"เปลือกไข่มีสีต่างกัน ไม่ใช่ไข่ปลอมนะ"
ทางบ้านหลังไมค์มาถามเรื่องที่ ซื้อไข่มาแล้วมีสีต่างกัน ทั้งเปลือกไข่ ทั้งไข่แดงข้างใน มันจะเป็นไข่ปลอมหรือเปล่า ... แน่นอนว่า "ไม่ใช่ไข่ปลอม" แต่เป็นเพราะอะไรนั้น ลองอ่านคำอธิบายกันครับ
ทำไมเปลือกไข่ไก่ถึงมีหลายสี ไม่ว่าจะขาว ครีม น้ำตาล (หรือแม้แต่สีฟ้าสีเขียวก็ยังมีเลย) แล้วสีของเปลือกไข่ จะมีผลต่อรสชาติหรือคุณค่าทางอาหารของไข่หรือเปล่า ?
คำตอบคือ สีของเปลือกไข่นั้น มาจากพันธุ์ของแม่ไก่นั่นเอง ไก่พันธุ์ Leghorn มีไข่สีขาว / พันธุ์ Orpington ไข่สีน้ำตาล / พันธุ์ Ameraucana ไข่สีฟ้า / พันธุ์ Olive Egger ซึ่งเป็นลูกผสมระหว่างไก่ที่ให้ไข่สีน้ำตาลกับสีฟ้า ให้ไข่สีเขียวมะกอก ... มีข้อสังเกตว่า ไก่ที่มีติ่งหูเป็นสีขาว จะให้ไข่สีขาวด้วย
ความจริงแล้ว ไข่ไก่นั้น ตั้งแต่แรกเริ่มสร้างขึ้นในตัวของแม่ไก่นั้นจะเป็นสีขาว แล้วพวกรงควัตถุสีต่างๆ จะเข้าไปสะสมในเปลือกไข่ระหว่างที่ไข่เคลื่อนที่ไปตามท่อนำไข่ ซึ่งใช้เวลาประมาณ 20 ชั่วโมงกว่าที่เปลือกไข่จะแข็งตัวสมบูรณ์
ไก่พันธุ์ Ameraucana ที่มีไข่สีฟ้านั้น มีรงควัตถุชื่อ oocyanin ซึ่งสามารถซึมเข้าไปในเปลือกไข่ได้ด้วย จึงทำให้ทั้งเปลือกไข่และเนื้อไข่ภายในกลายเป็นสีฟ้า
ส่วนพวกไก่ที่วางไข่สีน้ำตาล จะมีรงควัตถุชื่อ protoporphyrin มาแทรกในเปลือกไข่ แต่ไม่สามารถซึมเข้าไปจนถึงในเนื้อไข่ได้ ทำให้ไข่ขาวก็ยังเป็นลักษณะใสไม่มีสีตามปรกติ
และไก่ Olive Egger ที่มีไข่เป็นสีเขียวนั้น ก็เพราะว่ามีเปลือกไข่สีฟ้าที่ถูกเคลือบทับด้วยสีน้ำตาลอีกที ทำให้สีโดยรวมแล้วดูคล้ายสีเขียวมะกอก
ที่สำคัญ แม้ว่าไข่ไก่จะมีสีเปลือกแตกต่างกันไป แต่องค์ประกอบทางโภชนาการของเนื้อไข่ที่อยู่ด้านในนั้น แทบจะไม่แตกต่างอะไรกัน จึงกินได้หมดทุกสีนะครับ

The answer is that the color of the egg shell is from the breed of hens. Leghorn has white eggs / Orpington. Brown Egg / Ameraucana Blue Egg / Olive Egger breed, which is a hybrid between chicken that gives brown and blue eggs for olive green eggs. ... notice that chicken with white earlobe will give white eggs too

Ameraucana chicken with blue eggs has an object named oocyanin which can absorb into egg shell, so it makes both egg shell and egg meat inside become blue.
As for chicken who lay brown eggs, there is an object named protoporphyrin inserted in the egg shell, but can't absorb until the egg texture. It makes the egg whites are still clear, no normal color.
And Olive Egger chicken with green eggs is because there is a blue egg shell that has been coated in brown. It makes the overall color look like olive green.
Most importantly, even though chicken eggs have different colors, the nutritional elements of meat, eggs inside are barely different, so we can eat all colors.
