This year marks the biggest ever Decanter World Wine Awards(DWWA), which is already the world’s largest and most influential wine competition thanks to a rigorous judging process overseen by international experts.

DWWA 2021 included a first Best in Show medal for a ‘Vin Jaune’ – or ‘yellow wine’ – a speciality of the Jura region of eastern France. The winning wine was Domaine Berthet-Bondet, Château-Chalon 2013, made from 100% Savagnin.

Wine cooperative St. Jodern Kellerei in the Valais region already farms some of Europe’s highest vineyards, and it reached the summit of DWWA in 2021 after its ‘Heida Barrique’ 2019 won a Best in Show medal.

We get entries from every corner of the wine world, so it is as it were the closest you can get to a universal benchmark.”

其實可以用我們自己的語言來翻譯. 但我覺得跟著這樣的思考邏輯來面對一件事情是很有意義的. 這有點像我們說的" 飲水思源"" 誰知盤中飧粒粒皆辛苦" 也可以有比較不同的涵義---也可以想成是" 吃米不知米價" 有沒有發現? 我們都會用米來表達" 食" 的概念.吃飽沒? 添一碗飯... 都是我們對米食的眷戀. 所以說米對我們來說是很容易去貼近觀感的主食 .

但, 你真的知道以麵包為主食的歐洲人是怎麼吃麵包的嗎?
我覺得應該幫這樣的一種主食發聲.
米飯是我們的主食. 我們從小吃到大的飯裡面. 含有極少的膳食纖維. 和極少的蛋白質. 我們知道吃一碗飯大概自己感覺多飽. 甚麼時候有可能就餓了. 但我們的習慣中卻很難知道吃一片麵包可以撐多久不會餓.
當德國媳婦久了. 我發現在日常飲食生活中. 晚餐的大麵包如果你說你吃了4片 . 大家會覺得你的胃口真好.吃半片代表胃口不好.或: 你是不是在減肥( 我公公對我翻白眼的對話)
這是這裡的表達關心觀察的方式.
麵包絕對不是簡單的.
同樣都是穀類. 麥子裡所含的蛋白質至少有9% . 但台灣人說吃麵包會容易餓! 那是因為吃的是所謂的精緻澱粉加糖加油做成的麵包. 和這裡拿來當主食的麵包是不一樣的. 就想我們不會在米裡加油添醋. 他們對於每天吃的麵包也不會那麼花俏. 因為在寒冷的冬季. 全麥及裸麥的纖維還有蛋白質有可能就是保命的食物.多加很多食材只會讓麵包加速腐敗. 在這個粉絲頁裡有嚐試只用麵粉, 水, 鹽, 酵母來做麵包的人. 應該知道要得到好的成品不是件很容易的事. 如何用成品搭配食物又是另一門學問.
今天回到公婆家. 翻到我2013年五月收集的一篇報導. 在多年後的今天回讀又有不一樣的感受.
德國人的麵包不簡單. 所謂的300種不同的麵包都是因為由不同成分的穀類及比例所組成. 就像我們吃十穀米飯.我們要煮那種飯得泡水一晚. 但要把它經過發酵烘焙來呈現所下的功夫就不是那樣而已.
昨天在德國的烘焙社團中有個新手問了一個問題: 我手上有一包裸麥粉及一點新鮮酵母. 要怎麼做成麵包?
這個人得到的回答是請先從一般麵包開始研究.
這就是我鍾情於研究這種單純美麗的原因, 因為你得靠經驗去不斷累積不是一蹴即成.
但真的~ 不要認為麵包米飯會讓你胖.
