    7. Braise for half an hour.
    8. Add potatoes and braise for another 15 minutes.
    9. Remove from heat, leave pan covered and let it sit for at least 2 hours.
    10. Repeat step 9 to cook to your preference of tenderness.
    11. Add salt and sugar to taste.

    材料:
    炸豆腐6件
    燒腩半斤
    韭菜1小紮
    蒜頭2粒(切片)
    蝦膏1湯匙
    糖少許
    酒少許
    蠔油1湯匙
    水1杯
    生粉適量

    做法:
    1.炸豆腐切半,慢火煎至四面金黃
    2.爆香燒肉
    3.蝦膏切碎,加適量米酒拌勻
    4.水、老抽、糖、生粉拌勻備用
    5.韭菜洗乾淨切段
    6.預熱砂鍋加油爆香蒜片
    7.加入蝦膏、酒炒香
    8收慢火,排入豆腐
    9.加入燒肉及醬汁,滾起後加入韭菜
    10.上蓋慢火煮幾分鐘
    11.隨意加芫荽葱

    Ingredients:
    Fried tofu 6 pcs
    Roasted pork ½ Catty
    Chives 1 small bundle
    Garlic 2 cloves (Sliced)
    Shrimp paste 1 tbsp
    Soy sauce Some
    Sugar Some
    Cooking rice wine Some
    Oyster sauce 1 tbsp
    Water 1 cup
    Corn starch Some

    Steps:
    1. Cut fried tofu in halves, stir-fry on low heat until golden on all four sides.
    2. Stir-fry roasted pork briefly.
    3. Cut shrimp paste into small pieces, add rice wine, mix well.
    4. Mix water, soy sauce, sugar, and corn starch. Set aside.
    5. Clean chives and julienne.
    6. Heat ceramic pot, add oil and stir-fry garlic slices.
    7. Add shrimp paste and wine mixture and stir-fry.
    8. Reduce heat to low, place tofu into the pot.
    9. Add roasted pork and the sauce from step 4 and cook. Once the sauce begins to boil, add chives.
    10. Cover and cook in low heat for a few minutes.
    11. Add some cilantro and green onions to taste.
