    My Kids love sweet potatoes. Sometimes we just steam them and eat them for breakfast or snacks. It’s rich in an antioxidant called beta carotene, which is very effective at raising blood levels of vitamin A, particularly in children. Sweet potatoes are nutritious, high in fiber, very filling, and delicious. They can be eaten boiled, baked, steamed, or fried. So today I want to try steaming them and making them into a roll. I like warm desserts, this can be one warm dessert that I will start making more often.

    Ingredients for 1 foot long roll:
    Step1:
    . 320g Sweet potato (orange colour or others)
    . 265g milk * Mix these 2 together first into a smooth paste and steam for 20 mins

    Step 2:
    . 110g Glutinous rice flour
    . 30g Cornstarch
    . 50g sugar (you can reduce amount or don't put at all)
    . 30g Corn oil or coconut oil
    * Mix STEP 1's paste with STEP 2 ingredients, BUT mix in the oil last. Then steam for 25 mins. After steaming, roll the dough for over 20+ times and then cling wrap and lift in the refrigerator for 1 hour before you roll it flat with cooked flour.

    Cooked Flour For Rolling Ingredients:
    . 50g Glutinous rice flour
    * Must be cooked in a pan until it turns slight yellowish (no oil)

    Actually it is pretty simple. Maya reminded me that we have red bean paste, so I have added a small red bean sweet potato roll for her. Not too bad I must say. The sugar in my video was being reduced, I will actually put a little more if you want it to be a sweet dessert. Try it then you will know how to adjust in your next cooking.

    Many years ago when I was in Germany, Oma made this apple pie and I have felt in love right away with this version. I have made many apple pies in the past, but this one is simplier and nice.

    When I was studying in Canada, I have learnt from my teacher's parents the Italian style apple pie with cinnamon. YUMMY.. I love it too.

    Let me share this recipe first.

    Ingredients for the BASE/DOUGH :
    . 250g Flour
    . 150g Sugar
    . 125g Unsalted Butter (I like using Lupak)
    . 2 eggs
    . 1 teaspoon Vanilla
    . 1/2 teaspoon Baking powder
    * Mix all together, wrap with cling wrap and leave inside the fridge for 1/2 hour.

    Ingredients for top Crust/Crumb :
    . 125g Flour
    . 150g Sugar
    . 90 g Butter
    * Mix all together, wrap and leave inside the fridge for 1/2 hour.

    Other Ingredients :
    . 1kg Apple (Best to be yellow apples or Green Apples)
    . 120g or more over the crumble for baking
    . Vanilla Ice Cream

    哥倫布芝心雞卷
    Chicken Cordon Bleu

    份量:1人
    需時:30分鐘

    材料:
    雞胸肉 ... 1塊
    火腿片 ... 2片
    芝士片 ... 2片
    雞蛋液 ... 1顆
    香草碎 ... 10克
    低筋麵粉 ... 100g
    麵包糠 ... 100g

    調味料:
    鹽 ... 適量
    胡椒碎 ... 適量

    食譜:
    第一步 雞胸蓋上保鮮紙用錘仔拍鬆拍平時,灑上適量鹽胡椒調味
    第二步 雞胸放在保鮮紙上依序放上火腿、芝士片、火腿然後捲起成條狀
    第三步 放入冰箱雪半小時定型
    第四步 雞胸卷依序拍上低筋麵粉、蛋液、麵包糠
    第五步 焗爐 180度至200度焗20分鐘,取出塗上橄欖油,再焗多5分鐘
    (或可以半煎炸方式每邊炸2分鐘炸至金黃色,撈起靜止3至5分鐘。)
    第六步 攤10分鐘,雞卷切件擺盤完成

    Serving: 1
    Preparation time: 30 minutes

    Ingredients:
    Chicken breast ... 1pc
    Ham slices ... 2pcs
    Cheese slices ... 2pcs
    Beaten egg ... 1
    Herbs ... 10g
    Cake flour ... 100g
    Bread crumbs ... 100g

    Seasoning:
    Salt to taste
    Black pepper to taste

    Recipe:
    STEP 1 Place the chicken breast between two sheets of cling wrap and pound until flat. Add salt and black pepper to taste.
    STEP 2 Place hams, cheese slices, and then hams again respectively. Wrap tightly into a roll.
    STEP 3 Chill the roll in the fridge to set for 30 minutes.
    STEP 4 Dredge the roll in the flour, the beaten egg, and the bread crumbs respectively.
    STEP 5 Bake at 180 to 200 degrees for 20 minutes. Brush with olive oil and cook for another 5 minutes.
    (Or fry it for 2 minutes on both sides until golden brown. Let it rest for 3 to 5 minutes.)
    STEP 6 Let it rest for 10 minutes. Slice the roll and serve.

    藍莓鮮奶凍(2人份量):

    材料:
    濃度3.5牛奶700毫升
    急凍藍莓
    魚膠粉2茶匙
    糖40克

    處理:
    1. 魚膠粉放入器皿,加入少量滾水攪勻,再用滾水熱住魚膠粉器皿。
    2. 煲700毫升牛奶,加入糖40克,中慢火煲至60度,加入魚膠粉,攪勻就可以了。
    3. 茶隔隔去泡沫,攤凍。
    4. 封好保鮮紙,放雪櫃7~8小時。
    5. 加入2湯匙藍莓,完成。

    Milk pudding with blue berries (servings for 2):

    Ingredients:
    Hokkaido 3.5 milk 700ml
    Frozened blue berries
    Gelatin 2 tsp
    Sugar 40g

    Steps:
    1. Put gelatin in a glass ware. Mix with little boiled~up water. Then put the ware in a bowl of boiled~up hot water.
    2. Boil up 700ml of milk. Add 40g sugar. Boil up at medium~low flame to 60 C. Mix with gelatin.
    3. Use a filter to remove the bubbles. Cool it down.
    4. Wrap with cling wrap. Put in refrigerator for 7~8 hours.
    5. Add 2 tbsp of blue berries. Serve.

    雞翼牛脷魚麪鍋

    材料:
    魚陣營陣陣魚麪3個
    至營百搭鮮魚湯1條
    惠里豚牛奶泰國雞翼6隻
    香港地牛脷2包
    辣椒仔1隻
    芫荽1棵

    處理:
    1. 雞翼,清水解凍,用廚紙索乾,加入調味料:
    a. 胡椒粉少許
    b. 蠔油1湯匙
    c. 老抽1茶匙
    撈勻,醃5分鐘。
    2. 牛脷,拆開包裝保鮮紙,用廚紙索乾水分。
    3. 辣椒仔,切粒。
    芫荽,切碎。

    烹調:
    1. 大火在鑊中燒熱少量油。
    2. 放牛脷在鑊內煎香,每面各煎大約10秒。
    3. 加入少量黑椒鹽。
    4. 夾牛脷上碟。
    5. 在鑊中加入少量油。
    6. 放雞翼煎香,兩面都略煎至金黃色,加入清水100毫升,冚蓋,炆至收汁就可以了。
    7. 在湯鍋上剪開魚湯,加入清水500毫升,大火煮滾。
    8. 魚麪預先放室溫解凍15分鐘。
    9. 魚麪,放入魚湯煮滾。
    10. 雞翼已炆至收汁,放上碟。
    11. 魚麪已煮好,放好牛脷及雞翼在上面。
    12. 放上辣椒粒及芫荽碎在麪上。
    13. 完成,可享用。

    Ox tongue fish noodles claypot with chicken wings

    Ingredients:
    Fish noodles 3 Nos.
    Fish soup cube 1 No.
    Chicken wings 6 Nos.
    Ox tongue 2 packs
    Chili 1 No.
    Coriander 1 No.

    Preparation:
    1. Chicken wings, defrost with tap water. Dry with kitchen towels. Add seasoning:
    a. Pepper little
    b. Oyster sauce 1 tbsp
    c. Dark soya sauce 1 tsp
    Mix well. Season for 5 minutes.
    2. Ox tongue, remove cling wrap. Dry with kitchen towels.
    3. Chili, dice in cubes.
    Coriander, chop well.

    Steps:
    1. Heat up little oil at high flame in wok.
    2. Put ox tongue, fry well. Fry for 10 seconds on each side.
    3. Add in little black pepper salt.
    4. Put ox tongue on plate.
    5. Add in little oil in wok.
    6. Put chicken wings, fry well. Fry both sides of wings until they turn into colour of golden yellow. Add in water 100ml. Cover up the wok. Braise until the sauce becomes thick.
    7. Unsealed the fish soup on top of pot. Add in water 500ml. Heat up at high flame.
    8. Defrost the fish noodles in room temperature for 15 minutes.
    9. Fish noodles, cook well in the fish soup.
    10. Chicken wings, the sauce has been turned thick. Put on plate.
    11. Fish noodles has been cooked well, put ox tongue and chicken wings on top.
    12. Put chili and coriander cubes on top of noodles.
    13. Complete. Serve.

    黃金年糕

    材料:
    雞蛋黃蕃薯(大)2個
    糯米粉
    片糖3片

    處理:
    1. 蒸年糕器皿容量一半水的份量,煮溶片糖,攤凍。
    2. 蕃薯,去皮,切細舊。
    3. 大火蒸15分鐘。
    4. 蕃薯已蒸好,攤凍。
    5. 戴上透明膠手套,揸爛蕃薯。
    6. 加入糯米粉及片糖水,攪至糊狀。
    7. 在蒸糕盤上掃油。
    8. 放蕃薯漿入糕盤。
    9. 凳出空氣。
    10. 鋪上錫紙。

    烹調:
    1. 煲滾1鑊水。
    2. 大火蒸1小時。
    3. 大約20分鐘左右加入滾水。
    4. 年糕已蒸了1小時,完成。
    5. 可在年糕上放1粒紅棗。
    6. 攤凍,封上保鮮紙。
    7. 放雪櫃36~48小時,完成。
    8. 切開年糕,用中火煎熱,可享用。

    Golden rice cake:

    Ingredients:
    Sweet potatoes (large) 2 Nos.
    Glutinous rice flour
    Slab sugar 3 slices

    Preparation:
    1. Fill water in rice cake tray with half volume. Pour the water in pot. Melt the slab sugar at medium flame. Wait for cooling down.
    2. Sweet potatoes, get them peeled. Dice into small cubes.
    3. Heat up at high flame for 15 minutes.
    4. Sweet potatoes have been steamed well. Wait for cooling down.
    5. Put on transparent gloves, squeeze the sweet potatoes.
    6. Mix the sweet potatoes with glutinous rice flour and syrup, stir until mushy.
    7. Brush oil on rice cake tray.
    8. Pour sweet potato syrup into it.
    9. Release air in the rice cake by hitting the tray on table.
    10. Put aluminum foil on the tray.

    Steps:
    1. Boil up a pot of water.
    2. Steam at high flame for 1 hour.
    3. Add boiled~up water for every 20 minutes.
    4. Rice cake has been steamed for 1 hour. Complete.
    5. Put a red date on top of rice cake.
    6. Wait for cooling down. Put cling wrap on the cake tray.
    7. Put in refrigerator for 36~48 hours. Complete.
    8. Cut the rice cake well. Fry it at medium flame. Serve.
