    大家好,我係「我要攬炒」,好多謝大家出席呢一個晚會。
    Hello everyone, I am “Scorched Earth”. Thank you all for coming to our rally this evening.

    大專學界嘅集會結語,係向國際發出呼籲。而我攬炒,會以一個普通人身份向香港人致謝,亦多謝英國國會議員拍片支持,同表達少少對前路嘅睇法。
    Hong Kong IAD closed their speech by making an appeal for international support I, as an ordinary HongKonger, would like to take this opportunity to express my appreciation towards the Hongkongers and UK MPs who support Hong Kong, and give my two pennies on how the crisis of Hong Kong may develop in the near future.

    點解我會叫自己做我要攬炒呢。其實源於6月9號當日,我發現幾乎所有香港政府高官同保皇黨都有外國護照。
    You may wonder why I took the pseudonym “Scorched Earth”. On 9th of June, I noticed that almost all of the government officials and pro-government politicians are holding foreign passports.

    佢地只係假放棄外國護照一次,就享有肆意出賣香港利益既權力,與民為敵。
    They may just renounce their passports once, leaving the option of reclaiming them later, they would be empowered to take personal advantage in their positions at the expense of Hong Kong, and act against the benefits of Hongkongers.

    賣港之後,啲官同保皇黨就手執外國護照,一走了之。所以,我要取消佢地嘅外國護照重發權利,生生世世留喺大灣區,共享大灣區榮耀。同佢地攬炒。
    After abusing their power for their own benefits, they may still leave Hong Kong by reclaiming their renounced passports. I therefore seek to have their rights to reclaim their foreign passport removed. They will then be forced to stay forever in China and to face the same “bright” future as us. If Hongkongers burn, they burn with us - thus the selection of the pseudonym of “Scorched Earth”.

    不知不覺間,香港人已經奮戰咗兩個月。而呢兩個月,有三個時刻特別令我感觸同決定奮戰落去,同大家齊上齊落。
    It feels like not a long time, but Hongkongers have been fighting for over two months already There were three particular moments during the last two months that touched me and made me even more determined to fight on, shoulders to shoulders, with everyone.

    第一個時刻,係6月10號見到有年青人,絕望地回應當權者 「反正都無未來,不如一槍啪死我」
    The first moment was back on 10th June, when a young protestor hopelessly said to those in power, ‘You might as well kill me with a bullet – there is no future for me anyway.’

    第二個時刻,係7月1號,梁繼平義士同大家講「我地今次一輸就係輸十年」
    Then on the 1st of July, when the fearless protestor Brian Leung said ‘If we lose this battle, we are giving up our next ten years.’

    第三個時刻,係7月廿八號,元朗有義士既盾牌俾子彈射穿,記者問佢點解仲堅持,義士好堅定咁回答「光復香港,時代革命」
    The third moment was on 28th of July in Yuen Long. A police bullet went through the shield of one of the protestors. When a journalist asked why he was still standing firm for his belief , he said without hesitation , ‘Reclaim Hong Kong. Revolution of our times’.

    呢三個時刻,反映到香港人逐漸將絕望嘅心情,轉化為無比勇氣對抗暴政。
    These three moments show exactly how HongKongers gradually turn their hopelessness into courage, to fight against tyranny.

    呢一刻我哋可能覺得好疲倦、好憤怒、好氣餒,但係請我哋唔好放棄,因為呢個係光復香港,時代革命嘅最後機會。
    We may be tired, angry, or dejected, but please do not give up. This is the last chance to reclaim Hong Kong and succeed in the revolution of our times.

    「光復香港,時代革命」唔係一句空洞口號,更加唔應該俾人利用黎分化我哋。
    “Reclaim Hong Kong. Revolution of our times’ is not merely a slogan, and most definitely should not be used by some to divide us.


    因為「光復香港」指既係:
    光復香港嘅自由、人權、民主、資源自主同國際定位
    It is because “Reclaim Hong Kong” means, to reclaim the freedom, human rights, democracy, control of resources and positioning in the world of Hong Kong.

    而「時代革命」嘅意思係:
    聲稱五十年不變既時代之中,由香港人一齊由下至上撼動政權,改變政治體制。
    And “Revolution of Our Times” means, within the 50 years promised to have no changes in way of life, Hongkongers to shaken the government from bottom up together and to change the political system.

    學術上,只要社會大眾,嘗試由下而上令 政治體制 有變化,就係革命。所以,2014年係革命,2016年係革命,2019年都係革命。
    Academically, ‘revolution’ is a bottom-up attempt by the masses to bring about structural changes to their political system. That is why, it was a revolution in 2014, so was 2016, and now, WE ARE IN A REVOLUTION in 2019.

    1984年至今35年,香港人不斷退讓,抱薪救火,最終導致退無可退。
    Since the Joint Declaration was signed in 1984, for 35 years HongKongers have been compromising, naively believing that this is the way to save ourselves. That led to the dead end we are facing today.

    對我地年輕一輩黎講,與其2047年默默死去,倒不如趁香港尚有 一絲希望既情況用盡最後一口氣,創造未來。
    To the younger generation, they either rot towards death upon the arrival of year 2047, or, whilst there is still a chance, they would rather sacrifice themselves in the hope of real changes, and to pave a new path for Hong Kong.

    有年長一輩問,到底我地後生既有無勇氣,
    將抗爭 交返俾 傳統大台領導。
    Some from the older generation asked, whether these youngsters are brave enough to let the established political parties to lead the movement again.

    我不禁反問,傳統思維一輩又有無勇氣,放棄三十年黎既模式,放手俾我地手足以新思維新方式改寫香港命運?
    I would ask in return, whether the established parties be brave enough to let go of the same old way they have been operating for 30 years, and let the next generation lead in their new mentality?

    當年青人日以繼夜,夜以繼日以不同方式向政府施壓既同時,旦願我地回過頭黎,會見到年長一輩企喺現場,默默支持我地。
    When young men and women continue to pile pressure onto the government day by day with their ever-changing strategy of protests , I just hope we would see more from the older generation to be there in the sites of protest to support us.

    年輕人需要既唔係金錢、唔係食物,而係活生生既人願意走出黎支持。
    The support from people literally standing side by side with the young protestors means much more than supports in form of money and food.

    今日之所以邀請不同光譜、不同年齡層既人士上台,就係為咗向全世界展示出:
    The reason that people from a broad spectrum and from different age group are invited today, is to show the world that:

    無論香港情況幾嚴峻,香港人都唔會因為政治理念、年齡不同而廢言、割席,無論有幾多風波,我地依然團結為我地既訴求奮勇到底。
    No matter how dire the situation is, how different our views and ages are, and how challenging the situation is, HongKongers will stay united.

    由今日起,我地唔應該再分勇武同和理非。出得黎既就係手足,係抗爭者,用核彈都唔會割。
    From now on, there should be no more classification of aggressive or peaceful protestors. Once we are together on the streets of Hong Kong, we are each other’s brothers and sisters, limbs and body. We are one. Nothing can divide us.

    我必須強調大專學界同攬炒都有同樣信念:就係拒絕大台。
    I would like to emphasis HK IAD and our team do not condone any one single leading platform for the whole movement

    如果有大台出現,我會出全力摧毀佢;假如有一日,我成為大台一部分,請大家一視同仁,將我拉落黎,拆我台。
    If such a platform is ever formed, I will do my utmost to demolish it. If I ever become part of such a platform, I ask you to do the same to overthrow me and demolish the platform.

    只要拒絕迷信大台模式,唔割席,唔氣餒,善用國際思維,我地一定會贏。
    As long as we all believe in the leaderless model, stay united, keep our spirit, and to think global, we shall prevail.

    香港人,寧化飛灰,不作浮塵,光復香港,時代革命!
    We would rather live freely and burn, then to be subjugated and diminished. We are HongKongers.

    Q&A最後一彈!像湖水般的萬芳姐來分享對紐約的印象。萬芳姐連回答的時候都好有詩意呀 🧡🧡

    Q1:對紐約的印象
    萬芳:對紐約的印象是很多人去紐約尋找自我,找尋自己的夢想以及找尋自己是誰,當我們把自己丟在紐約的時候自己好像是零,所以能夠感覺自己真實跟原始的狀態,以及透過看來自世界各地的人,我覺得過程中會理解一些事情。

    Q2:第幾次來紐約了?這次來紐約想做什麼呢?
    萬芳:數不清了。會多待幾天去但還不確定要做什麼,會想看看這個城市現在是什麼狀況,把自己丟在紐約看看會發生什麼事情,沒有特別設定要幹嘛。

    Q3:如果把自己比喻成「浪」,覺得自己是什麼樣子的浪?
    萬芳:我沒有覺得自己是海浪,我覺得自己比較像是湖水。跟我有關的浪比較像是湖水會照映,他會因為有外來的因素形成漣漪或波,一個小小的浪或是大的跳躍的濺出來的水花,但是湖的本身又可能很深,又可能有暗湧。

    Q4:有沒有什麼特別想要傳達給紐約觀眾的事情?
    萬芳:這是我第一次去紐約表演。因為我跨越將近三十年的年代,這次的歌單真的讓我覺得比較難編排。有些觀眾會是從90年代聽萬芳,有些觀眾可能2015年之後才開始聽我的歌,所以我有點難以選擇。但是我有思考如果這次是以女性主題為主,我覺得我可以帶給紐約的是,透過女性的角色來跟大家聊聊,透過歌聲來串連在台灣的女性的樣貌呈現給大家。

    Q5:今年的主題是「Taiwanese Bae」,想請你跟我們分享一件最寶貝的人事物?
    萬芳:好難喔可以跳過嗎~ (思考很久之後)我覺得是演出的內容跟方式,因為我這個人而延伸出來的視角吧。

    Q6:如果想要推薦一件專屬台灣的事情給外國的觀眾,你會推薦什麼?
    萬芳:我覺得台灣的民間信仰是很有趣的,因為民間信仰形成的人民的性格是很有趣的,是一種很有意思的謙卑。台灣在地球上是一個很小的點,但是很多很有意思的事情在這麼一個小點上發生,包括前陣子同婚通過的事情,包括台灣有,可能是因為歷史的關係,有幾個宗教的人物可以讓大家在信仰上有些歸屬,比如說慈濟人,可以從台灣出發到全世界。911發生時只有救難團體能夠進入現場,一個是紅十字會,一個就是慈濟。我覺得這是很奇特的事情,一個女性出家,用「為佛教、為眾生」這樣的願力,在50多年後影響全球。

    Q1: Impression of New York
    Wan-Fang: My impression of New York is that many people go to New York to find his or her true-self, searching for dreams and search for who they really are. When we throw ourselves in New York, it’s like we are nothing so that we can feel the true-self and the most original stage of ourselves. By seeing people from around the world, I think it’s a process that you can understand some things.

    Q2: How many times have you been to New York? What are you looking forward to do in New York?
    Wan-Fang: I haven't counted how many times. I will stay a few days longer, but I'm not sure what I will do, I want to see what is happening in this city. I want to see what would happen if I just throw myself in New York. No special plans to do anything.

    Q3: If you compare yourself as 'waves', what kind of waves do you think you are?
    Wan-Fang: I don't think of myself as waves; I think I'm more like lake water. The waves that are more relatable to me is more like lake water reflections, there can be outside factors that cause the ripple or water waves, a small waves or a big jump's splash of water, but the lake itself can be very deep or even undercurrent.

    Q4: Is there anything special you want to deliver to the New York audiences?
    WanFang: This is my first time performing in New York. Since I've been active for over 30 years, it's hard for me to choose the songs for this performance. Some audiences might listen to Wan-Fang from the 90s, some audiences might listen to my songs after 2015, so it's hard for me to choose. But I think if the theme of this year is about female empowerment, I think I can bring my view as a female to New York, and by my music to show New York the look of the female of Taiwan.

    Q5: Since the topic this year is 'Taiwanese Bae', we want you to share with us what is your 'bae'?
    Wan-Fang: It's a tough question, can I skip it? (After a long time) I think the content and the way I perform because it's a view extended from myself.

    Q6: If you want to recommend something that is exclusive in Taiwan to foreign audience, what would you recommend?
    Wan-Fang: I think Taiwan's folk belief is fascinating because the people's personality that is formed by folk belief is a very interesting modest. Taiwan is a tiny dot on the earth, but a lot of exciting things happen in this small dot, such as legalizing gay marriage earlier this year, or beliefs that formed up from history, there are some religious people that everyone can attribute to, like TzuChi, started from Taiwan and to the world. When 911 happened there were only some groups that can go on site, one is the International Committee of the Red Cross, and the other one is TzuChi. I think this is something very interesting, a female monk with the willingness of "For Buddhism, for all beings," inspiring the whole world after 50 years.

    蘋果派是我請朋友來我家時常做的菜式,所以特意選了這個來做和大家Q&A的影片。剛巧蘋果派的餡料由蘋果加入不同的香料如肉桂、丁香、八角和糖煮成,濃濃的香料味就像提示我們聖誕節快到了。

    這個短片第一次用一邊做菜,一邊回答問題的形式表達,我在準備的時候就像一邊和大家閒談一樣,雖然我們之間很多也未有見過面,在這個影片的製作過程中又好像跟大家的距離拉近了。大部份的問題其實在message已回了,如果沒有放在影片裏請見諒喔,這是因為片長有限而我是隨意將問題放上去的,如遺漏了的請不要介意再給我訊息喔。

    多謝大家對我的提問,你們所有的問題很有意思呢。如有機會真的很想有機會一起和大家做料理互相交流,想想已感到會是難得的經驗了。

    製作蘋果派時有以下幾點可以留意喔。

    * 牛油派皮在製作上,在角落的位置厚度比較難以弄得平均,如利用不同的模具壓平底部和週邊,可令派皮的厚度保持平均。
    * 牛油派皮在多次擀皮後可能會軟化而容易付在保鮮膜上,如將麵團再放入冰箱/雪櫃一會,讓麵團變得硬一點又可再次塑型。
    * 蘋果派餡用到大量的香料,如果家中沒有其中一款可以直接省去。之前我做的時後只用肉桂粉,今次加上肉桂枝和蘋果同煮,味道更香濃了。
    * 在煮好蘋果派餡後可夾起同煮的香料,那便不會影響食感。

    希望大家喜歡這個食譜吧。

    份量:直徑22cm烤盤

    材料

    蘋果批皮材料

    中筋麵粉420克
    砂糖130克
    鹽一茶匙
    牛油250g
    雞蛋兩隻

    蘋果批餡料

    牛油10克
    紅蘋果(小)6個
    (去皮後淨肉大約600克)
    砂糖80克
    香草/雲尼拿精華一湯匙
    肉桂粉3茶匙
    檸檬汁一湯匙
    肉桂枝一條
    丁香兩粒
    八角一粒
    粟粉兩湯匙,用70毫升水拌勻

    蛋液(掃上批面)材料

    雞蛋半隻
    牛奶/水半湯匙

    做法

    批皮

    牛油從冰箱裏取出,待稍為放軟後,切粒。
    牛油和砂糖放入攪拌機或廚師機,以中速(我家的廚師機最快為五度,這裏用二度)攪拌直至拌勻。
    加入中筋麵粉以中速拌勻。
    雞蛋略為打發後,分三次加入麵團內拌勻。
    麵團形成後,分成兩半(批底及批面)用保鮮膜蓋著並塑形至長方型狀,以方便之後成批皮,以保鮮膜包好放在冰箱/雪櫃裏至少30分鐘至過夜。

    麵團冷卻好後,從冰箱取出待略為軟化後,大約30分鐘,取出其中一塊麵團隔著保鮮膜用麵棍將麵團推開成大約0.5厘米厚批皮。
    將批皮蓋在模具上,蓋著保鮮膜,用杯子或模具蓋平批底和週邊位置。放入冰箱,備用。

    另一份麵團隔著保鮮膜用麵棍將麵團推開成大約0.5厘米厚批皮,?成一厘米闊的長條型,將麵團條做出辮子,做出網型並裁成模具合適大小,放在牛油紙上,放入冰箱,備用。

    蘋果餡料

    蘋果去皮,切成薄片。
    在一個鍋子裏加入牛油10克,開中火,放入蘋果、砂糖、香草/雲尼拿精華、肉桂粉、檸檬汁、肉桂枝、丁香和八角,不時攪拌以防止結塊。
    粟粉兩湯匙加入水70毫升拌勻,加入蘋果內,煮至沸騰。
    關火後盛起,蘋果餡料可早一日準備放在冰箱內,令蘋果更有香料味。

    組合

    焗爐預熱至180攝氏度。
    雞蛋略為打發,和牛奶/水拌勻。
    批皮和批面從冰箱內取出,分別均勻擀開。批面擀開後切成一厘米闊長條,編成格紋。批皮放入模具,蘋果餡倒入批皮內,上面蓋上批面。
    在批面掃上蛋液。
    註:如麵團擀開後變軟,可放在雪櫃/冰箱中待略為凝固後才繼續製作。
    放入焗爐以180度焗一小時,直至表面金黃。在週邊蓋上錫紙以防止燒焦。
    蘋果批從焗爐取出後放涼,切件後享用。

    Apple Pie
    Baking tin with 22cm diameter

    Ingredients
    Apple pie crust ingredients
    420g all purpose flour
    130g granulated sugar
    1 teaspoon of salt
    250g of unsalted butter
    2 eggs

    Apple pie filling ingredients
    10g of butter
    6 small size apples (about 600g after peeling)
    80g granulated sugar
    1 tablespoon of vanilla essence
    3 teaspoons of cinnamon powder
    1 tablespoon of lemon juice
    1 cinnamon stick
    2 cloves
    1 star anise
    2 tablespoons of corn starch, mixed with 70ml of water

    Other ingredients
    1/2 egg
    1/2 tablespoon of milk or water

    Directions

    Pie crust
    Take out the butter from the fridge. Cut it into cubes.
    Put the butter and granulated sugar into the blender or kitchen machine, blend with medium speed until it is well mixed. Add all purpose flour and mix well.
    Beat the egg, put into the dough in three batches.
    After the dough is formed. Split the dough into two. Roll the dough in rectangular shape. Cover it up with plastic wrap and put it into the fridge for 30 minutes or overnight.
    Take out the dough from the fridge and let it warm for a while . Roll it to 0.5cm thick. Put the dough on the baking tin and cover with plastic wrap. Press the dough evenly with a mold or a cup. Put it into the fridge again and save for later.
    Roll another dough to 0.5cm thick. Cut it into stripe and make the net. Put it on the baking paper and store in the fridge and save for later.

    Apple filling
    Slice the apple.
    Put 10g of butter in a cooking pot. Turn on the heat to medium. Put sugar, vanilla essence, cinnamon powder, lemon juice, cinnamon stick, cloves, star anise and stir it to prevent it clogs.
    Mix the corn starch with the water and put it into the apple. Cook until it boils.
    Turn off the heat and cool down a little bit.
    The apple filling can be stored in the fridge for later use or it can be used right after it cooks.

    Assemble
    Pre-heat the oven to 180 degree celsius.
    Beat half egg and mix well with 1/2 tablespoon of milk or water.
    Take out the pie crust from the fridge and put the cooked apple inside. Cover with another pie crust on the top. Brush with the egg wash.
    Bake the pie for 1 hour in 180 degree celsius. Cover the edge with tin foil to prevent it burns.
    Cool the apple pie in room temperate for a while after baking. Cut it into slice and serve.
