First time trying food from Xinjiang, far western region of China. This is 大盤雞 (“dapanji”, literally big plate chicken), and consists of chicken, potatoes, scallions, onions, and spices in a hearty red sauce. Best eaten with flat nan bread (swipe right), this large communal dish is meant to be shared and is heartwarming on a cold day.
