    冠軍Kwok Ho Man 的Recipe
    咖啡 : 16.5克
    水 : 245ml soft mineral water (沒說到ppm多少),80度水溫
    沖煮方式 : 正置法
    過濾器材:濾紙
    研磨刻度:比手沖咖啡還粗

    - 加熱水到80度
    - 加25ml 的水
    - 攪拌10次
    - 30秒悶蒸
    - 在1分半的時間內加入剩下的水
    - 壓30秒
    - 留下40克在愛樂壓裡
    - 總萃取時間2分10秒

    Champion recipe:
    Kwok Ho Man
    Coffee: 16.5g
    Water: 245g of soft mineral water @ 80°C
    Brewer: Traditional Up-right Method
    Filter: Paper
    Grind coffee slightly coarser than filter coffee
    Heat water to 80°C
    Add 25g of water
    Stir 10 times
    Allow 30 seconds of bloom
    Add the rest of the water in 1.5 minutes
    Press down for 30 seconds
    Leave about 40g of slurry in the Aeropress and discard
    Total brew time - 2:10

    2nd place recipe:
    Tong Wing Hong
    Coffee: 30g
    Water: 250g @ 83°C/87°C
    Brewer: Inverted
    Filter: Paper
    1.Grind coffee at "11" on a Malkoenig EK43
    2.Heat water to 83°C
    3.Add 130g of water
    4.Stir five times
    5.Allow 50 seconds of bloom
    6.Press down for 25 seconds
    7.Add the rest of the water@87°C
    Total brew time - 1:35

    3rd place recipe:
    Chan Wai Leung Zero
    -86c water / 20g coffee / 250g water
    -add 50g water of bloom 20 seconds
    -add 200g water after 20 seconds
    -turn a round stir 20 times
    -push slowly to finish
    -Brew times total 2:30

    4th place recipe:
    Cho Chui Sze
    Grinder: Self-prepared
    Scale: Self-prepared
    Coffee: 18g
    Water: 230g @ 90-95°C
    Brewer: Upright
    Filter: Metal
    Chill the beans
    Grind coffee
    Heat water
    Add all of water
    Let it sit for 2-4 minutes
    Press down for around 30 seconds

    我覺得 你不一定要看完這影片,但我想跟你們分享ㄧ下我很同意的幾個點!:

    1.你可以試著一個星期都不看新聞。
    (因為 世界到處發生的不好的事件事故 會暫時對你停止,那些來自擔心、不安全感的壓力會少一些)

    2.你可以試著關掉你的'過去'或'未來'跟你說話的聲音,而活在現在!
    (因為'當下'才是真的,儘管去想過去的羞恥感或後悔的事,我們是不能改變過去的,未來也一樣,擔心未來或者幻想很多事 其實也都還沒發生,你只能在'當下'駕駛你的生活)

    3.冥想~~~
    這件事 我沒能做到,可能是因為沒有冥想的音樂CD?hahahahahahha,但我在小時候學跆拳道 有體驗過冥想,做完冥想 你會從繁雜的思緒 變得像是快睡著 但是!慢慢的 思緒會沈澱 變不混濁的,持續5分鐘左右?,睜開眼睛的那瞬間 的確心情會爽快一些。
    (也許你可以上網抓個冥想音樂下來 開始行動!)

    4.運動!!!!!!!!
    這真的是超級有效且不難的事,我們卻那麽的不容易做到!這樣太傻了!
    跑步或騎腳踏車或任何你有興趣的運動!走走路也好,都會讓你突然覺得 "有點好笑,我剛在那邊悶著幹嘛 我好像傻傻的,現在心情好好的啊 那些等著解決的事情也沒什麼難解決的啊!"

    所以當你覺得有壓力 很無奈 有點憂鬱 的時候 試試看上面的幾件事!

    然後
    不要把自己關閉在自己ㄧ人的空間裡...

    試著豁出去自己一直想做卻害怕的 那件事!

    所以我今天才能夠在台灣唱歌給你們聽,因為我很愛音樂,同時也因為很多人陪著我走到這,主要也是爸爸推我的那一把,我就從韓國江陵的我們家 我的房間走出來 飛到台灣來了:)

    我走出我的房間 慢慢發現 其實比想像中 蠻多人是願意幫助我的....

    還有!不要害怕世界末日!

    Hi, everyone :) Today we'll going to show you how to make Taiwanese-Style Iced fruit tea with secret ingredient “old school pineapple jam” !

    Taiwanese-style iced fruit tea is famous and classic, it’s also my top one drink. It tastes a little sour and sweet, you can also eat plenty of fruits, just like passion fruit, kiwi, orange, apple and kumquat. This recipe has a secret ingredient ⇢ Old School Pineapple Jam. I have to say, this is the bomb to make this drink to the next level.

    If you love fruit tea, you must try this recipe. You will fall in love with it right away. It’s
    refreshing, fruity, and full of wonderful aroma. And it’s pretty easy to make. Hope you enjoy. :)

    Classic Taiwanese-Style Iced fruit tea w/ Old School Pineapple Jam

    ❋ Can make 500ml

    Ingredients
    pineapple 400g
    sugar 180g
    maltose 1-2 tbsp
    half a lemon
    passion fruit 1
    calamansi 2
    dried plum 1
    1/4 an apple
    1/4 an orange
    half a kiwi
    ceylon black tea bag 1


    1. Cut the pineapple in half through the center, and then cut into 3 for each half. Remove the core.
    2. Slice the pineapple into 4mm pieces, not to thick.
    3. Place 400g pineapple slices into a saucepan and add sugar, squeeze half a lemon juice. Cook over medium until the sugar is dissolved.
    4. Bring the pineapple mixture to a boil, skim off the scum and reduce the heat to a low. Cook for 40-50 minutes. Be sure to stir the mixture frequently.
    5. After 40 min later, the pineapple jam turns golden brown, then add maltose and stir until dissolved. Remove from heat. Cover with a lid and let jam to steam in the pot for another 10 minutes.
    6. Spoon the hot jam into a sterilized canning jar. Let cool and set aside.
    7. Cut apple and kiwi into slices, and cut orange into segments. Cut passion fruit and calamansi in half.
    8. Add 70g pineapple jam into tea pot, and then add dried plum, scoop out the passion fruit  edible seeds and juicy. Squeeze the cut calamansi but don't throw away the peel, put them in. And then add apple slices, kiwi slices and orange.
    9. Meanwhile, pour 250ml hot water into a shaker, place a tea bag  into hot water for 3 minutes, then discard tea bag. Fill the shake with ice, secure the lid, hold the shaker with both hands and shake vigorously over your shoulder until the outside of shaker frosts up.
    10. Pour iced tea into tea pot, and mix all ingredients well. It's down, enjoy.

    【素食第16道】素食蔬食「彩色繡球」│素食蔬食「彩色绣球」│Steamed Colorful Balls

    材料:
    素肉醬、紅甜椒、青椒、黃甜椒、芹菜、薑末、太白粉

    調味料:
    鹽、香菇粉、白胡椒粉、香油、太白粉水

    作法:
    1. 將紅、青、黃三種椒分別剖開、去籽後洗淨,切小丁,然後各自辦上1小匙太白粉待用。

    2. 素肉醬加入香油1小匙及薑末拌勻後擠成小丸子狀,再分別沾黏上不同顏色的甜椒丁,全部完成後放入蒸鍋,用中火蒸約15分鐘即可取出排入乾淨的盤子裡。

    3. 最後把芹菜摘除葉子,洗淨後切末,再用少許油爆香,加入200cc的水,用大火煮滾後加入鹽、香菇粉及胡椒粉調味,然後用太百份水勾薄芡,起鍋前滴入香油即可淋在蒸好的菜色繡球上。

    材料:
    素肉酱、红甜椒、青椒、黄甜椒、芹菜、姜末、太白粉

    调味料:
    盐、香菇粉、白胡椒粉、香油、太白粉水

    作法:
    1. 将红、青、黄三种椒分别剖开、去籽后洗净,切小丁,然后各自办上1小匙太 白粉待用。

    2. 素肉酱加入香油1小匙及姜末拌匀后挤成小丸子状,再分别沾黏上不同颜色的 甜椒丁,全部完成后放入蒸锅,用中火蒸约15分钟即可取出排入干净的盘子里 。

    3. 最后把芹菜摘除叶子,洗净后切末,再用少许油爆香,加入200cc的水,用大 火煮滚后加入盐、香菇粉及胡椒粉调味,然后用太百份水勾薄芡,起锅前滴入香 油即可淋在蒸好的菜色绣球上。

    Ingredients:
    vegetarian meat paste, red bell pepper, green pepper, yellow bell pepper, string Chinese celery, minced ginger, cornstarch

    Seasonings:
    salt, shiitake mushroom powder, white pepper, light sesame
    oil, cornstarch solution

    Methods:
    1. Halve the three color peppers open and discard the seeds, then rince well and dice. Seperate in three bowls and add 1T cornstarch in each bowl to mix well with the peppers.

    2. Add 1T of light sesame oil to vegetarian meat paste along with minced ginger added. Mix well and squeeze into small balls. Roll around in peppers to make diffrent color balls. Repeat to finish all and steam in steamer over medium heat for about 15 minutes and remove to serving plate.

    3. Discard leaves from Chinese celery string and rinse well, then mince. Heat a little oil in wok and stir-fry minced celery until fragrant. Pour in 200cc of water and bring to a boil over high heat. Then add slat, shiitake mushroom powder and pepper to taste. Thicken with cornstarch solution and drizzle with light sesame oil, then drizzle over the steamed three color balls.

    【素食第14道】素食蔬食「燴素魚排」│烩素鱼排│Braised Vegetarian Fish

    材料:
    素魚排、金針菇、紅甜椒、薑絲、枸杞

    調味料:
    鹽、香菇粉、胡椒粉、香油

    作法:
    1. 金針菇切除根部,洗淨;紅甜椒切絲待用。
    2. 將素魚排放入燒熱的炸油煎至表面金黃色即可盛在盤中待用。
    3. 燒開200cc的水,先加入調味料拌勻,再加入其他材料,煮熟後淋在炸好的素魚排上即可。

    【素食第14道】素食蔬食「烩素鱼排」│Braised Vegetarian Fish

    材料:
    素鱼排、金针菇、红甜椒、姜丝、枸杞

    调味料:
    盐、香菇粉、胡椒粉、香油

    作法:
    1. 金针菇切除根部,洗净;红甜椒切丝待用。
    2. 将素鱼排放入烧热的炸油煎至表面金黄色即可盛在盘中待用。
    3. 烧开200cc的水,先加入调味料拌匀,再加入其他材料,煮熟后淋在炸好的素鱼排上即可。

    Ingredients:
    vegetarian fish, golden needle mushrooms, red bell pepper, shredded ginger and medlae

    Seasonings:
    salt, shiitake mushroom powder, pepper and light sesame oil

    Methods:
    1. Rinse young day lily stems well and cut into small sections. Discard the roots from golden needle mushrooms and rinse well. Rinse red bell pepper well, discard seeds and shred.

    2. Deep-fry in smoking oil until golden on the surface and remove to plate.

    3. Bring 200cc of water to a boil, add seasonings as well as other ingredients. Cook until done and drizzle over the deep-fried fish. Serve.
