(Hosted) Situated at the lobby level of the Oasia Sentosa (@stayoasia) is the new Bedrock Origin. Offering a completely different feel from the “man cave” vibe of @bedrocksg Bar & Grill at Pan Pacific Suites on Orchard Road, is the brighter and modern, art-deco-inspired elegant main room and 18-seat Applewood private dining room. For those who want to avoid enclosed spaces, there’s the al fresco and shaded outdoor seating of the greenery-lined Terrace and Verandah to choose between. The evolved menu here complements the restaurant’s proximity to where land meets sea. So besides steaks (of which you can be sure there’s a solid selection to choose from), Bedrock Origin serves an exclusive range of seafood, dry-aged meats including fish (most of which are on display), as well as roasted harvests and plant-based items. To pair with the food, choices are abound with cocktails (Manager @kevinkhoobl served us their “Raspberry Daisy”, a pretty concoction of Ciroc vodka, fresh raspberries and lemon juice), a cellar of fine wines, whiskies from different countries and a curated collection of rare and special spirits by boutique family distillers in remote places. We didn’t have to make any decisions as the team had planned our menu. Have a look at what we had: 1. Bedrock’s freshly-baked puffy bread with roasted garlic cloves and butter (complimentary) - I’m always happy to see this signature. 2. Kingfish Sashimi ($42++) - Plated tastily with puffed brown rice, wasabi and ceviche soy dressing, the thick slices of fish had a wonderful mouthfeel. 3. Grilled Pear and Blue Cheese Salad - A delish mix of sweet fruit, funky-savoury cheese and crunchy walnuts. 4. Aged Barramundi Tail ($88++, good for 2 to 3 pax) - As my friend and host @brianstampe had mentioned, this uncommon cut from sustainable, locally-farmed @kuhlbarra barramundi, can be viewed as the pescatarian version of a Tomahawk steak. Thanks to a touch of chilli, herbs and a squeeze of lemon, it had quite a lot of flavour. 5. The Turbot On The Bone ($68 ++) - My preferred fish of the night. For Father’s Day this year, my dad wanted hearty “zichar” fare, and since I know he also likes #claypotrice a lot, I decided to kill two birds with one stone and order from @geylangclaypotrice, a casual Chinese eatery on Beach Road that offers both. Happy to report that everyone enjoyed the meal a lot. In fact, my dad said he’d like to dine-in there for his birthday in July. Anyway, here’s a look at the items in the spread I got: 1. Claypot Chicken Rice (large: $38.80) - The rice, already mixed in the black sauce and oil dressing, was thoughtfully packed apart from the “liao” (ingredients) so we could choose to combine them or savour them separately. We agreed the boneless pieces of tender chicken, “lap cheong” and salted fish were plentiful and very tastily cooked. 2. French Beans ($11.80) - Stir-fried with minced up dried shrimp, this was a vegetable dish that’s executed on point. 3. Threadfin with Nonya Sauce ($38.80) - Proving a lovely match with the large piece of fish was an appetising gravy that was really fragrant and thick. 4. Salted Egg Softshell Crab ($19.80) - Besides the finger-licking good salted egg paste, we were pleasantly surprised to find the pieces of crustacean traveled well and managed to retain most of their crispiness. 5. Sambal Kangkong ($11.80) - Very decently done with the vegetables boasting a degree of succulent crunch, something I prefer. 6. Beancurd Skin Rolls ($11.80) - Another winner with all of us, the thin sheets of beancurd skin were spread with a delicious filling and despite the travel time, stayed reasonably crisp. 7. Butter Prawns ($19.80) - The medium-sized prawns tasted fresh and were prepared well. 8. Sambal Lala ($18.80) - One of my brother-in-law and god-daughter’s favourites from this meal. 9. Tofu with Crabmeat ($18.80) - The eatery’s version of this ubiquitous #zichar dish did not fall short in anyway. Would not hesitate to re-order.
