I can seldom find decent Spanish cuisine in Hong Kong. They are either less authentic or even just completely out of the criteria. I would say it is not that hard to mimic a Spanish dish, but to actually present one, it requires a good dose of knowledge and right ingredients.
This restaurant has impressed me in many ways with their seriousness towards Spanish cuisine and warm hospitality. I really loved their tapas like the Slow-cooked Octopus Carppaccio. The Octopus was shipped all the way from Spain, the brininess and freshness was phenomenal. A sip of white wine would totally intensifies the flavor.
The Foie Gras Lollipop was plated so elegantly, I cannot help but to take a hand shot with it. The lollipops were made from goose liver steamed with white wine, topped with toasted pistachio with Himalayan salt and pepper. It was salty and umami at the same time with extra textures from the pistachio, just as addictive as a normal lollipop.
The Tortilla De Patata, which is basically a Spanish potato omelette. The potato was cooked only with olive oil from raw till softened and wrapped inside by the scrambled egg, topped with homemade Aioli and paprika for an extra Spanish touch.
The Seared Foie Gras Toast with Mulled Pear was just as amazing as the lollipop with a sugary twist. The Barcelona style grilled red prawns were really succulent and juicy. It was a dish acquired by the chef from Barcelona and advanced it by herself! What a nice treat from Spain!
Last but not least, their Paella was the one of the most authentic ones I have tasted so far. First of all they have used the right kind of rice. I could taste the complexity of flavor of their cooking stock just by having the rice. The socarrat was there at the bottom which was a relief, and they managed to not over cook and maintained the integrity of the seafood as well. A big applause for you chef!
I had such a great time there, their food was great. The Sangria could be a little bit more boozy but this would be the only thing I would pick on. Thank you for taking me to Spain, Gracias!
