    For this episode, we destroyed a DIY 5KG Yoghurt Fruit Parfait! After many requests for a sweet challenge, I decided to do one but with an eye on being healthy. Taking a standard American parfait as inspiration, we upsized ours to a massive 5KG version in our giant cup, filled with a multitude of fruits and fresh yoghurt. We picked the most natural and preservative-free yoghurt we could find, Bulla’s yoghurts, which are made from fresh Australian milk and Australian-grown fruits.

    We used Vanilla, Plain, Mango and Strawberry Bulla yoghurts together with sliced strawberries, blueberries, raspberries, kiwi and bananas, layering them delicately with oatmeal, forming a massive 5KG Yoghurt Fruit Parfait. The result was a beautiful rainbow spectacle.

    I thought the Vanilla flavour was the best, just very slightly sweet with a good note of vanilla - easily enjoyable on its own. The plain yoghurt was rather difficult to eat solo as it was on the sour side (as all plain yoghurts are), but it would work great as a base for you to tweak the flavour to your own liking. The fruit flavours were as expected, if you like strawberry or mango, you would like those flavours. All the yoghurts were creamy and smooth, and thicker than expected for non-Greek yoghurts. The addition of the fruits and oatmeal really brought the parfait together, adding a good contrast in texture and bursts of sweetness with every bite and layer.

    If I could make this with my poor Chef skills, you easily could too! It is simply prepared and the fruits can be found at any supermarket but you should feel free to tweak the recipe to your own liking.     For this video, we headed back to Neo’s Kitchen to complete a 6KG Ichiran Ramen Challenge! Ichiran Ramen is a popular Fukuoka Ramen chain almost exclusively based in Japan, with limited outlets in Taiwan, USA and Hong Kong. They specialise in Tonkotsu-style Ramen, which is pork-based. As they do not have a physical location in Singapore, we opted for their own Instant Ramen brand that is supposedly very close to the in-store Ichiran Ramen in flavour. For our convenience and to take advantage of their exclusive discount on Ichiran Ramen, we ordered most of our ingredients from Qoo10 and had them delivered to our doorstep.     Here is what we got from Qoo10:

    The Ichiran Ramen box came elegantly designed and packed while the char siew and eggs had straightforward instructions for preparation. After some time in the kitchen and a speedy assembly process, we ended up with a massive 6KG bowl of Ichiran Ramen. 10 portions of noodles were piled into our Giant Bowl, which was then filled to the brim with the Tonkotsu broth. 6 sliced eggs and 2 blocks of char siew were gingerly placed on top to round off the dish. The bowl was delicately garnished with spring onions, seaweed and rehydrated fungus. Unfortunately, we had difficulty cutting the char siew, so we opted to leave 1 intact.

    Flavour-wise, it is probably one of the best Instant noodles I have ever had. It was rich with the deep and intense pork flavour you come to expect from Tonkotsu Ramen from restaurants. The noodles had a clean flavour without any taste of preservatives and retained their springy texture even after sitting in the broth for some time. It also came with a topping of chilli powder, which adds a strong spicy kick for those who enjoy it. The eggs were well-marinated and gooey in the middle. The char siew was moist and tender with the signature savoury pork flavour of good char siew.

    All in all, it was an enjoyable challenge because it was homemade, delicious and convenient thanks to Qoo10. We tend to find ourselves needing instant noodles eventually, usually in the dead of the night or as comfort food, and you would be hard-pressed to find any better than this Instant Ichiran Ramen.     For this episode, we're finally back outdoors at Overrice, a Middle Eastern-style eatery located in Hotel Boss. They prepared a massive yet beautifully arranged version of their regular serving on my giant plate, comprising of a bed of rice, all three of their mains, some sliced vegetables, pita bread and two delicately dotted/squeezed sauces.

    Inspired by Halal Guys in the States, Overrice was created by four friends with a mutual passion for good food who wanted to emulate it here in Singapore, but with a local twist. Even after much prodding, the owners refused to give up most of what was used in their dishes, showing a true commitment to their craft. Their spiced yellow rice is made with the more premium basmati rice and coloured with turmeric, giving it a pleasing aroma and look. Their chicken is marinated for over 10 hours and with 8 different spices, resulting in an exceedingly tender and moist chicken which was packed with flavour. For the pulled beef, it was equally as tender and flavourful as the chicken, but also had a spicy kick to it that would be sure to please spice-loving Singaporeans. The falafel came as expected, small, crispy balls of spiced chickpea that had a mild but pleasant taste, perfect for vegetarians. They also gave some chopped up lettuce and tomatoes, and fluffy triangles of pita bread that rounded off the meal perfectly.

    The real stars of the show were the sauces. The white sauce was heavily addictive and complemented, if not elevated, each dish perfectly. It is made with yoghurt, sour cream, garlic, cumin, lemon and other unidentified spices from what I could gather. Even for the challenge, I found myself drowning the platter in the sauce. The red sauce was of course, too spicy for my taste, but for those who love some heat, it would be a dream come true. It is made with harissa, among other chillies, and when paired with the cooling white sauce, it became a true flavour explosion.

    The right way to eat this would be to mix it all up together, something reminescent of eating a Nasi Lemak. Their usual offerings would be a smaller version of what I had, but with your choice of one main (Priced from $7.90 to $8.90). I thoroughly enjoyed this place and would encourage all my viewers to give it a shot, as the food is good, the owners are exceptionally friendly and they offer delivery.
