This is possibly one of my favourite Italian desserts. I remember having this in Florence and I fell in love. The silkyness and richness of the ricotta is slightly solidified using gelatine or in this recipe I use agar-agar but it has a soft and custard like middle. Slightly sweetened with fresh nectarines, honey and a drizzle of extra virgin olive oil really makes this dish truly Italian.
