Anyone who’s been to San Francisco’s renown 3-star restaurant Saison, knows of its brilliance, from the menu to their hospitality, it is among the top ten of fine dining in my mind. Half a year ago, when Saison’s founder, chef Joshua Skenes founded this “playing fire” restaurant by the seaside, with an open kitchen, the guests can see the red hot wood logs stove, playing with different type of barbecue. After a little observation, he has a very good setup.
Excellent ingredients, a lot of thoughts have been put in the seasoning and sauces, too. Personally, seasoning is a bit heavy for my taste. Some dishes are everyday versions of Joshua’s signature Saisons’ dishes. The wine pairings are excellent, a lot of rare Napa Valley wine, of high quality.
Joshua is deep into preparation for his L.A. restaurant and flew back specially for the night. In this era, everyone is busy!

食材佳,調味、醬料也花了心思。手法於我而言比較重口味。有些小菜更是Joshua 在Saisons的名菜的「平民版」。配酒出色,許多Napa的少量酒款,水準甚高。
Joshua在L.A的餐廳緊鑼密鼓籌備中,特地飛回來一晚又飛走了。這年代,人人都好忙!
