    Hello Fans and Friends!

    We are posting our video meeting back from Dec 15 once again.. but in easier segmented format for easy viewing! I feel it is better to separate it for the sake of clarity and we have especially edited the videos and put subtitles to make it understandable to all our Chinese Friends and Fans! We really have to Thank Vicky and Kuan for this ENORMOUS EFFORT! In the future.. I will hope to receive TOPIC SUGGESTIONS from all the fans to choose from and I can do a shorter video to talk about these topics that you all request and make it easier for you to watch and share time together! I look forward to all your suggestions and I hope you can enjoy our video edited into segments for easy viewing and for you to find when you wish to! Thank you all for tuning in!     Thai Green Papaya salads

    「泰式青木瓜沙律」

    Ingredients:

    Green Papaya..............................................1 Pcs
    Cherry Tomatoes (Halved).........................10 Pcs
    Green Long Beans (Segmented)................2 Stalks
    Dried Shrimps..............................................1.5 Tbsp
    Roasted Peanuts.........................................1.5 Tbsp
    Onion (Finely Sliced)...................................1/4 pcs
    Cooked Preserved Salty Egg.......................1 pcs

    Marinades:

    Thai Red Chilies.........................................2 Pcs
    Garlic..........................................................2 Cloves
    Fresh Lime Juice........................................2 Tbsp
    Fish Sauce..................................................1.5 Tbsp
    Palm Sugar.................................................1 Tbsp
    Tamarind Sauce..........................................2 tsp

    Methods:

    1. Add Thai Red Chilies and Garlic into Mortar and Pestle, keep Pounding until mashed. Add the rest of Marinades and mix well.

    2. Add Cherry Tomatoes, Green Long Beans, Onion and Dried Shrimps in the Mortar and Pestle. Give a few gentle press to those ingredients to release their flavors.

    3.Put them on a nice plate, serve together with Roasted Peanuts and Cooked Preserved Salty Egg.

    Char Kway Teow


    Ingredients:

    Blood Cockles...................................................1/2 Kg
    Flat Rice Noodles.............................................1/2Kg
    Egg Noodles.....................................................150g
    Bean Sprouts....................................................120g
    Fish Cakes........................................................160g
    Chinese Preserved Sausage (Sliced).............1 Pcs
    Chinese Chives (Segmented).........................5 Stalks
    Spring Green Onion(Segmented)...................2 Stalks
    Garlic(Chopped).............................................4 Pcs
    Eggs................................................................2 pcs


    Seasoning:

    Sambal Chili paste......................2 Tbsp
    Dark Soya Sauce........................1.5 Tbsp
    Sweet Dark Soya Sauce..............2.5 Tbsp
    White Pepper Powder.................Few


    Cooking:

    1. Wash the Blood Cockles thoroughly. To take out the meat of Blood Cockles , pour hot water onto it for two to three times.

    2. Add oil in a hot frying pan. Add Garlic, Chinese Preserved Sausage, Bean Sprouts, Flat Rice Noodles, Egg Noodles, Fish Cakes and Seasoning to stir fry.

    3. Add Eggs on the side of the saucepan, stir fry.

    4. Add Blood Cockles, Chinese Chives and Spring Onion. Stir Fry to finish. Enjoy!

    Mulled Wine

    Ingredients A:
    Red Wine ------------------------------------------------ 600 ml
    Fresh Squeezed Orange Jucie --------------- 1.5 pcs
    Fresh Squeezed Lemon Jucie ---------------- 1.5 pcs
    Segmented Orange and Lemon flesh ------ 0.5 pcs each
    Orange and Lemon Zest ------------------------- 0.5 pcs each
    Brown Sugar ------------------------------------------ 0.5 cup
    Star Anise ---------------------------------------------- 2 pcs
    Cinnamon ---------------------------------------------- 2 pcs
    Cloves --------------------------------------------------- 6 pcs
    Cardamon --------------------------------------------- 4 pcs

    Ingredients B:
    Nutmeg -------------------------------------------------- A pinch

    Method:

    1. Crush the Cardamon before use.

    2. Put Ingredients A into a saucepan and cook under medium low heat until it just comes to boil. .

    3. Turn off the heat and add Ingredients B. Put the cover on for 10 minutes to encourage the flavors to infuse.
