Besides meeting owner Chef Bo Bech @ Lou Lou, we were able to have a great chat with 23 year old head chef Mads Schouw Petersen. 23 years old! So young! He is not only skillful and passionate but very humble and friendly. He knows exactly what he is doing yet you can sense his eagerness to know and learn more, to elevate and get to the next level. He also told me his favorite on the menu, the strozzapreti pasta with gorgonzola & black pepper, and sweetbreads. Did you say, sweetbreads? I already want to come back for more before I left the restaurant. _ As a 23 year old and be able to find and know your own passion and work on it is not easy; being able to excel in it is even harder.
