Anyone who’s been to San Francisco’s renown 3-star restaurant Saison, knows of its brilliance, from the menu to their hospitality, it is among the top ten of fine dining in my mind. Half a year ago, when Saison’s founder, chef Joshua Skenes founded this “playing fire” restaurant by the seaside, with an open kitchen, the guests can see the red hot wood logs stove, playing with different type of barbecue. After a little observation, he has a very good setup. Excellent ingredients, a lot of thoughts have been put in the seasoning and sauces, too. Personally, seasoning is a bit heavy for my taste. Some dishes are everyday versions of Joshua’s signature Saisons’ dishes. The wine pairings are excellent, a lot of rare Napa Valley wine, of high quality. Joshua is deep into preparation for his L.A. restaurant and flew back specially for the night.
