Tofu pudding (豆花 Dou Hua) is my favourite Taiwanese snack, and I miss it ever so much in London. Since I learned how to make amazing homemade soy milk (the recipe is here: www.youtube.com/watch?v=NYXYNJQmxxY&t=37s), I asked myself why not try to make some 豆花？
It was a huge success! If I had known earlier that making 豆花 was easy, I would not have suffered all these years (or bought the super expensive 豆花 in Chinatown😅 )
豆花 is like a super silky, tender, delicate tofu. In Taiwan, we normally have it as a dessert: the sugar syrup is a must and for toppings, you can choose from traditional choices beans, peanuts, taro ... to bubbles (tapioca pearls), taro balls etc...
You can also replace the syrup with soy milk, but I highly recommend you add some warm ginger syrup. It will definitely warm you up in winter!
豆花是我最喜歡的甜點之一，簡單樸實冬夏皆宜。我最喜歡的豆花店是師大附近的鎮江號，跟小時候常駐巷口的一位豆花伯做的豆花（可惜豆花伯已仙逝QQ)
原本從沒想過我會自己做豆花，但某次在亞超瞄到熟石膏粉之後，就熊熊燃起了豆花魂。抱著應該會失敗的心情戰戰兢兢的做了人生第一鍋的豆花，成品卻是成功到差點抱著鍋子痛哭。
趁記憶猶新趕忙做了第二鍋順便拍成影片，這一大鍋豆花後來被聞豆而來的友人獨自吞完半鍋，由此可證品質還算有保障。
我小時候學到的豆腐作法就是使用熟石膏粉，但網路上對石膏粉的評價不一。我個人覺得熟石膏粉做的豆花口感、味道跟洋菜或吉利丁版的是完全不同層次，完全就是記憶中軟軟嫩嫩豆味飄飄的豆花，再搭上薑汁糖水跟珍珠，真的幸福無比。
🎶 準備食材 Ingredients:
1. 新鮮豆漿 Fresh soy milk 1.5L (please do not use the supermarket brands, they taste 100% different. If you can, make your own. If you do not have time, at least buy fresh soy milk from an Asian shop)
2. 熟石膏粉 Gypsum powder 1.5 Tablespoons (中國城購入 I bought it in Chinatown, but you also can buy it online)
3. 地瓜粉/太白粉 Potato starch / sweet potato starch 1.5 Tablespoons
4. 水 Water 75ml
🎶 糖水跟豆花料 Ingredients for syrup and toppings:
1. 糖 Sugar 適量
2. 水 Water 適量
3. Tapioca pearls and others
🎶 工具 Tools:
- 食品用溫度計 Food thermometer
- 乾淨的布 Clean tea towel
🎶 糖水製作方式：
我糖水是先把糖加入一咪咪的水用火煮到焦糖化，等糖變成胡珀色就沖入少許熱水（這步驟小心燙傷），再稍微熬煮一下之後糖水就完成了。我這次加入一點磨碎的薑泥，變成薑汁糖水，配豆花很讚唷！

西洋鐘錶自明清之際傳入中國後，持續受到宮廷及仕宦工商階層的重視與喜愛，成為近代中西文化交流的重要媒介之一。設計精巧，可供隨身佩戴的懷錶，不僅具有計時功能，也是彰顯身份，可供玩賞收藏的貴重物品。
錶面採白色琺瑯地，羅馬字雙套三針式，錶殼內鑄刻皇冠形圈飾，內有中文「播喴」二字，係瑞士製錶家族Bovet 的中譯廠牌名稱。
此組對錶的琺瑯圖案，以三名模樣可愛的小愛神邱比特為主體，其中一名雙手高舉果實滿盈的花籃，身繞飄帶自天而降，另二名坐臥相依，四周環繞盛開的紅白玫瑰與姿態各異、筆觸生動的多色花卉。👨💻

Pair of "Bovet" pocket watches with pearls and painted enamel, 19th century
Ever since they were brought to China during the Ming and Qing eras, western clocks and watches were held in high esteem and much beloved by the imperial court, government officials, and merchant class, and they eventually became an important medium for cultural interaction between China and the west during the modern era. Pocket watches, with their intricate design and wearable nature, became not only a convenient instrument for telling the time, but also a status symbol and precious collectable.
The watch face is made of white enamel, with two sets of Roman numerals and three hands. On the inner side of the watch case, a circular crown marking can be found, within which the Chinese characters “Bo Wei” spell out the Chinese translation for “Bovet”, the Swiss family of luxury watchmakers.
💘The enamel imagery of this pair of pocket watches centers on three adorable cupids, one of which holds aloft in both hands a floral basket overflowing with fruit, while a sash weaves around his body and drapes from the sky, while the other two sit nestled against each other. The cupids are surrounded by red and white roses in full bloom, as well as other vividly depicted flowers of many forms and hues. Wash techniques are employed to give an air of soft beauty to the clouds and sky in the background, and the rich light and dark contrasts lend a three-dimensional effect to the hair and skin of the cupids, as well as the surrounding flowers and leaves.👨💻

【當捷克議長在台灣遇見赫拉巴爾】
今天蔡英文總統接見捷克韋德齊議長的時候，贈送的禮物除了楊牧著作的捷克文譯本之外，還有赫拉巴爾作品在台灣以《底層的珍珠》為代表的全套中文譯本。
能夠在這個機會讓韋德齊議長率領的捷克代表團知道台灣人對赫拉巴爾作品的喜愛，實在太好了。
赫拉巴爾（Bohumil Hrabal, 1914～1997）被同為捷克出身的名作家米蘭．昆德拉譽為「我們這個時代最了不起的作家」。
赫拉巴爾49歲才出版第一本小說《底層的珍珠》（Pearls of the Deep）。他雖然有法學博士的學位，但先後從事過倉庫管理員、鐵路工人、列車調度員、廢紙回收站打包工等工作。這些工作經驗為他的小說創作累積了豐富的素材，其作品大多描寫普通、平凡、默默無聞、被拋棄在「時代垃圾堆上的人」。他的一生都和這些人在一起，收集他們的語言精華及故事，在作品中創造出一群平凡而又奇特、光芒四射的人物形象。
赫拉巴爾自創了一個新詞「中魔的人們」（Pabitele），指的是一些儘管身處極度灰暗之中，但卻能「透過鑽石孔眼」看到生命之美的人。這些小人物儘管處境悲慘，但他們就像中了魔法的人，眼中的世界往往跟現實形成強烈反差，因而看起來豪放開朗、詼諧風趣。
赫拉巴爾不只有一本同名的短篇小說集《中魔的人們》（Palaverers），他所有作品中也都看得到這種人物。
在臺灣，大塊文化自2002年開始出版赫拉巴爾的著作，前後共出版十二種。
我們出版他的第一本書是《過於喧囂的孤獨》（Too Loud a Solitude）。
這也是他的代表作，被譽為20世紀捷克小說的燦星。一個在廢紙收購站工作了三十五年的打包工，他把珍貴的書從廢紙堆中挑出來，藏在家裡、藏在腦裡，從一無所知的青年變成滿腹詩書的老人。儘管擺放壓力機的地下室蒼蠅成群、老鼠橫行，這潮濕惡臭的地窖卻在他的遊戲裡，在他的微笑裡成為天堂。
這部醞釀了20年才寫就的小說，於1976年完稿，但遲至1989年才正式出版。赫拉巴爾曾說：「我為寫這本書而活著，並為它而推遲了死亡。」

這種植物中文叫佛珠、翡翠珠、情人淚.......🤦好吧！我都還是叫 String Of Pearls。看似脆弱的植物，卻又無比堅毅。為怕旱乾環境，圓圓飽滿葉片內已存大量水份，積穀防飢。
無人會預測將來發生什麼，災禍會維持多久，唯早作準備，才可避過一場驚天海嘯呑噬。
