    好懷念辦餐會的感覺,吃吃喝喝喇喇賽賽的那種

    那次是離開倫敦前三天還四天,回去幫朋友的珍奶店弄米漢堡菜單

    抵達時的第二天還第三天我就跑了趟 Borough Market

    哪裡有一間法國的Charcuterie Shop 我很愛,陳列了許多獵奇的火腿與醃製肉品

    比如說巧克力辣椒口味的鹿肉香腸、紅酒醃製的牛菲力火腿、陳年36個月的comte cheese、味道強烈的羊奶起士⋯

    隔壁的不遠處就有間瑞士人老闆開的起士專賣店,藍紋起士他特別專門,有款微微發霉顏色,形狀像是大腦般的起士叫做 Brain 🧠

    除此之外他還有不少奇特的蜂蜜,葡萄蜂蜜、芥末子蜂蜜⋯連松露蜂蜜都有

    除此之外,順道在附近買了uncle Roger 最恨,但是 Jamie Oliver 最愛的 Chili Jam ,也買了些香檳葡萄🍇

    加上兩三款 Leila’s Shop賣的神好吃麵包

    櫃檯上鋪上張烤盤紙,火腿起士切一切,大家自便自取啊

    我一邊喝著我的酒,一邊跟八成我都不認識,網路上招集而來的吃貨打招呼

    我並沒有很愛認識新朋友,但我很喜歡分享好吃食物的感覺

    尤其是這些偏獵奇也偏門的食材與食物,我喜歡那種透過食物連結的感覺

    其實沒有這些菜,我跟這些陌生人一輩子可能也碰不著

    但有了食物,一切便有了可能性

    你說好不好玩有不有趣啊🦄🦄🦄

    那天之外還出了什麼菜我還真的忘了😂

    記得出了個煙燻鮭魚躺在半顆紅豆餅的殼裡,裏面有法國專門店買的高檔 Crème Fraîche,灑上點檸檬皮,上頭來點魚子醬

    還有什麼炸雞或是炸豬排之類的吧😗😗😅

    那天我喝的很醉很醉,餐會上八成的人我都成功地沒記住,挺好的

    人生嘛,能聚在一起吃頓飯已是巨大緣分的聚合體了

    沒必要強求一定得相知與相識

    在這資訊爆炸,包含交友資訊氾濫的世代裡,我很喜歡我這種微微反社會的人格

    吃頓好吃的飯,記住重要的事,陪著重要的人

    疫情如此,跟陌生人吃飯的機會我想是少之又少

    大家保重啊!

    我們超愛的椒麻拌麵!拌上各種新鮮蔬菜🥬,看英文名稱可以知道還有加上花生🥜這樣的搭配是平常在家裡也會吃的!很配麵很香很對味(˶‾᷄ ⁻̫ ‾᷅˵)雖然菜單上標示3個辣椒🌶️,比墨西哥哈辣披薩再多1個🌶️,但覺得這款沒披薩辣,只是聞起來非常辣,且整體有些油~

    這款是經典的手工烤餅口味,給你滿到爆出來的義大利進口cheese!!!不過吃多了會膩,三個人分食剛剛好!裡頭還有迷迭香,覺得味道有點明顯,吃起來有生草味,可能不太習慣這味道😅😅

    早前很高興得到Green Monday 的邀請,能品嘗到Macau Fisherman’s Wharf 澳門漁人碼頭 勵宮legend Palace 勵皇軒The Grand Palace Chef Johnny新推出的「廚師發板」素食餐單。

    I had the pleasure of trying Chef Johnny's new vegan omakase menu at The Grand Palace, invited by Green Monday.

    茹素前就已經被餐廳的無敵大海景吸引著!今次的素食餐單有別於大眾對「食齋」的刻板印象,用了富含蛋白質和鐵質等營養成份,長期食用也不會對身體帶來負擔的新一代植物肉 ,例如 Beyond Meat等去創作菜式。賣相擺盤也相當吸引,真的是「一啲都唔齋」!

    Before the meal, I was first struck by the breathtaking view of the ocean. The chef uses products such as Beyond Meat, which are rich in proteins and minerals. Special attention is also paid to presentation of the food, which includes elements of cuisines from all over China. As such, the menu is able to circumvent the nutritional concerns and image of monotony often associated with Buddhist vegan cooking.

    第一道|麻婆豆腐(Beyond Meat)

    肉餅帶嚼勁和與豆腐的嫩滑質感有對比,口感不無聊,挺相配,汁醬味道不會太辣嗆喉。

    The textural contrast between the tofu and Beyond Meat is complementary. The sauce is not overly spicy.

    第二道|香煎蓮藕餅(Omnipork)
    用新豬肉做的肉餅,質感跟真肉餅極像!配上爽脆的香煎蓮藕和蘑菇汁,味道什為出彩。

    The patty made with Omnipork captures the exact texture of real pork patty. It goes perfectly with the seared lotus root and the flavourful mushroom sauce.

    第三道|川味水煮牛 (Gardein beefless strip)

    這道「素食version」的水煮牛肉,創意和味道十足。走過油的素牛肉,口感不錯,真的有一秒錯以為是真牛肉!配以寬粉與豆皮和麻辣湯底拌着吃,川味濃厚!但建議紅油用量可調低幾分,始終構思這道菜的初心是以健康飲食為主。

    This vegan version of Sichuan poached beef is another delicious creation. The oil blanched vegan beef again mimics the texture of real beef perfectly. Served with mung bean noodles in a piquant mala cuisson, this dish is truly Sichuan. If anything, the chili oil could be dialed down in the spirit of healthy eating, one main reason for a vegan diet.

    第四道|普寧豆豉雞(Heura chicken)
    普寧豆豉醬十分惹味,爆炒起來鑊氣十足,但小編認為Heura chicken 的口感不及前幾道的素肉選項出彩。

    The puning bean paste is the star of the dish, which shines with great wokhei. But unlike products used in previous dishes, the texture of Huera chicken doesn't quite approximate real chicken.

    第五道|海南雞風味中東米, 香煎豬肉餅, 伴蕃茄豆乳汁 (Omnipork)
    中東米略帶薑黃味,配上豆乳蕃茄汁,味道開胃怡人,充滿東南亞色彩,香煎豬肉餅口感軟嫩,類似豬柳。
    The pilaf has a hint of turmeric. Served with a sauce made with tomato and fermented tofu, the dish beckons Southeast Asia. The seared patty is tender and tastes like pork tenderloin.

    第六道|竹炭漢堡 (Beyond Meat)
    竹炭饅頭香淋軟熟,帶淡甜和麵粉香,以Beyond Meat 炮製的漢堡扒有著不少真漢堡扒的神韻,再配上日式燒汁,令人食指大動

    The soft charcoal bun has a subtle sweetness and aroma of wheat. The Beyond Meat patty captures the essence of a beef patty. And with the addition of teriyaki sauce, this burger is finger-licking good.

    整個菜單$600/位起,需提前預訂,廚師可依照客人喜好為你打造獨一無二的菜單。

    The omakase menu is $600up. Reservation is needed and chef Johnny can tailor made the menu with your preference.

    Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.

    Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.

    To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

    How to make Oven-Baked Smoked BBQ Ribs

    ✎ Ingredients
    pork ribs 950g

    ☞ for dry marinades
    coarse salt 70g
    black pepper 15g
    ground white pepper 4g
    cayenne pepper 2g
    granulated sugar 3.5g
    garlic powder 1.5g
    onion powder 1.5g

    ☞ for BBQ sauce
    chipotle peppers in adobo 7g
    regular soy sauce 32g
    tomato paste 70g
    ketchup 20g
    chicken broth 30g
    apple cider vinegar 35g
    dark beer 45g
    fresh orange juice 87g
    minced garlic 10g
    chili powder 1.5g
    onion powder 5g
    salt 3g
    black pepper 2.5g
    light brown sugar 130g

    1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
    2. Line a baking tray with foil or parchment paper.
    3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
    4. Using a sharp knife to take off  excess fat. Just keep a little fat.
    5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
    6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
    7. Cover with another foil, shiny side out.
    8. Preheat the oven to 135C, bake for 2.5~3 hours.
    9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.  
    10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
    11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until  ribs have been caramelized.
    12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

    材料:
    黃豆 4/5杯 soybean 4/5cup

    作法:
    1.水箱內加水至1000ml線處,將豆倒入研磨腔中,蓋上蓋子,於LED界面按下【經典菜單】選定【乾豆】,選擇容量至”1000”,按下啟動,於行程結束即可享用濃醇豆漿。

    變化1:鹹豆漿
    材料:
    熱豆漿 300公克/ soybean milk 300g
    白醋 30公克/ white vinegar 30g
    榨菜 適量/ pickled mustard tuber q.s.
    蝦皮 適量/ dried baby shrimps q.s.
    蔥花 適量/scallion q.s.
    油條 適量/ fried bread stick q.s.
    作法:
    1. 取一個大碗,舀入白醋、蝦皮、榨菜。(喜歡味道重一點也能放點醬油)
    2. 緩緩沖入熱豆漿,再撒上蔥花、油條。
    3. 攪拌後食用即可!


    變化2:麻辣鹹豆漿
    材料:
    熱豆漿 300公克/ soybean milk 300g
    白醋 30公克/ white vinegar 30g
    菜脯 適量/ preserved radish q.s.
    蝦皮 適量/ dried baby shrimps q.s.
    辣油 適量/ chili oil q.s.
    花生碎 適量/ peanuts q.s.
    蔥花 適量/scallion q.s.
    油條 適量/ fried bread stick q.s.
    作法:
    1. 取一個大碗,舀入白醋、菜脯、蝦皮、辣油。
    2. 緩緩沖入熱豆漿,再撒上蔥花、油條。
    3. 攪拌後食用即可!


    變化3:起司鹹豆漿
    材料:
    熱豆漿 300公克/ soybean milk 300g
    白醋 30公克/ white vinegar 30g
    玉米 適量/ sweet corn q.s.
    培根碎 適量/ bacon q.s.
    起司片 1片/ cheese 1pcs
    洋芋片 適量/ crisps q.s.
    作法:
    1. 取一個大碗,舀入白醋、培根、起司片。
    2. 緩緩沖入熱豆漿,再撒上玉米、洋芋片。
    3. 攪拌後食用即可!


    變化4:皮蛋肉鬆鹹豆漿
    材料:
    熱豆漿 300公克/ soybean milk 300g
    烏醋 30公克/ black vinegar 30g
    皮蛋 適量/century egg q.s.
    肉鬆 適量/pork floss q.s.
    油條 適量/ fried bread stick q.s.
    香菜 適量/ coriander q.s.

    作法:
    1. 取一個大碗,舀入烏醋、皮蛋碎、肉鬆。
    2. 緩緩沖入熱豆漿,再撒上油條、香菜提味。
    3. 攪拌後食用即可!
