H O S T E D Head Chef @marti.carlos89 has refreshed the menu at @gaigsingapore, so there are now new creations joining old favourites. Flagging off our hosted tasting was his spectacular modern take on Salmorejo, a traditional cold soup from Southern Spain. The classic concoction of raw tomatoes, garlic and bread was transformed into a playful but seriously tasty appetiser with jamón ice-cream, cherry tomato, burrata and fluffy clouds of tomato sponge ($17). I highly recommend it. The second item was inspired by a snack that Gaig’s founder Chef @carlesgaig came up with during his military service days, after discovering that pâté and anchovies make good bedfellows. Chef Marti ran with this idea and produced a duck foie gras terrine with cured anchovies, hazelnut sablé and raspberry coulis ($25.50). I liked it a lot too. Course number three was a sushi-lookalike of Smoked King Ora salmon wrapped in local Chinese spinach and served with wholegrain mustard, avocado sauce, tomato, dill and curls of sweetish Feuille de Brick crisps. In Chef Marti’s hands, the Tortilla de Camarones became a refined version of the original fritter popular in Southern Spain. I enjoyed the thick, crunchy disc he developed as it was bold in crustacean flavour due to the plentiful Sakura ebi used in the batter. Embellished on it were a whole Caridean shrimp and blobs of lemon mayo ($12.50). Since I am a sucker for tongue, the Catalan stew of Veal Tongue Fricandó ($20) was a dish right up my alley. An embodiment of comfort food desired during the cold months, it featured the tenderest pieces of tongue in a velvety rich gravy loaded with trumpet mushrooms and cooked-down vegetables. Tapas repackaged with a dose of fun is essentially what the Bomba de la Barceloneta struck me as. The deepfried squid ink bread-crumbed ball of potato with spicy minced beef was fine but the real star here was the Brava sauce, an aromatic paste consisting of onions, red capsicum, tomato, chilli padi, chilli chipotle and garlic. Then came an item found in every Gaig restaurant worldwide - the traditional Cannelloni stuffed with beef and pork, and smothered in truffle cream sauce. ⬇️Continued in Comments⬇️

Impression • The watery serum was clear and seems to me the sheet was very dripping with serum, with some left in the packet which I've applied along my neck area. • The soothing sensation was legit; I even felt it as I placed the sheet on my palm 😍 • The cellulose sheet was really thin and very easy to smooth out plus it adhered very well onto the skin 👏 Love how the sheet was wide and fitted my facial area nicely 👍 • Quite impressed with the sheet as it doesn't dried out even after 20 minutes! • There's a faint scent to this mask which is good 😊 • After taking off the mask, my skin felt very well-hydrated with my pores appearances seemed minimised, so smooth, soft and plumped but most importantly the soothing effect toned down my redness 😍 • There's a slightly tacky finish but I actually preferred that as I'm going to apply my day moisturiser anyway. . Overall, 5/5. I really am impressed with @drjart_kr sheet masks so yes.
