(Hosted) @glentay and @himynameisap grew up in Hougang but their paths only properly crossed at Shatec Culinary School. They clicked and the friendship has survived and thrived through the years, even when their careers took different paths. It stayed solid even after Glen moved to Shanghai five years ago to work at 3-MICHELIN Star Ultraviolet. He is currently still there but will return in March next year. Therefore, the entire menu at @avenue87.sg had to be planned, conceptualised and discussed virtually. Testing was done by each chef in their own home. It helped that they trust and respect each other‘s taste and input, so the dishes at #avenue87sg are true collaborative efforts. I was invited to taste the 6-course dinner menu ($98++ per pax) last week and honestly, I found it very enjoyable. Flavours were comfortably familiar because the chefs had drawn inspiration from some of their favourite Asian meals in Singapore but recreated them using contemporary techniques for newness. They source locally as much as possible too, and count @ahhuakelong @hongspices @farmdelight as their suppliers. Here’s a rundown of what was served: 1. Snack 1: A very tasty, crunchy fried cracker starring chicken breast (yes, it’s oxymoronic) topped with a dollop of sour cream and caramelised onion. 2. Snack 2: Blew me away this did. The Kueh Pai Tee, an innovative take on the chefs’ late suppers at “21 Seafood” in Kovan from back in the days of their first restaurant gig. The filling was the killer - an espuma of assam pedas paste with chicken stock, Greek yogurt and cream. It was finished with tomatoes, okra, eggplant and curry leaves. 3. Salmon: The marvelously moreish first course of fresh salmon was proof that two heads are better than one as the ponzu-pickled wakame, dill oil, and sour cream were suggested by Chef Glen while Chef Alex thought that soy wasabi granita, fresh pear cubes and Vietnamese rice chips would be good complements. 4. Soup: If you love fish soup like me and my dining companions @heyrozz @david_yip, the second course is bound to send you to cloud nine. ⬇️Continued in Comments⬇️

Snuck out on a school night 😜 #tumimy #valiram loving the customisations you can do now on their collection ❤️ . . . I went for a 2 hours healing and meditation class yesterday evening (which is something quite new to me and I highly recommend it) before throwing myself into a night of fun glamour and beautiful people (who are also the nicest around). It was a night of catching up and meeting new friends. . . I went home and went to bed last night just thinking how oxymoronic the night was and for some reason I had a smile on my face. To think of the yin and yang and the balance of life. How funny and beautiful life experiences can be. It’s even funnier that I actually started my day feeling like utter crap in the morning. Oh how life ebbs and flows. I’m enjoying the ride. ❤️ #musings
