    鱔片肉丸粥

    材料:
    白鱔1段
    白米半嘜
    薑1舊(一半切絲,一半切碎)
    免治豬肉300克

    處理:
    1. 白米,清水沖洗乾淨。
    2. 大火在煲內煲滾1升水。
    3. 水滾後,加入白米。
    4. 再次滾起,轉慢火,大約煲15分鐘。
    5. 白鱔,用粗鹽1茶匙乸2分鐘,搣去脂肪及內臟,清水沖洗乾淨,擎乾水,用廚紙索乾。
    6. 小心切去魚骨,然後切粗條。
    7. 豬肉調味:
    a. 薑碎少許
    b. 胡椒粉少許
    c. 雞粉半茶匙
    d. 生粉1茶匙
    e. 糖半茶匙
    f. 生抽半茶匙
    g. 油1茶匙
    撈勻。
    8. 鱔,用少許鹽醃一醃。

    烹調:
    1. 粥已煲了15分鐘,轉大火。
    2. 加入滾水調校至適合濃度。
    3. 放豬肉丸落粥。
    4. 如果覺得粥稠,可加入滾水。
    5. 加入鱔。
    6. 粥已滾起,轉慢火,冚蓋,煲2分鐘,加入薑絲,再滾起。
    7. 完成,可享用。

    Steps:
    1. Porridge has been cooked for 15 minutes, turn to high flame.
    2. Add boiled~up water into porridge to adjust to a suitable thickness.
    3. Put meatball into porridge.
    4. Add water into porridge if you feel it is too thick.
    5. Put eel.
    6. Porridge has been boiled up, turn to low flame. Cover up the pot and cook for 2 minutes. Put shredded ginger, wait for boiling up again.
    7. Complete. Serve.

    材料:

    免治豬肉半斤

    處理:
    1. 大火在鑊中煲滾1鑊水。
    2. 放鴨腳煮5分鐘去污漬。
    3. 粉絲,清水浸軟。
    4. 豬肉調味:
    a. 生粉1茶匙
    b. 油1茶匙
    c. 糖半茶匙
    d. 蠔油1茶匙
    e. 胡椒粉少許
    攪勻。
    5. 預備芡汁:
    a. 蠔油1湯匙
    b. 老抽半茶匙
    c. 糖半茶匙
    d. 水400毫升
    攪勻。
    6. 鴨腳已烚了5分鐘,倒去水分,輕手用清水洗乾淨,擎乾水,用廚紙索乾。
    7. 預備生粉2湯匙。
    8. 揸住鴨腳。
    9. 塗少量生粉在鴨腳內。
    10. 釀免治豬肉在鴨腳內,壓實。
    11. 芫荽,切碎,辣椒仔,切粒。

    烹調:
    1. 大火在鑊中燒熱油1湯匙。
    2. 放鴨腳,豬肉面向下。可加入少量油。
    3. 豬肉已煎至金黃色,轉慢火,反轉另一面。
    4. 轉大火,加入芡汁,大火炆5分鐘。
    5. 已炆了5分鐘,加入粉絲,煮滾及煮至收汁。
    6. 完成,上碟,加入芫荽碎和辣椒粒,可享用。

    7. Prepare tapioca starch 2 tbsp.
    8. Hold the duck's foot.
    9. Put little tapioca starch on duck's foot.
    10. Stuff minced pork in it, press well.
    11. Coriander, chop well. Chili, get it diced.

    Steps:
    1. Heat up oil 1 tbsp at high flame in wok.
    2. Put ducks' feet, pork faces down. Add little oil.
    3. Pork has been fried into golden yellow. Turn to low flame. Flip over the ducks' feet.
    4. Turn to high flame. Put the sauce. Braise at high flame for 5 minutes.
    5. Have been braised for 5 minutes, put vermicelli, wait for boiling up and braise until the sauce becomes thick.
