你知道嗎？【🇺🇦基輔雞真的來自基輔嗎？基輔雞演說是怎麼回事？】

大家好，我是Mr Holiday。

之前聊了好幾週港澳食物，有讀者留言說可以說說基輔雞為什麼叫基輔雞。感謝讀者提供我們寫作的靈感，當然也讓大家換個口味。

基輔（Київ）是烏克蘭的首都，而基輔雞這道菜雖然在烏克蘭、俄羅斯以及前蘇聯國家可以點的到，但是據說如果你問當地人這道菜的起源，他們會說其實這道菜是法國菜。

在1840年代末，對當時的俄羅斯人來說，美食與文化最好的地方就是法國。所以有錢人不是把自己的廚師送到法國學廚藝，就是直接請一個法國人來俄羅斯當廚師。據說基輔雞這道菜就是由沙皇亞歷山大一世（Алекса́ндр I）的法國廚師Marie-Antoine Carême發明的，雖然他在俄羅斯待的時間不長，但是對當時的上流社會料理帶來了很大的影響。

但是當時這道菜還不是叫基輔雞，而是法文的Côtelette de volaille來稱呼他，這個字直翻其實就是「雞排」的意思。這道菜的作法可以用小牛肉或是用家禽，但是因為雞是比較便宜的動物，所以比較常用雞製作。

而「雞排」後來經過基輔大陸飯店（Continental Hotel in Kiev）改良後與宣傳，漸漸變成為人所知的「基輔雞排」，中文簡稱「基輔雞」。在共產革命之後，社會上也有人認為要替這道菜正名，以去除法國布爾喬亞（bourgeois）的影響，加入無產階級的元素，例如改成「奶油雞排」（chicken cutlet stuffed with butter）。

但是政體易改，要影響人們的飲食習慣也沒那麼容易，就連1940年蘇聯食物產業部出版的《餐飲分配目錄》（Сборник раскладок для предприятий общественного питания）仍繼續用基輔雞這個名詞。

基輔雞除了變成前蘇聯國家餐廳的標準菜色之外，在西歐或是美國的俄羅斯餐廳也會準備這道菜，所以漸漸的為西方國家的民眾所認識。

既然講到基輔雞，那就順道提一下美國老布希（George HW Bush）總統的「基輔雞演說」（Chicken Kiev speech）。1991年蘇聯已經搖搖欲墜，當時的老布希總統為了避免區域動盪，所以比較支持蘇聯領導人戈巴契夫（Горбачёв）的新聯盟條約方案，而非各加盟共和國各自獨立。他當時在烏克蘭基輔的國會發表演說，要烏克蘭不要重蹈南斯拉夫的覆轍，最後國家分崩離析。

但是當時烏克蘭就是努力要離開蘇聯，但老布希卻勸烏克蘭人留在蘇聯參與改革，除了跟當時的局勢不符合之外，也被《紐約時報》批評為軟弱且誤判情勢，稱這個演說為「基輔雞演說」。除了因為演說發生在基輔，加上雞在英文裡面的軟弱的意思，而基輔雞是美國大眾熟悉的蘇聯菜，所以暗諷老布希不敢大膽的支持烏克蘭從蘇聯獨立的態度。

演說三週後，烏克蘭宣布獨立；再過三個月，烏克蘭脫離蘇聯。可見當初老布希的建議跟大趨勢的走向真的背道而馳。

旅孩要來和大家拜年囉，祝大家心想事成、萬事如意、身體健康！新年當然要吃「新豬肉」，雖然今年我在國外，但新豬肉已經在加拿大有賣了 (大統華亞州超市)，所以我還是可以吃到！YEAH！「新豬肉」不論在外相、觸感，還是味道，都可以媲美手打豬肉的嫩滑多汁，但「新豬肉」的熱量和飽和脂肪更低，是很好的代替品呢！

我用「新豬肉」做了三道基本的家常菜 - 豬肉三味，是很懶很簡單的菜式，簡單到我都不好意思分享了 😆 不過，如果你想開始學料理，這會是很好的開始喔！我們一起來學學吧 😎

另外，新一年，「新豬肉」也出了新系列 - 「速鮮即食系列」，很期待回香港試新產品 😋

Lazy Cooking│Omnipork。3 pork dishes
First, New Year greetings to all of you, I wish you dreams come true, good luck and good health! New year starts, we need to try a "new pork" in the new year - Omnipork. Although I am abroad this year, Omnipork is already sold in Canada (T&T Supermarket), so I can still have it! YEAH! "Omnipork" is succulent, tender and juicy in terms of texture and taste. It's just like pork, BUT, it has lower calories and saturated fat, so it is a good substitute!

I used "Omnipork" to make three basic home-cooked dishes, which is very lazy and easy. It's too easy that I feel so embarrassed to share it 😆 But if you want to start cooking, this will be a great start. Let's learn together 😎

Besides, in the new year, "Omnipork" has also launched a new series, Ready Meals Series - Omnieat, I am looking forward to try the new series when I back to Hong Kong 😋

**Text version recipe is as follows

食譜
新豬肉 半包/一包
豆腐卜 (豆泡) 適量
蔥花 (非必要) 隨意
糖，醬油，粟粉 適量

做法
1.新豬肉餅
調味：加入糖、醬油、粟粉、蔥花 (非必要)，攪拌後，放進鍋裡煎，煎到新豬肉顏色稍變即可
2.新豬肉丸
把已調味的新豬肉用手擠出球型，隔水蒸15分鐘
3.新豬肉釀豆腐卜 (豆泡)
把新豬肉丸塞進豆腐卜 (豆泡)裡，隔水蒸15分鐘

Recipe
omnipork half/one pack
bean curd puffs some
diced green onions (optional) some
sugar, soy sauce, corn starch some

Steps
1.Omnipork Meatloaf
Seasoning the Omnipork: add sugar, soy sauce, corn starch, diced spring onions (optional), stir well, put it in a pan and fry, until the color of it slightly changed
2.Omnipork Balls
Squeeze the seasoned Omnipork into ball shape, and steam for 15 minutes
3.Stuffed Bean Curd Puffs
Stuff the Omnipork Balls into bean curd puffs and steam for 15 minutes
