    也千萬別用摸洋蔥的手來抹眼淚,否則強效持續到天明。

    本週料理 中東香料雞胸肉配布格麥
    Pan Fried Zahtar Chicken Breast
    With Balsamic Bulgur Wheat and Coriander

    收到[Hello Fresh]外掛包當天便心血來潮嘗試新食材——Bulgur Wheat 布格麥,一種乾燥後的碾碎小麥,比米飯再小一些卻扎實有飽足感。在它寄來的三道料理包中,找到這個食譜所對應的紙袋,裡面是會用到的調味料及食材。跟著圖片指示將洋蔥和甜椒切成條狀及塊狀,放到鍋裡加入蒜末炒香,接著放入水及高湯粉,煮沸後加入和庫斯庫斯(couscous)酷似的布格麥,攪拌後悶12-15分鐘即可上桌。同時間另外將雞胸肉表面煎至金黃,撒入含有乾燥百里香、奧樂岡葉和乾燥鹽膚木組成的中東香料 Zahtar(也稱Za'atar )後送進烤箱烤 15分鐘,如此清爽的料理20分鐘內就能搞定!

    不過,如此順遂的文字敘述,以及這理想高效率食譜,我卻被第一道步驟——切洋蔥,給耽誤了人生。切洋蔥時一把鼻涕一把眼淚,視線模糊造成食指意外的經驗不忍重述,請記得往後切洋蔥要慢慢切、眼淚流乾了再切,並且先洗摸洋蔥的手再來擦鼻涕和眼淚。

    結論:想要通鼻洗眼睛的時候就來切洋蔥。

    Ingredients:

    MEATBALLS:
    1 1/2 pounds of ground beef and pork mixed (ground lamb is amazing if you want to take it to the next level--Tim doesn't like lamb)
    2 small onions, chopped
    3 cloves garlic, minced
    1-2 tbsp Za'atar
    1 handful each of parsley and mint, chopped
    2 eggs
    1/4 cup breadcrumbs
    Salt and Pepper (about 2 good pinches of salt, and 5-6 grinds of fresh pepper--remember to cook, taste and adjust)

    SAUCE:
    2 swirls of olive oil
    1 medium onion and 1 garlic glove, chopped small
    1/2 tsp cinnamon
    1/2 large can of good quality tomatoes (1 small can)
    1/4 cup good quality green olives
    zest of 1 lemon

    Cous Cous
    1 cup cous cous (I like whole wheat)
    1 cup stock or water (boiling)
    Pinch salt
    Zest and juice of 1/2 lemon
    handful of chopped dill
    feta and pinch of saffron (optional)

    SALAD:
    3 roma tomatoes, cubed
    3 Lebanese cucumbers, cubed (or 1 English cucumber)
    1/2 small onion, chopped small
    1 handful each of parsley and mint, chopped small
    1 1/2 tbsp Sumac
    juice of 1/2 lemon
    3-4 swirls of olive oil
    salt and pepper (very important to season the salad for MAX flavor)
