Delivery for the East side takes place on Tuesdays, and that’s how I got to enjoy my beloved Signature Mee Tai Mak for lunch this afternoon. It’s my default item from them and is the one that travels best. Before eating, I perform the standard procedure I learned from my Teochew bro @szeliang888: Open the container, throw in sliced chilli padi, replace lid and give everything a good shake. To allow gravity do its part in shifting the sauce that has settled at the bottom, try to do a multi-directional movement including upside-down. But don’t do it for too long as the #meetaimak can break and become mushy. Get the timing right and you’ll be rewarded by rice squiggles with the best al dente texture coated evenly in a simple yet insanely tasty sauce with pork lard oil. It goes without saying that all the handmade fish paste items by Uncle Ah Hua are unerringly fresh, bouncy and not too salty. G I F T Didn’t expect such a tasty surprise from @hawkerjean who sent her father’s famous noodles for my family and I to enjoy. Thank you very much - it is always a real treat to be able to savour @ahhuateochewnoodle’s food, especially the “Signature Mee Tai Mak”. Even when delivered and eaten hours later, it is still miraculously tasty. All it takes is a proper shake as taught by my Teochew bro @szeliang888. And since I love a kick of spiciness in mine, throwing in sliced chilli padi before that step is imperative. The al dente rice squiggles dressed in the shiok-est blend of pork lard oil, soya sauce and more, and topped with an assortment of handmade fresh and bouncy “her chiok” (fish fillet), “her ee” (fishball) and veggie roll - all fish paste items, do form a most comforting, old-school style of tastiness. Somehow @uncle_lim_chiak knew the kind of delivery I’d be happiest receiving during my recuperation from Dengue. It’s none other than @ahhuateochewnoodle’s Signature Mee Tai Mak! Thank you so much, Leon. It hit the spot like the bull’s eye of all bull’s eyes with those immaculately cooked rice squiggles, minced pork and assorted fresh-tasting, springy “her kiao” and “her ee” (fish paste creations painstakingly made by Uncle Ah Hua himself) 😋😋😋. Since the last time I slurped up an order of this dish, #ahhuateochewnoodle seems to have received more and more media coverage - I recommend watching the videos recently produced by both @ourgrandfatherstory and @misstamchiak. They feature Uncle Ah Hua and his daughter @hawkerjean, whom he is imparting his knowledge and skills to. She and her daughter are the artists behind the colourful drawings on the containers, by the way 😍 (swipe to view). I think it’s fantastic that this family-owned and run stall is getting the attention it deserves because the food they sell is hugely effort-ful and extraordinarily delicious. Every time I eat it, I can’t help but be wreathed in smiles. Yet to this day, I haven’t actually dined on the premises.
