新手不敗年菜- 紅燒獅子頭。
獅子頭的由來是 “獅子頭”，即揚州話說的「大斬肉」，北方話叫“大肉丸子”或“四喜丸子”。
據說它的“遠祖”是南北朝《食經》上所記載的“跳丸炙”
史書記載，隋煬帝南遊，看了揚洲的 瓊花，其中對 揚洲的萬松山、金錢墩、象牙林，葵花岡四大名景十分留戀 ，
回去後吩咐御廚以此四景為題製作四道菜肴。因此 御廚們費盡心思的做出了，松鼠桂魚、金錢蝦餅、象芽雞條和葵花斬肉四道菜。
其中的「葵花斬肉」就是最後演變成了獅子頭。
到了唐代，官宦權貴們也開始講究飲食，有一次郇國公韋陟宴客，府中的名廚韋巨元也做了揚州的這四道名菜，其中「葵花斬肉」這道菜上桌時，只見那巨大的肉團子做成的 葵花精美絕倫，有如雄獅之頭，賓客們趁機勸酒道：“郇國公半生戎馬，戰功彪炳，應佩獅子帥印。”韋陟高興地舉酒杯一飲而盡，說：“為紀念今日盛會，‘葵花斬肉’不如改名‘獅子頭’。”一呼百諾，從此揚州就添了“獅子頭”這道名菜。

Ingredients:

1 jin ground pork
25g vegetarian mushroom oyster sauce
Some white pepper
Some Shaoxing wine
40g Minced garlic 40g
A quarter of an onion.
15g Chopped green onion
An egg

7 dried shitake mushrooms
1 cabbage
Adequate amount of sergestid shrimp
shitake water
Adequate amount of water.
20g soy sauce

食材：

獅子頭食材：
絞肉 1斤
素蠔油 25g
白胡椒粉少許
紹興酒少許
薑末 40g
洋蔥丁1/4顆
蔥花15g
蛋1顆

其他食材：
乾香菇 7小朵
大白菜 1顆
玉米粉
蔥段適量
櫻花蝦適量
香菇水適量
水適量
醬油20g

做法：
1.乾香菇泡水備用
2.絞肉中拌入素蠔油、胡椒粉、紹興酒，拌勻，拌至黏稠感，加入薑、蔥花、洋蔥、蛋
3.將步驟二完全拌勻後，平均抓成球後，在表面裹上玉米粉
4.熱鍋，倒入油，下去煎至表面上色定型後
5.換一鍋，將一些油撈過去，放入蔥段以及香菇絲，櫻花蝦
5.再加入香菇水、白菜、獅子頭，在補一些水，煮滾後悶煮約7-10分鐘，讓白菜出水淹過獅子頭，此時再做些微的味道調整。
