Braised Pork Rice (Lu Rou Fan) / All-in-One Edition
① Pour water in pan, add soy sauce 2 tbsp, sake 1 tbsp, mirin 1 tbsp, chunks of onion, carrot, scallion, garlic, bring to a boil. Add ground pork and pork belly, bring to a boil, then turn to medium-low, cook for 40 min
② Top the braised pork on fluffy steamed rice, serve with braised egg and pickled daikon

- Tofu and century egg
Lu rou fan (braised pork rice) is a popular and basic dish found around Taiwan. The recipes is straightforward, typical price is around NT$50 (US$1.5) or less
Now comes the difficult part, there are variants using different portion (ground pork, pork belly with different cut) and different name:
a. Braised pork rice (lu rou fan, 滷肉飯)
b. Stewed pork rice (kuang rou fan, 爌肉飯)
c. Minced pork rice (rou zao fan, 肉燥飯)
Taiwanese absolutely has no consensus on which is which
To simply the issue, I make this “all-in-one” edition, just eat it up and nothing to worry 😁

「台灣豚三寶丼」
① 滷汁用醬油、味淋、酒,加上洋蔥、紅蘿蔔、蔥、大蒜 (沒使用八角、茴香),用這個來煮豬絞肉、三層肉 (一半切片/一半切丁)、魯蛋
② 滷肉放到飯上面,搭配滷蛋、醃蘿蔔
小菜:皮蛋豆腐、嫩煎台灣蘆筍
飲料:金牌台啤
有些爌肉飯會用更大塊的三層肉,那個肥肉太多了我投降,我這碗意思一下,用幾片三層肉鋪平讓他看起來很多。滷汁是較淡的蔬菜高湯底,已經有味淋就不用放糖。調味沒很鹹,肉給他放好放滿,吃到爽!😁
