Morel Mushroom, Abalone, radish mandu (Korean dumpling) stuffed with short rib, and beef consommé was Chef Mingoo’s interpretation of surf and turf. The beef broth was so pure and clean, and I never thought it could match with abalone as in other cultures it is often matched with kombu or seafood (like in Japan) or chicken and / or pork (like in Chinese cuisine). This surf and turf pairing worked surprisingly well, with the morel adding the autumn flavor. __ Pic 6-7 was Nodoguro (Black throat sea perch) “mandu”, onion jangajji sauce, song-i mushroom (Korean matsutake). It was not really a mandu dumpling but with the fish wrapped around vegetables.
