Last Friday’s lunch at @blueskiescottonclouds’ home felt like we had hopped over the border to Penang. Not only did we get to indulge in fantastic #PenangCharKwayTeow potent with “wok hei”, fried one-plate-at-a-time by our amazing hostess (I should mention she picked up her skills from CKT guru @sk_food_and_travel who’s incredibly exacting in his standards), but also a few lovely food items brought by the other guests. @madam_key whetted appetites with her Jiu Her Cha, a classic Penang dish of braised turnip, cabbage and dried squid that we ate wrapped in lettuce, and also fed us a dessert of Apom Guan (another Penang special of a folded pancake filled with corn and banana). @singaporeliciouz made a wonderful Kueh Bingka which we all attacked with enthusiasm. @uncle_lim_chiak was a little late to the party but was quick to catch up. Don’t think I’ve ever seen two plates of Penang #CharKwayTeow disappear so swiftly 😂. Thank you again for organising the get-together, @blueskiescottonclouds. H O S T E D When you want a relaxed, buzzy vibe but expect to have nothing less than unabashed premium quality produce and ingredients prepared to exacting standards, the Bistro at @culinacomodempsey is the place to make a beeline for. We were spoilt silly by Executive Chef @timmydare with these superb dishes during our recent lunch: 1. Scallop carpaccio with shaved Plantin black truffles and yuzu dressing ($50) - Loved this. The freshness of the seafood coupled with the earthiness of the black truffle was a sublime coupling. 2. Sashimi of Kingfish - A weekly special, the fish came in a Japanese soy dressing with fresh ginger and jalapeño for brightness and a subtle heat. 3. Kaviari smoked salmon with waffle cream on warm waffle ($18) - I really liked how the light fragrance and slightly sweet crunchy base offset the rich fish. 4. Black truffle ravioli with shaved Plantin black truffles and a white wine cream sauce ($50) - Keeping it minimalist and maximalist all at once. Perfect. 5. Market fish baked puff pastry, creamy spinach and leeks ($35) - This was one of my favourites from that meal. Such an impeccable creation of buttery, flaky pastry filled with fresh seafood in a light creamy sauce. A must-try if you love seafood in pastry. 6. Peri-Peri rotisserie lacto chicken with market vegetables of the day (half: $30 / whole: $50) - A departure from the usual roasted chicken (although the one at #CulinaBistro is one of the best I’ve ever had), this one had a generous coating of spices for punch. 7. Porchetta - That audibly crunchy crackling skin with juicy meat within made this an instant winner. 8. Ricotta fritters with lemon curd ($15) - Another magnificently done item. Quite a few people I know have a fetish for the “Dirty Ronin”, a sandwich that has outlasted the cafe it was created at. And why not? Every aspect of it is faultless - the bread (a slightly thicker looking but still very light thing nowadays) is toasted to a crunch, the ratio of the savoury, spicy chorizo to cheese, soft-boiled egg, avocado, crisp lettuce, miso and mayo - exacting. For something with the word “dirty” in its name, it sure is clean and precise about its approach to taste. From the first bite, eyelids flutter and a sense of satisfaction spreads through the body. This pleasurable sensation doesn’t abate until the “Dirty Ronin” is but a memory and perhaps, a few crumbs to dust off.
