Delamotte now, along with its sister winery, Champagne Salon, is run by Didier Depond. ​ ​ ​ What I have in my glass is Champagne Delamotte Blanc de Blancs Brut, made with 100% Chardonnay exclusive from Grand Cru vineyards in the Côte des Blancs and went through 4-5 years lees aging before releasing to the market. This Champagne displays delicate yellow blossom, Meyer lemon, tart yellow peach and apple, toasted walnut, and mushroom on the nose. The chalkiness, salinity, umami and earthiness linger on the palate. Bright acidity with mousse like bubbles and great finish. This is a textbook Blanc de Blancs Champagne should taste like. SIPHON BREW || Being a coffee lover, I realized that we have been exploring different types of coffee beans, while we actively search for that flavours that suits our tastebuds but we don’t really bother about the brewing method and techniques because you know, “At the end of the day, it’s still coffee”. If you do think it that way, then you’re wrong. With every brewing method and techniques, there will be a distinct difference, perhaps in a vague way but sometimes it can be the prominent flavours that were extracted and many more. Siphon actually works like a vacuum. Coffee is brewed using two chambers with vapor pressure and gravity, also known as vac pot, siphon or syphon coffee maker, which was invented by Loeff of Berlin in the 1830s. Still remembered the very first time I saw a siphon brew in real life, back in 2018, and I was in awe. 😍 It looked so pretty and fancy, and I was just mesmerized by it although I didn’t know what’s going on. @reginewai, the siphonist has successfully opened me up to a new world of brewed coffee. Siphon brewed coffee can be quite pricy but you’ll understand why, if you learn about the entire process altogether.
