✨Vegan tiramisu macaroons recipe ✨
Ingredients:
For macaroon shells
1 box organic tofu
1/8tsp vanilla extra
1/4tsp cream of tartar
4tbsp caster sugar
5tbsp fine almond meal
5tbsp confectioners sugar
unsweetened cocoa powder
For fillings:
2tbsp vegan cream cheese
2tbsp cocoa butter or coconut oil
2cup confectioners sugar
cocoa powder
soy milk or nondairy milk
coffee powder or coffee liqueur
Directions:
1. Heat tofu up by microwave or just steam in a bowl. There's more water coming out of tofu when it's cooling down. Drain it, and you'll get tofu water about 200ml . Reduce the tofu water to 60 ml over medium heat, and cool to cold.
2.Whip reduced tofu water, cream of tartar and vanilla extra in high speed for 5 minutes. Add caster sugar gradually and whip until hard peaks form.
3. Pour almond meal and confectioners sugar into meringue through a sieve and gently fold it by a spatula as quick as possible until the mixture is incorporate and kind of running. I think which is called macaronnage, you can google the video about this tech. Pour batter into a piping bag and pipe batter onto parchment lined baking sheets.
4.Leave them to dry at room temperature for 1 to 3hours until they are not tacky when you touch their surface.
5. Preheat oven to 180° C, and put the pan on middle rack of the oven. Turn oven to top heat 150° C/ bottom heat 130° C immediately, and bake for 4-5 minutes until the feet growing up. Place the pan inside out and bake for another 5 minutes.
6.Place the pan on the lower rack of the oven. Turn off top heat, and bake by bottom heat for another 5 minutes to dry them. Remove from oven and let the pan come to room temperature before removing any shells.
7. Beat vegan cream cheese and cocoa butter. Add confectioners sugar and other flavor ingredients in your favor. Spoon into a piping bag.
8. Pipe butter cream in the center of each shell, and top with a similar sized shell. Sprinkle unsweetened cocoa powder on macaroons. Place the macarons in the fridge for 24 hours before serving.
