I am sure most people will assume I was hosted for this one-night-only event but nope. This was me showing my support for two chefs whose food I have enjoyed very much at their respective restaurants for years. And to get sloshed on some beautiful #Spanishwines at the same time. So I guess you could say the collaboration between Chefs @gregabess of @spagosingapore and Chef @jordinoguerapey of @foc_restaurant was a threesome since @bodegasroda joined in on the act 😂. We were fortunate enough to be graced by the presence of #MasterofWine Annette who shared her in-depth knowledge of the ambrosial liquids being poured that evening, although to be honest, all the terminology became a blur to me quite quickly 😅. It’s hard to keep track when you’re plied with a neverending flow of fabulous wines and food. But strangely enough (or maybe that’s to be expected with me), I can recall the food perfectly😆. To start, there were two wonderful breads served with butter and olive oil (every guest got a bottle to take home but I lost mine 😂). Chef Greg’s luxe ceviche with thick pieces of fresh sashimi-grade hamachi was the first course, followed by Chef Jordi’s uni and secreto toast. Then one of my all-time must-haves at Spago, the handmade agnolotti with a seasonal filling of pumpkin, and a cosy blanket of freshly shaved Alba white truffle. Chef Jordi’s Red Prawn paella appeared after that, its chewy squid ink-simmered rice grains a camouflage for the finely minced squid and chicken. The meat course was a lamb by Chef Greg but he remembered I am not fond of it, so he kindly substituted Iberico pork for me instead. It was accompanied by pistachio gremolata (made with orange, pistachio, olive oil and parsley), fennel purée and crispy pork crackling, and was especially good with the wine. Bringing up the rear was the Chocolate Passion dessert by Executive Pastry Chef @chambonpierre of Spago and @cutbywolfgangpucksg. Masak-masak with whisky. ❤️ Got the opportunity to blend our own 200ml whisky with 4 different single malts + 1 grain. Actually, I'm so bad at this lol. I should just stick to drinking this stuff.
