    🌄 Cara Membuat Ayam Bakar Madu Sabah 🌄
    1️⃣ Tumbukkan Bawang Putih & Halia sehingga lumat
    2️⃣ Cucuk-cucuk sedikit ke Ayam untuk pastikan perapan masuk dalam isi Ayam.
    3️⃣ Letakkan bahan-bahan yang ditumbuk serta Sos Tiram & Kicap Lemak Manis Rasaku, Sos Cili, Madu dan Serbuk Cili
    4️⃣ Jangan lupa letakkan Gula & Garam dan juga Lada Hitam
    5️⃣ Tumbukkan Batang Serai dan gaulkan sekali kesemua bahan di dalam mangkuk. Jangan lupa letak Pewarna okay!

    Mỳ Ý tự làm sốt nhum sọ Nha Trang
    Nguyên liệu:
    - Nhum sọ Nha Trang, 20 con nhum, làm sạch, lấy thịt. 15 con nấu sốt, 5 con trang trí.
    - Hành tím băm 2 muỗng súp
    - Gừng băm 1 muỗng súp
    - Tỏi 3 muỗng súp
    - 2 trái ớt sừng
    - 1 muỗng cà phê thyme
    - 2 muỗng cà phê oregano
    - 1 muỗng cà phê ớt bột
    - 1 muỗng súp ớt paprika
    - Vang trắng 150 ml
    - Nước dùng gà 250 ml
    - Kem tươi 1r0 ml
    - Bơ lạt 100 gr
    - Muối tiêu nêm nếm theo khẩu vị.

    Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.

    Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.

    To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

    How to make Oven-Baked Smoked BBQ Ribs

    ✎ Ingredients
    pork ribs 950g

    ☞ for dry marinades
    coarse salt 70g
    black pepper 15g
    ground white pepper 4g
    cayenne pepper 2g
    granulated sugar 3.5g
    garlic powder 1.5g
    onion powder 1.5g

    ☞ for BBQ sauce
    chipotle peppers in adobo 7g
    regular soy sauce 32g
    tomato paste 70g
    ketchup 20g
    chicken broth 30g
    apple cider vinegar 35g
    dark beer 45g
    fresh orange juice 87g
    minced garlic 10g
    chili powder 1.5g
    onion powder 5g
    salt 3g
    black pepper 2.5g
    light brown sugar 130g

    1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
    2. Line a baking tray with foil or parchment paper.
    3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
    4. Using a sharp knife to take off  excess fat. Just keep a little fat.
    5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
    6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
    7. Cover with another foil, shiny side out.
    8. Preheat the oven to 135C, bake for 2.5~3 hours.
    9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.  
    10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
    11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until  ribs have been caramelized.
    12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

    嗨!大家好,我是 Cassandre, 今天的『食不相瞞』要來複刻一款知名美式餐廳 Chili’s 的招牌料理,軟嫩多汁、吮指回味的 BBQ 燒烤美食:美式煙燻豬肋排。

    在家裡用烤箱做出像美式餐廳那樣軟嫩多汁的 BBQ 豬肋排,一直都是我們心願,今年終於實現了(淚)。美式豬肋排美味的關鍵就在於醃料與燒烤醬,當然選擇一副肥瘦均勻的豬肋排也是重要的。

    這次的食譜,我們複刻了知名美式餐廳 Chili’s 行政主廚分享的食譜,但因為有少部份食材買不到,所以做了小小的調整,但出來的味道果真令人驚艷,根本就是餐廳等級的風味,經過長時間的低溫慢烤,豬肋排已變得超級軟嫩,輕輕一掰就骨肉分離了;原本還擔心紅色的醬汁會辣口,結果是恰到好處的偏甜滋味。

    我們有小小調查過,不同食譜的美式豬肋排燒烤醬,用到的食材都很多,如果你也想要體驗在家端出餐廳等級的美味,那麼儘可能按圖索驥絕對值得;或者也可以買現成的BBQ燒烤醬,再加一點香料做成偷吃步的版本 (影片後面的講評會分享做法) 也完全OK哦!對了,做好的調味香料跟燒烤醬不會一次用完,可以冷藏保存並應用於其它料理,做出名店風的BBQ美味,希望大家會喜歡這支影片。

    美式煙燻豬肋排 怎麼作呢?
    下面是 美式煙燻豬肋排 的做法與食譜:

    ✎ 材料 Ingredients

    豬肋排 950g, 份量可自由調整

    ☞ 乾醃料(調味香料)
    粗鹽 70g
    黑胡椒 15g
    白胡椒粉 4g
    卡宴辣椒粉 2g, 可用一般辣椒粉
    細砂糖 3.5g
    大蒜粉 1.5g
    洋蔥粉 1.5g

    ☞ 燒烤醬
    墨西哥煙煄辣椒 7g, 可用煙燻紅椒粉或少量煙燻汁(liquid smoke)代替
    醬油 32g
    番茄糊 70g
    番茄醬 20g
    雞高湯 30g
    蘋果醋 35g
    黑啤酒 45g
    柳橙原汁 87g
    大蒜末 10g
    辣椒粉 1.5g
    洋蔥粉 5g
    鹽 3g
    黑胡椒 2.5g
    三溫糖或黃砂糖 130g

    ✎ 做法 Instructions

    1. 將粗鹽、黑胡椒、白胡椒, 卡宴辣椒粉、白砂糖、大蒜粉、洋蔥粉混勻
    2. 烤盤上舖上錫箔紙或烘焙紙
    3. 把洗淨的豬肋排放在烤盤上,用廚房紙巾把兩面的水份擦乾
    4. 用一把鋒利的刀去除多餘的脂肪,只留下一點點脂肪
    5. 將肋排的骨頭面的一層筋膜撕掉,這樣吃起來口感會比較好
    6. 接著把骨面朝下,肉面朝上,均勻地灑上一大匙的調味香料,抹勻
    7. 用另一張錫箔紙覆蓋上,亮面朝外,略鬆的把肋排包裏住
    8. 烤箱預熱135C, 烘烤 2.5~3 小時,如果肋排太大或太長,可以增加時間,總之要烤到刀子可以輕易插入的柔軟度
    9. 在等待豬肋排烘烤的時間來製作醬汁,把所有材料都加在一起,用均質機或果汁機攪打成細緻的質地,再倒入小鍋中用中小火熬煮15-20分鐘,直到顏色變深、質地略稠即完成
    10. 肋排烤好後轉移到有網架的烤盤上,然後兩面都均勻刷上特製的煙燻燒烤醬,先讓肋排骨面朝上
    11. 烤箱預熱 220C, 烘烤 5-6 分鐘,接著把肋排翻成肉面朝上,再刷上一層醬汁,回到烤箱繼續用 220C 烘烤 8-10 分鐘,或直到表面焦糖化
    12. 完成的豬肋排可以視需要再刷上一點燒烤醬,再搭配一些配菜就可以好好享用了
