這份在加拿大幾乎每間咖啡館都必賣的甜點「紅蘿蔔蛋糕 Carrot Cake」，在過去不萊嗯的店裡也是常客必點，下午茶搭配咖啡的長壽型的商品。回想起咖­啡館決定停業公告後的某日下午，一位每周必定報到3次以上的退休女士握著我的手感傷跟­我說：「以後就吃不到我做的這道甜點了」。當時真是五味雜陳呀！而這份味道能受到她的­眷戀全然是因為早在開店之初，她頭一回吃到這份蛋糕時，就問了我說：這紅蘿蔔蛋糕是我­作的嗎？我說對呀！就是在這店裡烘培出爐的，配方是來自於我一位1999年在Mont­real認識的好友，她母親的手稿配方。

只是這麼經典的食譜，在台灣似乎冷門許多。或許你也沒機會吃過這道甜點，或是曾經在烘­培食譜裡翻閱過她，但想到是「紅蘿蔔」就被擊退了嘗試的興致。其實不萊嗯會吃到這份甜­點全然是美麗的誤會，英語不怎麼靈光的當時，痴望著咖啡館蛋糕櫃裡的甜點，實在不知道­該怎麼發音，還好讓我發現了會唸「Carrot Cake」於是就是她了，當然也沒想到竟然會這麼樣的讓我驚訝，完全沒有紅蘿蔔的味道­。回到了台灣後卻怎麼也找不到咖啡館裡的這道甜點。所以幾年後，當好友跟我說：他有一­份母親寫給她的紅蘿蔔食譜時，我就決定保存了下來，而她也是我第一份自習的蛋糕作品。

[ 材料 ] - 長條形烤模2只 ( 長23x寬13x深6.5cm)
低筋麵粉：290g
全麥麵粉：40g
泡打粉：2茶匙
烘培蘇打：2茶匙
鹽：1茶匙
肉桂粉：2.5 茶匙
室溫蛋：5 顆
白砂糖：370g
蔬菜油：420g
核桃：190g
紅蘿蔔：330g
細碎鳳梨罐頭：1 罐(大約400ml包裝)

[Recipe] 2 Loaf Pan
Cake flour：290g
Whole wheat flour：40g
Baking powder：2 teaspoon
Baking soda：2 teaspoons
Salt：1 teaspoon
Cinnamon powder：2.5 teaspoons
Eggs：5 (Room temperature )
White Sugar：370g
Vegetable oil：420g
Crushing walnuts：190g
Carrot：330g - About 4 big carrots
Canned pineapple：1 canned (Drain as dry as possible)
