[🥃An old 10yo taste much better than a new 30yo?]
If you ever have a chance to sample old whiskies that were distilled earlier than 1980, you would be thoroughly amazed 😳by the richness and fruitiness 🍑exhibited in these older expressions that cannot be found in contemporary bottlings. But what makes these old whiskies so delicious and desirable? Here are some insights shared by the old-whisky authority - Angus MacRaild during the Whisky Fair Takao in Kaohsiung, Taiwan. 1) Yeast and fermentation: several decades ago, distilleries often use brewer's yeast to conduct fermentation; however, after the 1990's, distilleries started using distiller's yeast in order to generate higher yield due to whisky's increasing popularity. Angus believes that switching the yeast choice would significantly alter the taste of whisky. Separately, distilleries used to hold longer fermentation period, and these longer sessions (55 hours or more) typically would bring out more fruity notes in whiskies. Distilleries today reduce their fermentation time ⏳in order to increase productivity. These factors certainly act as important differentiators in old and contemporary whiskies. 2) Casks: casks used for maturation, especially sherry casks, are quite different between old and modern whiskies. Old sherry casks used to come from casks that were ready for bottling, these casks contained drinkable and therefore higher quality sherry wine. Sherry casks used by distilleries today would not contain sherry wine used to drink by itself. The sherry produced from these casks would typically be made into vinegar or brandy. And this is certainly one explanation for why sherry cask whiskies taste very different between the old and modern whiskies.
