🔸 Grifalco Grifalco Aglianico del Vulture DOC 2018🔸 . Vineyards (25-40 years) of Vulture area are located in the municipality of Venosa, Maschito and Forenza. Altitue at around 450-550m. Fermentation in stainless steel, maceration for about 10 days, aging in second-passage French barriques and tonneaux in which the malolactic fermentation takes place. . So much more intense than the Gricos, both on notes and on palate. Inky and earthy/herbal on the nose, also a hint of pleasant floral and cherry aroma. Tannin is quite vivid. Just had an exquisite dining experience from Chef Darrel Woon at this newly opened restaurant at Jewel. You won't find any other restaurants like this at Jewel, so make this a dining destination - come Jewel specially for a meal here, and I'm quite sure you won't be disappointed. 🔸 These are three of the starters we tried, and love. First, Prociutto di san daniele aged for 24 months. They are using San Daniele ham PDO which is still only and exclusively made within the city limits of the Municipality of San Daniele del Friuli, in the province of Udine. The meaty flavour of the prosciutto with a pleasant edge of saltiness is balanced by a herbaceous gremolata with chopped parsley, lemon zest, garlic, and sprinkled with dehydrated tomato powder. 🔸 The second starter we had is Bouchot mussels, one of my favourite mussels that comes from France, and because they are protected by AOP, they have to originate from the bay of Mont Saint-Michel to carry that name. Instead of a more usual white wine broth, Chef Darrel made his own dashi broth using kombu and bonito flakes he made in house by shaving them down from katsuobushi. 🔸 The third starter is Hamachi crudo, very much like Nikkei cuisine, with the use of finger lime which lends punchy acidity to the otherwise clean tasting hamachi. The broth was impactful as well, and this was achieved not by the usual Peruvian ingredients, but by Szechuan peppercorns, as well as zest from Amalfi lemons which rounds up the dish with its pleasant acidity that's still naturally sweet. Overall, you get a creamy buttermilk broth that's still light and fragrant. 🔸 As you can now see, dishes are technical, but they're also well conceptualized to ensure the flavours harmonize. It's what you get at many high end restaurants, but at prices that are more affordable.

When homes are demolished, Palestinians are forced to pay the Occupation authorities thousands of dollars in fees. Literally, paying for their dispossession.   Atop the Bustan's rubble, a park will be built. But it isn't just any park. The Occupation authorities often declare a piece of land as a “national park,” if "it contains archaeological discoveries." The Bustan does not meet this criterion. So why are "national parks" built in reality? •    To forcibly expel Palestinian populations and bolster Settler presence. •   To form “natural" borders around Palestinian communities, suffocating them and preventing natural community growth. •    To promote colonial tourism. The park will be called "King's Garden" based on the notion that Bustan belonged in King David's biblical kingdom, Ir David. To translate: the Occupation authorities are citing ancient biblical stories, without archaeological evidence, as sufficient reason to demolish hundreds of Palestinian homes. (Even if there were evidence, it is no excuse to displace people). Whenever a Palestinian home in occupied Jerusalem has a demolition order, it’s usually under the pretext that it was built “without authorization.” 93% of building permit applications submitted by Palestinians to the Israeli occupation municipality are rejected. Zionists will claim that Palestinian homes are demolished because they are built "illegally." That is a deceiving argument. Rejecting most Palestinian building permits is only one colonial policy out of many.
