談及川菜,多數人都會先提及「麻辣」。這種說法對川菜味型系統中的另外23種味型似乎不太公道。川菜其實有24種始於甜、酸、麻、辣、鮮、香和鹹的交融和強弱排列的味型。單是以辣味為主軸的味型便有麻辣、酸辣、泡椒、怪味、糊辣、紅油、陳皮、薑汁和芥末等。話雖如此,正宗的川菜菜式卻有70%都是不辣。可見川菜底蘊深厚且靈活性之妙美高梅蜀道則以正確、正宗和正味的方式把川菜呈現於澳門,一起來看看以下的蜀道菜式推薦:
吉慶老壇泡椒大明蝦|泡椒味型

大明蝦極之爽彈嫩滑,配上俗稱「魚辣子」的老壇泡椒,辣而不燥帶微酸,可以增進食慾又能為明蝦提鮮,是全晚最愛!
The appetizing pickled peppers has hidden flavour of spicy and citrusy, can elevate the umami of the succulent prawn.
開水白菜|咸鮮味型
Poached Chinese Cabbage in Bouillon
「開水」不是白開水。這裡的「開水」是蜀道楊師父精心用母雞、母鴨、火腿、乾貝、肘子等上料吊制的上湯,再用雞肉蓉,豬肉蓉澄澈,鮮美無比。湯要味濃而清,清如開水一般,才叫這麼個不起眼的名字。不叫「上湯白菜」也是反其意用之,人不可貌相,菜也不能望文生義。
The "water" here is no mere water. The chef first makes a stock from chicken, duck, ham, dried scallop, and pork shank. The stock is then clarified with minced chicken and minced pork, making a clear yet savory consomme, with the appearance of pristine water, hence the name. Of course, not calling the dish "napa cabbage in consomme" also comports with the adage of not judging a book by its cover.
菌香蟲草花|糊辣味型

主廚將燒熱的料油激入來自四川的小米椒和大紅泡花椒製作糊辣油— 糊辣味及麻味兼備。蟲草花炸至脆韌,加上糊辣口感,愈嚼愈香。
Chef meticulously selected the Sichuan peppercorns to blend with the hot oil, create a charming numb and spicy flavours. Goes well with the crunchy cordyceps.
四川擔擔面|怪味味型
Dan Dan Noodles
蜀道的四川擔擔麵用了不少四川當地調味,如保寧醋、郫縣豆瓣醬、四川辣椒二荊條及燈籠椒等,味道濃惹,大麻大辣,口味獨特。
The dandan noodle at Five Foot Road uses many Sichuan ingredients, such as Baoning vinegar, Pixian broad bean paste, Er-jing-tiao chili, and Chinese habanero pepper. The palate is intense and piquant.
糍粑冰粉|甜香味型
Chilled Nicandra Jelly
冰粉是一種以假酸漿果洗出來的甜點,與台灣愛玉類似,卻不是愛玉。糍粑則是把熟糯米飯搗成泥狀而成。這碗糍粑冰粉就是冰涼香甜的湯品,蜀道在糖水中加了桂花蜜,搭配冰粉與糍粑,夏日清涼甜入心。
Nicandra jelly is made with washing the gel out of Nicandra fruits. The glutinous rice cake is made from scratch by mashing cooked sticky rice. Served with an ice cold sweet soup, seasoned with osmanthus honey. It's the ideal summer treat.

這篇來自【CUP】上的文章,帶我們看到這次的疫情給了大家一個機會反思通勤的價值與意義,也帶我們進一步思考工作與住家之間應該保有多大的「物理距離」?

隸屬美國心理學會的持牌臨床心理學家 Lynn Bufka 表示:「慣例和常規對我們極有裨益,因為它們都是一些我們明白以及知道該要期待甚麼的事。」她解釋:「建立慣例讓我們毋須去想下一步,直接知道『我的一天就是這樣度過』,它幫助我們輕鬆從 A 點到達 B 點。」然而,遙距辦公卻打亂了人們「出門上班」的常規,並因此感到無所適從,甚至為之鬱悶、煩躁及困擾。
佛羅里達國際大學商學院副教授 Ravi S. Gajendran 形容,通勤這種強制停頓,標誌著人們在工作身份,與父母、配偶、朋友等其他身份之間的轉換。「疫症期間全天在家工作,令人難以在工作和家庭的角色間過渡。很多人一天之內要在員工和家長/伴侶之間轉換多次。譬如跟孩子糾纏後,難以立刻跳到 Zoom 會議;受公事折騰壓迫後,也難即時做回耐心和關懷的配偶。」
愈來愈多人因此成為「假通勤」的信徒,像英國商業發展顧問公司 Elevate Greater Manchester 聯合創辦人 Ilona Alcock 及其丈夫,便以慢步來「區分居家與工作」,更指此舉「是我倆夫婦的命脈」。她認為:「它給我每早同一時間起床的原因,並讓我過上較有效率、活力的一天。出門走動對我的精神健康起了龐大的正面影響。它於我的一天有積極作用,我常在步行中想出最好的念頭。」

根據因緣而論,吾已降生「東土」,多世矣。在眾多的佳節中,「覺受」最直接,最強烈的,按照「排行榜」的首二三名,都是東方節日。其他的節日,吾還是歡欣地接納的。只不過,吾認為東方節日的「內涵」及意義,較踏實、較深遠。就拿春節來說吧!所謂春節,顧名思意就是大地回春,新的一年的開始,百姓於過去的一年,辛勞刻苦的「耕做」,歇一歇,大伙團圓相聚,慶豐年,養精蓄銳,展望新年更比往年好。
未成為師父前,實不知為何過年要添新裝。一味只是隨俗的「裝模作樣」,好笑的是,還樂此不疲呢!成為師父後,自然而然的就明白了,過年添新裝的真實義。原來,除了人與空間之外,季節和節日,亦然有它們的磁場及氣場。就因如此,過年過節添新裝,是有其邏輯性與必要性的。當中所含蓋的,有除舊迎新、除晦氣迎旺氣、祝福自己身體健康、今年更比往年好,等等。
元宵佳節可謂,新春佳節暫且告個段落,大家各自回到自己的崗位,繼續的努力,更上一層樓。古時候的人們,在這歡欣美麗的佳節裡,喜歡以猜燈謎的遊戲,來歡度此佳節。可是她他們卻沒有另一層的智慧,知曉一切世間的享樂,其實都是第一時間的在削減福報,而且是有去無回的。因此,多少這類的享樂人兒,晚景甚悲慘,妳你們可知否?請再三思。
但,在這來臨的元宵佳節,玳瑚師父再次引領大家,圓智溫宵聚慶佳節。一來增長福慧,二來多親近善知識,學習消業障,增大福田之法。三來淨化身心。四來納福而不是消福。五來也讓妳你們的祖先靈、纏身靈、水子靈,一同得到光明淨化,謂之為冥陽兩利。真真正正的修行人,她他們是絕對可以將「享樂」,轉化成納福的。反之,一般凡夫走卒,都在消耗她他們的功德與福份啊!

According to karmic affinity, I have been reborn for countless lives in the Land of the East. Among all the festivals, the top three that give me the strongest and most direct vibes are all of Eastern origins. Of course, I joyfully accept other festivals too. I just personally feel that Eastern festivals have a deeper essence and significance to them. They come across as more grounded and deeply rooted. Take the Spring Festival for instance. This festival celebrates the renewal of Mother Earth, and the herald of a new year. A celebration of the hard work by the commoners in the previous year, and it is time to take a breather and gather together as families and friends to celebrate the bountiful harvest! It is also the time to recuperate and aspire to an even better year ahead.
Before I became a Master, it was a complete mystery to me why there is a need to get new clothing for the Chinese New Year. I followed this tradition blindly, and the funny thing is, I enjoyed and never got tired of it! After I became a Master, the real significance of this tradition of buying new clothing for the Chinese New Year became naturally clear. In actual fact, other than man and the environment space, seasons and festivals carry their unique magnetic and energy fields. Therefore, the tradition of refreshing your wardrobe becomes logical and necessary. It entails the removal of the old to make way for the new and the eradication of ill-luck and welcoming of prosperous energy. It also a wish for your own good health and an even better year ahead, etc.
The Fifteenth Day of the Lunar Month signifies the end of the Spring Festival Celebration. After this day, everyone would return to their roles and duties and continue to strive for better results. People from the olden days liked to participate in solving lantern riddles, as part of the celebration of the Fifteenth Day of the Lunar Month. Unfortunately, they did not elevate their wisdom to realize that in this world, all the celebrations and enjoyment would only lead to an immediate and irrevocable eradication of their merits and fortunes. That is why those people who enjoyed excessively in their lives suffered a tragic old age. Are you aware of this? Please think thrice.
However, come this Fifteenth Day of the Lunar Month, also known as the Lantern Festival, Master Dai Hu will once again lead everyone to celebrate the occasion with Wisdom and Warmth. Why should you join me in this celebration? First and foremost, you will grow in virtues and wisdom. Secondly, be near a virtuous person of knowledge and learn the art and practice of karma eradication and merits enhancement. Thirdly, to purify your body and spirit. Fourthly, you will garner more merits instead of wasting your existing ones. Last but not least, your ancestor spirits, karmic debtors, fetal spirits, shall be endowed and cleansed by the Light. This is indeed benefiting sentient beings from our realm as well as the Netherworld. A true spiritual cultivator can absolutely generate loads of merits and fortune even from acts of enjoyment. On the other hand, the common man on the streets, can only exhaust his or her merits and fortunes!
