福臨門給大家的印象總是一家富豪名人飯堂，是名人大劉的至愛。其實福臨門是由徐福全一手於1972年創立，紅褲子出身的他憑着精湛廚藝，曾任何東家族的主廚。他擅長以簡單食材以至珍饈百味來烹調健康及美味正宗功夫粵菜，尤其以炸子雞和炆鮑魚等馳名中外。這些經典粵菜都能在他日後創立的福臨門菜牌上一一找到。
The general public’s first impression of Fook Lam Moon is often just “the cafeteria for the wealthy” or that they are Joseph Lau’s favourite restaurant.
Fook Lam Moon was established by Chui Fook Chuen in 1972. He started his career from the working class, but with his competent skills cooking authentic and healthy Cantonese cuisine, he was quickly ascended to become the head chef for the prominent Ho Tung family. His signature crispy fried chicken and braised abalone which can be found easily in the Fook Lam Moon menu.
今次我就到了澳門銀河的福臨門一試他們有如傳家寶的粵菜經典。時至今日，到福臨門用饍已經不再是富豪的專利了，餐廳在堅持用料上乘的原則下推出了一系列價錢相宜又適合闔家聚會的新菜單；同時在那看似墨守成規的粵菜食譜下，活用來自世界各地的食材（如愛爾蘭烤鴨），以及對食物新穎的理解和處理（又如只有1mm厚度的燈影煎堆）；讓我以合理的價錢享受到口味多元創新又不失經典韻味的正宗粵菜。
Last week, I went to the Fook Lam Moon in @galaxymacau to experience their classic Cantonese cuisine. I was surprised to find that dining here is no longer a privilege for the tycoons! The restaurant has established a new set of menu with a reasonable pricing strategy but continue the use of top-notch ingredients. They also celebrate diversity under the traditional Cantonese recipe, by using ingredients all around the world (such as the roasted Irish Duck) and handling ingredients with a groundbreaking mindset (suchlike the 1mm Sesame Ball)
說到粵菜經典，怎能不提到叉燒呢。福臨門的叉燒採用來自巴西的豬肉，取其梅頭（豬肩）肉製作。經麥芽糖、南乳和米酒等醬汁烤醃的叉燒，外皮帶焦脆、色澤鮮明，下層是肥瘦均勻，肉嫩多汁的梅頭肉有好幾塊更做到入口即溶的黯然銷魂時刻！
You can’t skip Cha Siu when we talk about classic Cantonese cuisine. Fook Lam Moon uses pork shoulder from Brazil thanks to its balanced fat and lean meat proportion. The pork is marinated and roasted with maltose, fermented red beancurd and rice wine. The crispy and crackling skin with layers of fat keeping the lean meat below succulent, some pieces even deliver the melt-in-your-mouth magical moments!

[TAIPEI - TOWN by Bryan Nagao Taipei 😋]
已有一段時間沒回來。在換冬季菜單前有幸試了秋季菜單。雖然前菜和麵都有水凖， 但這次不得不提是主菜的本地鯛魚和雞。魚非常鮮美, 雞嫩而入味。
很有可能是食材的關係， 真心覺得這間餐廳比香港總店還更勝一籌。 加上價錢的考量更不用說！
期待冬季菜單!
Haven’t visited for a while. Luckily I get to try the autumn menu before switching to winter menu in 2 days.
Although the first few courses are nice as expected, I have to highlight the main course this time especially the local snapper and chicken. Fish meat was soft and fresh while skin was crispy, and the chicken was super tender and taste of sauce was well integrated.
Very likely due to ingredients, I find this Taipei branch is a notch better than the main restaurant in HK. Adding the pricing factor it becomes a no brainier!!
Look forward to the winter menu!
