โดนัทครีมวานิลลา
Vanilla Cream Doughnut
โดนัทยีสต์ทอดเนื้อเบา สอดไส้ด้วยวานิลลาครีมเนื้อนุ่มที่เข้มข้นด้วยรสนม และหอมละมุนด้วยกลิ่นวานิลลา

-โดนัทยีสต์-
น้ำสะอาด 80 มิลลิลิตร / น้ำตาลทราย 25 กรัม / นมข้นจืด 25 มิลลิลิตร/
ไข่ไก่ 1 ฟอง / เกลือ ½ ช้อนชา / ยีสต์ผง 8 กรัม / แป้งสาลีอเนกประสงค์ 250 กรัม/
ชอร์ตเทนนิงน้ำมันรำข้าว 25 กรัม / น้ำมันรำข้าว สำหรับทอด / น้ำตาลไอซิง สำหรับเสิร์ฟ

-วานิลลาครีม-
ไข่แดง 3 ฟอง / น้ำตาลทราย 60 กรัม / แป้งข้าวโพด 25 กรัม/
กลิ่นวานิลลา 1 ½ ช้อนชา / นมข้นจืด 220 มิลลิลิตร / วิปปิ้งครีม 200 กรัม

1. เตรียมแป้งโดนัท โดยนำส่วนประกอบทั้งหมด ยกเว้นชอร์ตเทนนิง ใส่ในโถตี ใช้หัวตีตะขอ ตีจนส่วนผสมพอเข้ากัน ใส่ชอร์ตเทนนิง ตีต่อจนส่วนผสมเนียนดีด้วยความเร็วระดับกลางประมาณ 15-20 นาที คลึงส่วนผสมให้เนียนดี คลุมหน้าด้วยผ้าหรือแผ่นพลาสติกบางๆ พักให้พอคลายตัวเป็นเวลา 10 นาที
2. ตัดแบ่งตัวแป้งออกเป็นส่วนละ 35 กรัม ปั้นขึ้นรูปเป็นก้อนกลม คลุมหน้าด้วยผ้า พักอีก 5 นาที ใช้มือกดแป้งเบาๆ ให้แป้งมีลักษณะเป็นก้อนกลมแบน ทำซ้ำจนหมด คลุมหน้าด้วยผ้า และพักต่อจนแป้งขยายขึ้นเท่าตัว ประมาณ 45-60 นาที
3. ตั้งน้ำมันรำข้าวสำหรับทอดที่ 160 องศาเซลเซียส ใส่โดนัทลงไป พอแป้งสุกและสีสวย ก็พลิกกลับด้าน ทอดประมาณด้านละ 1 ½ นาที ตักออกจากน้ำมัน พักไว้
4. ทำวานิลลาครีม ตีไข่แดง น้ำตาลทราย และแป้งข้าวโพดตามลำดับให้เข้ากันดี ใส่กลิ่นวานิลลา และนมข้นจืดลงไป นำไปตั้งไฟ เคี่ยวจนสุกและข้นดี นำส่วนผสมออกมาหล่อในชามน้ำแข็งให้เย็นลง
5. ตีวิปครีมให้ตั้งยอดดี นำไปตะล่อมกับส่วนผสมคัสตาร์ด พักให้ตู้เย็น 10 นาที
6. ผ่าครึ่งโดนัท นำส่วนผสมครีมใส่ถุงบีบ บีบกลางตัวโดนัท ปิดด้วยโดนัทอีกครึ่ง โรยน้ำตาลไอซิงก่อนเสิร์ฟ

Vanilla Cream Doughnut
Light and fluffy doughnut with a gargantuan amount of fragrant and indulgent vanilla cream.
-Yeast Doughnut-
Water 80 ml / Sugar 25 g / Evaporated Milk 25 ml /
Egg 1 / Salt ½ tsp / Active Dry Yeast 8 g / All-purpose Flour 250 g /
Rice Bran Oil Shortening 25 g / Rice Bran Oil / Icing Sugar for serving

-Vanilla Cream-
Egg Yolks 3 / Sugar 60 g / Corn Starch 25 g / Vanilla Extract 1 ½ tsp /
Evaporated Milk 220 ml / Cream 200 g

1. For Doughnut: add everything to the mixing bowl except shortening. Use dough hook and beat the ingredients until just come together before adding shortening. Continue mixing the dough on medium speed until dough is smooth and stretchy, 15-20 minutes. Let the dough relax under plastic wrap or tea towel for 10 minutes.
2. Divide dough into 35 g and roll into round balls. Rest 5 minutes. Press the dough down lightly. Let the dough proof for 45 to 60 minutes, covered in plastic wrap.
3. Heat oil at 160C, Fry doughnut until golden brown before flipping, 1 ½ minute each side.
4. For Vanilla Cream: Whisk egg yolks, sugar and corn starch until creamy and pale. Add vanilla and evaporated milk. Heat over medium heat until thickened and cool down in iced bath.
5. Whip cream into stiff peak. Fold into custard and let it set for roughly 10 minutes.
6. Halves doughnut, transfer cream to a piping bag and pipe into the bottom part of doughnut before top with the top half of doughnut.
