In this recipe, the fudge sauce is the secret of the perfect taste. Always use real sugar and high quality bittersweet chocolate to make it. The fudge sauce is similar to French chocolate ganache. There's so many uses for this, like to use it as topping for ice cream, or drizzle for cake. Also we prepare another delicious Oreo milkshake for kids. Since now is summer.

How to make blueberry pancakes
☞ Servings : 2 glasses, each 250ml
📍 Ingredients
☞ For the hot fudge sauce
heavy cream 40g
whole milk 83g
granulated sugar 10g
70% bittersweet chocolate 65g
unsalted butter 15g
☞ For the chocolate milkshake
fudge sauce 125g
whole milk 140g
vanilla ice cream 250g
☞ For the Oreo milkshake (1 glass, about 240ml)
oreo cookie 3
whole milk 80g
vanilla ice cream 125g
📍 Instructions
☞ For the hot fudge sauce
1. Add milk and heavy cream and sugar into the saucepan over medium-low heat, bring it to a simmer, then add butter to mix until melted. Remove the pan from heat.
2. Add the bittersweet chocolate into the saucepan and stir often, the chocolate is melting into the cream and butter.
3. Then pour into a pot or a container to let it cool down.
☞ For the chocolate milkshake
1. Throw the vanilla ice cream, milk and fudge sauce into a blender and purée until smooth.
2. Serve with straws in a tall glass. Top with heavy cream and shave a little chocolate Cheers.
☞ For the Oreo milkshake
1. Throw the Oreo cookies, ice cream and milk into a blender and purée until smooth.
2. Serve with straws in a tall glass.

If you're looking for a delicious and super easy chocolate dessert, or you are searching for a way to use up your egg yolk, then you must try this recipe. We recommend this french pudding strongly, it’s really delicious, you'll be amazed how the simplest ingredients can make such a rich and creamy texture. By the way, it’s gluten-free.
This french pudding is rich, creamy and wonderful. The silky and rich texture is a little like chocolate mousse and chocolate custard. Chill in the fridge for at least 2 hours or overnight before serving is the best way to enjoy it. A tasty addition is to top with a dollop of whipped cream and garnished with some chocolate shaving. This recipe’s idea is from French chef Joël Robuchon, but we’ve reduced the amount of sugar and added rum to make it more flavor. Hope you like. Enjoy. :)

How to make Crème Au Chocolat French Pudding
Here is the Crème Au Chocolat French Pudding Recipe
☞ Yield: Serve 5, we use 140ml pudding cup
✎ Ingredients
milk 150ml
whipping cream 200ml
70% bittersweet chocolate 100g
egg yolk 3
granulated sugar 60g
rum 5g
*You can garnish with whipped cream and shaving chocolate
✎ Instructions
1. Cut the chocolate into small chunks.
2. In a saucepan, slowly cook the whipping cream and milk over medium-low heat, and stir continuously until simmer but not boiling. Remove from heat.
3. Add chocolate chunks into the saucepan, stir occasionally until the chocolate is melted and the mixture is smooth and fully incorporated.
4. In a large mixing bowl, add 3 egg yolks, sugar and rum ,whisk together until mixed well.
5. Pour 1/3 chocolate mixture into the egg mixture, gently whisk.
6. Slowly add the rest of the chocolate mixture while continuously whisking.
7. Sieve the mix into a jug. Then fill the pudding mixture to 2/3 height of the cup. It’s about 80ml.
8. Next, fill room temp water into the baking dish to the level of 1/2 of the height of the chocolate mixture.
9. Preheat the oven to 160C, bake for 35~40 minutes.
10. Once baked, carefully remove the cups from the baking dish. Let cool completely before covering with wrap and refrigerating.
11. Chill for at least 2 hours before serving or overnight. For serving, you can top with whipped cream and chocolate shaving.

Who doesn't love one bowl cake recipe, if we can make a delicious dessert quickly and easily, why not? Try this rich and soft, moist and fluffy Chocolate Cake.
If you are a chocolate lover. This is the one you’ve been dreaming of! We always look for some chocolate dessert to surprise my family and ourselves. Since we made it, the compliments continued. This cake is perfect to make for any holiday, even birthday, especially since the ingredients and tools required are simple and minimal.
This recipe idea is from Pierre Hermé, but we adjust the instructions a little bit to make it more simple. One bowl, minimal ingredients, and just follow this easy recipe, then you will get a fluffy, tender-moist chocolate cake! Enjoy. :)

How to make French Chocolate Cake
Gâteau Au Chocolat Recipe
📍 Cake Tin Size: A round cake tin, the diameter is 15cm/6”
✎ Ingredients
70% bittersweet chocolate 125g
unsalted butter 125g, cut into small cubes
granulated sugar 100g
all-purpose flour 35g
egg 2, medium size, room temperature
a pinch of salt
* more butter and flour to grease the cake tin
✎ Instructions
1. Butter the baking pan and flour the pan, then shake it around the edge, next invert the pan and tap out any excess flour.
2. Crack two eggs into a bowl, and whisk them slightly, set aside.
3. Use a knife and carefully shave off or chop the chocolate into small pieces.
4. Put the chocolate and butter into a large bowl, and place on top of a saucepan 1/3 full with simmering water over low heat, use the hot water bath to melt them. Once melted, remove from heat.
5. Add the sugar until perfectly amalgamated.
6. Add eggs in two batches, mix until the mixture is incorporated each time, then add the remaining egg, mix again until well combined.
7. Sift the flour and salt into a bowl, mix until it disappears from the dough. but do not over mix.
8. Pour the batter into the pan, and smooth the top with a spatula.
9. Preheat the oven to 180C, bake for 22~25 minutes. Once baked, take out the cake and place it on a wire rack, let it cool down.
10. You can lightly dust with powdered sugar, or pour the ganache evenly over the top, or even put some fruits or whipped cream as you like.

我特地查了一下「生巧克力」一詞。應該是源自日本的nama chocolate,指的是「新鮮製作」,或是指成分中的「生」奶油(鮮奶油)。
就做法與成分角度來看,生巧克力也就是一款質地比較硬、可切塊的 #ganache(#甘納許)啦!
只要使用好的巧克力磚/豆,好的動物性鮮奶油,自己做的生巧克力完全不輸市面上的名牌巧克力啊!(只輸包裝吧?!😂)
其實,這可不是修改過的減醣甜點,食譜與做法跟正常/一般的生巧克力是一模模一樣樣的。
生巧克力,天生就是款減醣甜點來著!
因為激近無醣,#減醣飲食也能吃!小小一塊,是奢華無比的treat!
如果使用50-75%的巧克力(巧克力已經內含糖了),可以不加糖。我這次用了90%與75%各半,就再額外加一小匙 #低GI椰糖。(是低醣烘焙的好物啊!#預計九月再次開團嘿!)
食譜中的酒!!是重點!!
一般使用萊姆酒、白蘭地或是威士忌,我聞著家裡一瓶日本的gin,覺得滿溢的柑橘香也是很搭,這次就用它啦!

90%巧克力 100g
75%巧克力 100g
鮮奶油 100g
椰糖 1小匙
酒(rum, brandy, whiskey, 我這次用gin)5g
巧克力粉 適量
#做法
準備一個方形容器(我的是17 x17cm),先鋪上保鮮膜,再放入摺好的烘焙紙。
巧克力隔水融化,備用。
小湯鍋裡倒入鮮奶油和椰糖,攪拌至椰糖融解,小火加熱至微微冒煙。
將鮮奶油,分2-3次,加入融化的巧克力中,攪拌至整體質感均勻且滑順,敲震一下盆底以震去氣泡,接著倒入容器。
室溫稍微放涼後,送進冰箱冷藏至少2-3小時,靜待凝結。
小小拉提出烘焙紙,切割巧克力成2x2cm左右的方塊。並在表面篩上巧克力粉,移回容器,以方便冷藏保存。
食用前,提前20分鐘取出,回溫至室溫再享用。

【奇奧New Cook Order食譜:摩卡芝士蛋糕】
做法:
1. 預備餅底:將消化餅壓碎,先後加入牛油及攪拌好的即溶咖啡液,倒入蛋糕模壓平,冷藏最少30分鐘。
2. 製作芝士蛋糕:忌廉芝士用電動打蛋器打至軟身,分2次加入糖混合。
3. 粟粉過篩倒入忌廉芝士。
4. 雞蛋分3至4次加入忌廉芝士中,最後倒入忌廉混合。
5. 製作摩卡芝士蛋糕:分出約3分1的芝士蛋糕糊,與摩卡芝士蛋糕材料混合。
6. 取出冷藏好的餅底,先倒入芝士蛋糕,再倒摩卡芝士蛋糕,用筷子或匙羹輕輕攪拌,造成雲石面效果。
7. 焗爐預熱,130度焗50分鐘,出爐後後放涼。
8. 製作榛子Ganache:朱古力倒入忌廉,座熱水溶化朱古力混合。
9. 先後加入榛果醬、忌廉、咖啡酒,用膠刮攪拌至濃稠。
10. 製作咖啡忌廉:忌廉加入糖,用打蛋器打至8分挺身,加入咖啡和咖啡酒混合。
11. 馬斯卡彭芝士放室溫回溫,用膠刮打軟,與忌廉混合。
12. 芝士蛋糕脫模,咖啡忌廉和榛子Ganache入唧袋,唧上蛋糕面,放入雪冷藏一晚即可。

【 巧克力草莓鮮奶油蛋糕 】
小子最近很喜歡看兩部卡通,一個是新幹線變形機器人,另一個則是寶可夢。他還幫家裡的玩偶們各自發明不同招式,要媽媽拿著玩偶陪他對戰(然後輸的人不能忘記要說「好討厭的感覺啊~」🤣)。
我有一搭沒一搭地陪他看,大概了解人物設定和故事情節。其實都是很簡單的、他這個年紀能理解的正反兩立故事。兩部卡通的主角則毫無意外地兼具了「勇敢」、「好奇」、「合群」等等特質。
我一邊看卡通一邊忍不住想,擁有這些特質的孩子,真的比較惹人喜愛吧。他們不怕生、愛親近人、朋友多、喜歡嘗試新事物,也不吝於分享。這樣的孩子在人群中總是特別容易獲得關注和稱讚,這是無庸置疑的。但如果是沒有這些特質的孩子呢?如果我們一直讚揚勇敢合群的孩子,那內向害羞、不擅人際關係的孩子又該如何自處呢?
所謂特質,或說個性、人格,一部分是先天的,而另一部分則是先天與後天環境互動影響而形成。如果先天有勇敢外向活潑的孩子,那當然就一定會有內向小心害羞的孩子。沒有好壞對錯,就只是一個特質。但後天的教養,會決定孩子用怎樣的眼光看待自己、看待他人與世界。
在診間看過太多在負向教養環境下長大的成人,他們沒辦法用客觀公正的角度看自己,傾向覺得自己是個無用無價值的人,不覺得自己值得被愛,也無法喜歡自己,而原本內向敏感的他們,又因此變得更退縮、更自卑、更委屈求全。看著他們,都很心疼他們內在的孩子。如果他們能在更包容的環境下成長,應該能長成很不相同的模樣吧。
我一直覺得,身為大人的我們,並不是要求孩子改變成社會普遍喜歡的樣子,而是應該要能接納孩子的特質,順應孩子的特質去引導,讓他在成長過程中逐漸獲得自我調適和適應環境的能力。喜歡獨處的孩子,不需要因為朋友少而自我懷疑。內向慢熟的孩子,也不需要因為較難融入人群而覺得自卑。而當然,如果我們的環境,能更包容不同特質的人,自然每個人都能活得更輕鬆自在,這是一個最美好的想像與期待。
至於我家小子,他焦慮度高,有點膽小,喜歡一個人做樂高勝過外出跟一群朋友玩。比起要求他變得勇敢、外向、合群,我更期待小子能持續保有他的好奇心和創造力,並培養出對自己的責任感,而且也希望他能真心喜愛自己,不論哪個面向的自己,就像媽媽真心愛他一樣。😊
對,媽媽真的好愛他,所以就算最近在控制體重,還是要做他最愛的草莓鮮奶油蛋糕給他吃😂
做蛋糕前,小子還給我多了一個要求,就是除了草莓、鮮奶油,還要有巧克力,全部放在一起。媽媽只好先做了一顆草莓鮮奶油蛋糕,再淋上巧克力Ganache。使命必達沒辦法。

而巧克力Ganache則是50克鮮奶油和50克70%鈕扣巧克力。先將鮮奶油加熱到冒煙後,關火,放入巧克力攪拌融解完成。蛋糕體要先冰透,再將Ganache淋上去,最後進冰箱冷藏定形就完成囉!
