    {天殺的涮嘴之偽起司羽衣甘籃脆片+小食譜} 我應該算是第一波就趕上羽衣甘籃脆片(kale chips)浪潮的煮婦,那時候,羽衣甘籃堪稱美國綠葉蔬菜群裡新崛起的閃亮星,甫登場就有萬菜莫敵之姿,紅到隨便谷歌或烹飪雜誌食譜瞥一眼,都是羽衣甘籃在刷存在感,舉凡各種燉煮炒烤生食打汁,不管四平八穩或另闢蹊徑的烹調點子一應俱全。

    而羽衣甘籃脆片是其中讓我一見,就立馬衝到市場抓一把回家食驗的新鮮提案,不否認很大成份是沖著chips這個字眼奔去的,儘管心情上頗為激動,但理智上,我力求平常心看待,嘿!畢竟是綠色蔬菜,就算沾上chips的邊,恐怕也還是離萬惡美味薯片很遙遠。結果證實,我錯了!這羽衣甘籃脆片有兩把刷子,吃到第一片,眼睛為之一亮,到第三片就征服了我的味蕾,之後就停不下來,像土石流一樣整個淪陷。如果非要沾親帶故,比起薯片,kale chips似乎更神似海苔片,咔滋酥脆中帶著微苦,不容易一見鍾情,但絕對有日久生情的後座魅力。

    烹調筆記:此物作法簡單,但要登峰造極有絕竅,一是洗淨後撕成小片,務必瀝乾所有水份,才能烤得酥酥酥。二則無關廚藝,全看烤箱給不給力,以前舊居烤箱一般,再怎麼努力也沒法子出類拔萃,搬到新家,繼承一外型看來很唬人,儀表板上功能也是列得煞有介事的六火爐台雙烤箱廚具,沒想到只是外強中乾,如今已屆十五高齡,各種功能運作都顯得力不從心,樣樣烤不好的無敵鐵金剛大傢伙,唯有用對流烘烤(Pure Convection )此按鍵來整治甘籃脆片,意料之外的稱職,把羽衣甘籃硬是烤出一個涮嘴新高度。可以想見,Kale Chips從此在我家餐桌占穩了一席之地。

    作法如下:以150C預熱烤箱,有對流選項尤佳,羽衣甘籃洗淨,去梗撕成適口大小片狀,不管用什麼方法,瀝乾就是,有沙拉甩水器(salad spinner)最適派上用場,淋橄欖油,撒上偽起司,即所謂營養酵母(nutritional yeast)或正港帕馬起司,不扭捏歡快撒幾手,混拌均勻,平舖於墊上烤紙的烤盤,片與片之間儘量不重疊太多,才能烤得透,烤個十分鐘,取出稍翻動,再烤個三五分鐘,直到酥脆為止。即可盛盤搶食。

    记得留守Part 2,会用两台来做发酵馒头和试看气炸功能。

    小叮咛:Panasonic Cubie有分三个容量,分别是15L、20L、30L。用30L和小方比较的话会比较直观,但我只有15L的小白,所以只能根据我的用后感比较这两款。

    这不是业配,两台都是真金白银买回来的~

    180°C(356F)50 minutes
    Cut the surface of the cake, after 20 minutes.

    This cake is low in calories and fat. Of course, you can make it with zero-calorie sugar.

    70g unsalted butter * vegetable oil is also ok
    70g milk
    100g flour
    15g cocoa powder
    6 egg yolks

    10g cornstarch or potato starch
    25g chocolate chips
    Bake in the oven with hot water at 150°C for 65-70 minutes
