Wasn't sure if I had anything special for the upcoming Valentine's Day until I add fresh strawberries to the 🍌Vegan Banoffee Cheesecake 🍌 I was preparing for my new recipe post. 💕 However, because I want to share this cake with you before Valentine's Day, here's the recipe! . . Ingredients: . . - Base 42 g pitted dates 30 g walnuts 45 g rolled oats 15 g almonds salt . . - Caramel Cheesecake Layer 60 g raw cashews, soaked for 3-5 hours 120 g coconut milk 50 g silken tofu, drained 100 g pitted dates 1 tsp apple cider vinegar 1 medium banana ~120 g . . - Vanilla Cheesecake Layer 60 g raw cashews, soaked for 3-5 hours coconut butter 30 g soy milk 60 ml 1 Tbsp maple syrup 1/2 medium banana ~60 g Method: 1. Make the base: Use a food processor to chop the pitted dates first. Then add other ingredients. Continue to process to bring all together. Add a dash of water if the mixture is too dry. 2. Transfer the mixture to a 6-in cake pan. Press it down to form our base. Place into the freezer while we make other layers. 3. Make the caramel cheesecake layer: Drain out the water from the cashews and give them a rinse. Add all ingredients to a blender to blend until smooth. 4. Take out the pan from the freezer. Pour the caramel cheesecake filling into the pan. Give it a gentle wiggle to even out the mixture. Return to the freezer for 2 hours or until the filling is set. 5. Slice the banana into coin-shape. Place them on the sides of the pan and return to the freezer. 6. Make the vanilla cheesecake layer: Drain out the water from the cashews and give them a rinse. Add them with other ingredients in a blender to blend until smooth. 7. Take out the pan from the freezer and pour the vanilla cheesecake mixture in the middle of the banana-wall. Return to the freezer for 2 hours or until set. Add other toppings like berries or coconut whipped cream as your heart desires. EAT!
