昨天鄰居奶奶又要我過去吃晚餐
我趕快帶好幾袋衛生紙給她還有香皂
（奶奶喜歡蒐集廁所衛生紙可能很有安全感）

然後奶奶要我把桌上的菜全吃完
因為她說她老公卡車爺爺很挑食
（爺爺在旁邊自己吃西瓜說不想吃飯）

我吃了馬鈴薯和燉菜還有奶奶的燉煮蔬菜
和整碗雞腿一共十三根整個肚子快爆破了

我幫小粉絲們問到鄰居奶奶的北歐醃菜食譜了
奶奶很認真的寫下來給我而且她字超美的

我在這邊翻成英文：

Raw cabbage head.
Needs to be sliced into very thin stripes
Add cumin seeds. Not to much
Salt. grainy one. Not to much
Carrot. Plenty of it

Mix all together in a big bowl or bucket.
Plastic container recommended.

Use something heavy to stomp the mixture together ( needs to be almost glued together)

Cover the stomped mixture with towel.

Place a wooden board or similar thing on top of the towel so it covers inside of the bowl.

Place rock on top of the board ( anything heavy will do. This allows the mixture to be forced together even more)

Keep in warm room for 2- 3 days until there is foam on top.

Remove the board, store, towel and put the mixture into cold place, it should have somewhat sour taste now and plenty of liquid as well.

But part of the mixture into the pot, add some grease. Preferably some butter.
Can add some extra salt and very tiny bit of water. Boil til its soft.
More you heat it up and let it cool down the better it gets.

你要準備高麗菜頭或是生白菜頭然後切成細絲
(一定要切的很細）
加一點孜然籽小茴香或其他香料
（隨便香料都可但奶奶推薦馬芹或孜然子或小茴香）
加一點鹽巴
加一堆細絲紅蘿蔔
（要很細）

把它們混在一個大碗公裡面（塑膠碗最好）
然後用很重的東西把它們壓爆擠爆錘爆
（要讓食材黏著在一起）

然後用毛巾蓋住再用一塊木板放在毛巾上
（木板的大小要在容器裡面 或是其他東西都可以大小但要塞在容器裡面）

再用一塊石頭壓在板子上
或隨便很重的東西都可以

這樣可以讓食材好好的混在一起
然後放在溫暖的房間大概兩三天
直到毛巾上面有泡沫

然後把所有食材都拿出來放到冰箱
這時應該有酸味然後有很多液體
（放到冰箱可以保存很久）

如果你要吃的話
把一點倒入鍋子裡面然後加一點奶油
你可以加一點鹽巴或糖和一點點水
煮到軟軟的就可以吃了

你每次加熱之後冷卻然後再加熱
這個燉菜就會越來越好吃

他想說也不知道自己做了什麼壞事

結果發現那天睡的粗壯女人是個高階警官
她對爺爺一見鍾情想要再見爺爺一面

爺爺嚇爆趕快說自己家裡有事然後逃跑

1) Back away（後退する、取り下げる）

back awayは後ろへ下がることを意味し、特に恐怖から後退りすることを表します。例えば、ハイキング中に突然蛇が現れて後ろへ下がるような状況で使います。その他、計画や提案から手を引いたり、取り下げる意味もあります。

Watch out! Back away. There’s a snake right there.
（危ない！後ろに下がって。そこに蛇がいるよ。）
　
For some reason, he backed away from the deal.
（なぜか、彼は取引から手を引きました。）

2) Uncool（ダサい、格好悪い）

uncoolはnot coolと同じ意味になり、「ダサい」や「格好悪い」を表します。一般的にはnot coolが使われますが、人や状況によってはuncoolが使われることもあります。

Some people think watching anime is uncool, but I don’t think so. I love it.
（アニメを見るのは格好悪いって言う人がいるけど、私はそう思わない。私はアニメが大好き。）

3) Somewhat（少し）
=================================
　
Somewhatは「多少」や「やや」を意味します。意味はa littleと似ており、微妙な程度を表すときに使います。例えば、「私はちょっとびっくりしています」は“I’m somewhat surprised.”と表します。また、今日の会話でクレイが言った“I’m somewhat of a nerd.”は、「私はちょっとオタクです」を意味します。一般的に、somewhatの後には形容詞が来ますが、somewhat ofで表現をする場合は名詞が続きます。
　
＜例文＞
　
The situation is somewhat getting better.
（状況は多少良くなってきています。）
　
The design is somewhat different from what I had in mind.
（デザインは私がイメージしていたものとは若干異なります。）
　
I’m somewhat of a homebody. I like staying at home and watching movies.

4) It’s no big deal（大したことない）
=================================
　
big dealは「大事なこと」や「重大なこと」を意味することから、“It’s no big deal.”は「大したことないよ」や「気にしないで」といった意味になります。問題やミスが起こった時に「大したことじゃないよ」と言ったり、相手から必要以上に感謝されたり謝られた時に「どうってことないよ」と返答するような場面で使います。日常会話では、It’sを省いてシンプルに“No big deal.”と言うのも一般的です。また、“It’s not a big deal.”と表現することもありますが、意味は全く同じです。
　
＜例文＞
　
You don’t have to apologize. It’s no big deal. Don’t worry about it.
（謝らなくていいよ。大したことじゃないから。心配しないで。）
　
You forgot your wallet? No big deal. I’ll get it.
（財布を忘れたの？気にしないで。僕がおごるよ。）

5) Nightmare（悪夢）
=================================
　
nightmareは「悪夢」を意味します。“I had a nightmare last night.”のように、実際に悪い夢を見たことを表す時に使うだけでなく、悪夢のような出来事や経験を表す時にもこの表現を使うことができます。例えば、海外旅行中に立て続けに発生したトラブルを「悪夢のようだった」と表現する時は、“It was a nightmare.”と言います。
　
＜例文＞
　
I had a terrible nightmare last night. I couldn’t go back to sleep.
（昨晩はひどい悪夢を見て、そのまま眠れませんでした。）
　
My business trip to New York was a nightmare. Everything went wrong.

【Ingredients】Makes about 6
250g Bread Flour
4g Salt
3g Dry yeast
160g water
20g Olive Oil

Topping :
Olive Oil
Rock salt
Pizza cheese
Kabocha Squash (Japanese Pumpkin)
Corn
Red bell pepper
Green pepper
Renkon (lotus root)
Japanese Mayonnaise

【Directions】
①Place Bread Flour and Salt in a bowl, and mix to combine.
②Make a well in the center and add the dry yeast.
③Pour the water and Olive Oil.
④Mix until a dough comes together.
⑤Knead for 10 minutes, adding extra flour if required, until smooth and elastic
⑥Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑦Press the dough with your hands to release gas in the dough and deflate.
⑧Divide the dough into 6 pieces and round them.
⑨Rest the dough for 10 minutes at room temperature.
⑩Use either your hands or a rolling pin to work the dough into 3.9"circle.
⑪Cover them with plastic wrap or a wet cloth not to dry.
Let doughrise in warm place until 1.5 times in size (secondary fermentation)

Preheat the oven to 392 °F/200℃.

⑫Use your finger(or Stick) to push in some somewhat deep holes in the surface of the dough.
⑬Brush the entire surface of the dough with Olive Oil.
⑭Please top with whatever you like. I used Rosemary and rock salt this time.
⑮Bake in the oven for 16 minutes and they're done.

【材料】6枚分(10cm)
強力粉 250g
塩 4g
ドライイースト 3g
水　160g
*国産強力粉を使う場合は小さじ1～2を残しておき、生地の状態を
見ながら調整してください。
オリーブオイル 20g

トッピング:
オリーブオイル
岩塩
ピザ用チーズ
かぼちゃ
とうもろこし
赤パプリカ
ピーマン
レンコン
マヨネーズ

【作り方】
①ボウルに強力粉、塩を入れぐるぐる混ぜる。
②真ん中を少しくぼませて、イーストを加える。
③イースト目がけて水とオリーブオイルを加える。
④ある程度生地がまとまるまで混ぜる。
⑤台に取り出して、滑らかになるまで10分間こねる。
最初はべた付く感じでもこねていると徐々にまとまってきます。
⑥丸くして、2倍になるまで暖かい場所に置く。 （一次発酵）
***オーブンの発酵機能を使う場合は35℃30分位。
ここで野菜などを用意しておく。
⑦生地を手で軽く押して、生地のガス抜きをする。
⑧生地を6つに分けて丸める。
⑨乾燥しないように濡れ布巾を被せ、10分間休ませる。
⑩麺棒または手のひらで生地を10cmにまるく成形する。
⑪ラップや濡れ布巾を被せ、1.5倍になるまで暖かい場所に置く。 （二次発酵）
***オーブンの発酵機能を使う場合は35℃20分位。

オーブンを 200℃に予熱スタート。

⑫指（またはスティック）で、生地の表面にやや深い穴をつける。
⑬刷毛でオリーブオイルを全体にぬる。
⑭好きなものをトッピングする。
***今回はかぼちゃ、コーン、パプリカ、レンコン、ピーマン
ピザチーズ、マヨネーズ
***乗せる時は少し押し込むようにすると焼いたときに上から滑り落ちません。
⑮オーブンで16分ほど焼いて完成!

?? 3 hours to the north of Ha Long lies a city called Mong Cai - a border city that is separated from China only by a river less than 500m across. This border is super strange, and really highlights the differences between China and Vietnam. On one side - the Vietnam side - people have access to the internet, including things such as Youtube and Facebook and Google, while just across the river, the majority of people don't even know what Youtube is. And yet they can see each other going about their daily lives. Having lived in Vietnam for the last 2.5 years, as well as studied and lived in China for almost 2 years, I know what life is like from both sides of the border, and this place truly gave me a somewhat surreal feeling as I recalled and compared my life on either side. ?? While exploring Hai Phong for the last few days, I happened to notice one special Chinese restaurant called "大姐水饺“ - Big Sister Dumpings - written in giant Chinese characters. I was somewhat skeptical. I've had a lot of Chinese food in Vietnam, and it's often a big letdown. Still, I wanted to give it a try. Little did I know I'd end up finding the best, most authentic northeastern (东北) Chinese food I've ever had outside of China. Not only that, I got to speak in Mandarin with the staff there - some Vietnamese, some Chinese. They shocked me even more when they switched to English and started talking. This may have been the most linguistically-diverse restaurant I've ever visited in northern Vietnam. A fun one for sure. Hope you enjoy!
